I like to make this for breakfast because it's quick yet out of the ordinary. The orange flavor adds a little something extra to a weekday breakfast.-Bernice Haack, Milwaukee, Wisconsin

Number Of Ingredients 6

1 cup water
3/4 cup orange juice
1/8 teaspoon salt
1 cup quick-cooking oats
1/4 teaspoon grated orange zest
1 to 2 tablespoons brown sugar

Steps:

  • In a small saucepan, bring the water, orange juice and salt to a boil. Stir in oats and cook for 1 minute or until oatmeal reaches desired consistency. Stir in orange zest. Serve with brown sugar.

I love the orange flavor of these, different for a muffin. Yummy! I got this recipe from an old (1980's) Canandian cookbook called "Muffin Mania". I usually double or triple the recipe and freeze the extras.(Prep time includes soaking time.)

Number Of Ingredients 13

1 cup oats, soaked in both
1/2 cup orange juice, and
1/2 cup boiling water, for 15 minutes
1/2 cup margarine, softened
1/2 cup white sugar
1/2 cup brown sugar
2 eggs, beaten
1 cup raisins
1 teaspoon vanilla
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt

Steps:

  • Cream margarine and sugar.
  • Beat in eggs and stir in oat mixture.
  • Stir in raisins and vanilla.
  • Add flour, baking powder, baking soda and salt.
  • Stir until moistened.
  • Pour into well greased muffin cups.
  • Bake at 350 degrees for about 20 minutes.

  • Yes you can add raisins, nuts to taste or any dried or fresh fruit to kick it up even more.
