CRANBERRY ORANGE MUFFINS

Buttery and moist, these cranberry orange muffins are heavy on the flavor and bursting with cranberries in each bite.

1/2 cup (115g) unsalted butter, softened to room temperature
1/2 cup (100g) granulated sugar
1/4 cup (50g) packed light or dark brown sugar
2 large eggs, at room temperature
1/2 cup (120g) yogurt*
2 teaspoons pure vanilla extract
zest of 2 oranges
1 and 3/4 cups (219g) all-purpose flour (spoon & leveled)
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
2 Tablespoons (30ml) orange juice
2 Tablespoons (30ml) milk (any kind)
1 and 1/2 cups (185g) fresh or frozen cranberries (do not thaw)
1 cup (120g) confectioners' sugar
3 Tablespoons (45ml) orange juice

Steps:

  • Preheat oven to 425°F (218°C). Spray a 12-count muffin pan with nonstick spray or line with cupcake liners. Set aside.
  • In a medium bowl using a handheld or stand mixer fitted with a paddle attachment, beat the butter on high speed until smooth and creamy, about 1 minute. Add the granulated and brown sugars and beat on high until creamed, about 2 full minutes. Scrape down the sides and bottom of the bowl as needed. Add the eggs, yogurt, and vanilla extract. Beat on medium speed for 1 minute, then turn up to high speed until the mixture is combined and uniform in texture. Scrape down the sides and bottom of the bowl as needed. Then, beat in the orange zest until combined.
  • In a large bowl, toss together the flour, baking soda, baking powder, cinnamon, and salt. Pour the wet ingredients into the dry ingredients and slowly mix with a whisk. Add the orange juice and milk, gently whisking until combined and little lumps remain. Fold in the cranberries with a wooden spoon or rubber spatula.
  • Spoon batter into prepared muffin pan, filling them all the way to the top. Top the batter with an additional cranberry or two, for looks if desired. (I like the pop of color on top of the muffins in doing this.) Bake for 5 minutes at 425°F (218°C), then keeping the muffins in the oven, lower the oven temperature to 350°F (177°C) and bake for 18-20 more minutes or until a toothpick inserted in the center comes out clean. The total times these muffins take in the oven is about 23-25 minutes.
  • While the muffins are cooling for a few minutes, make the glaze by whisking the glaze ingredients together. Drizzle over warm muffins. Allow to briefly cool before serving.

1 cup whole wheat flour or 1 cup spelt flour
1 cup barley flour
2/3-3/4 cup fruit dried sweetened cranberries (Taste cranberries to determine sweetness and then adjust recipe to use either the rice syrup OR wate)
1/3-1/2 cup walnuts or 1/3-1/2 cup pecans
2 teaspoons baking powder
1/2 teaspoon salt
1 grated orange, rind of
1/2 cup applesauce
1 cup orange juice (fresh squeezed is best)
1/2 cup water or 1/2 cup orange juice

Steps:

  • Preheat oven to 350°F.
  • Mix dry ingredients (including orange rind).
  • Add wet ingredients and mix until just mixed.
  • Lightly oil a muffin tin, fill and bake for 20-25 minutes or until just lightly browned around the edges.
  • Allow to cool before removing from tin.
  • Note: When muffins are cool, put away in plastic bags.
  • Unlike other muffins they will stay better this way.
  • Due to the low fat content they will dry out quickly, this way they will stay moist and yummy.
  • VARIATIONS: Make a higher fat muffin by replacing the apple sauce with canola oil.
  • Use other dried fruits like apricots, figs, prunes or dates.
  • Use fresh or frozen raspberries instead of cranberries.
  • Use 2 cups whole wheat or spelt flour for a heartier muffin.

1/2 cup milk (whole milk recommended)
1 1/2 tsp lemon juice
2 1/2 cups all-purpose flour
4 tsp baking powder
1/2 tsp fine table salt
1/2 cup vegetable oil
1 1/4 cups white sugar
2 large eggs
Zest of one orange (about 1 Tbsp)
1 tsp vanilla or vanilla bean paste
1/4 cup freshly squeezed orange juice
1 1/2 cups fresh or frozen cranberries
2-3 Tbsp white sparkling sanding sugar (demerara sugar, turbinado sugar or white sugar)

Steps:

  • Preheat oven to 425F (220C) Spray a 12 cup muffin tray with baking spray or line with paper liners. Set aside.
  • Add lemon juice to milk. Stir and let stand 5 minutes.
  • In a large bowl, whisk together well the flour, baking powder and salt.
  • *If using frozen cranberries, do not thaw. Toss with 1 tsp flour before adding to batter. Starting with frozen cranberries will add 5-8 minutes to your baking time.
  • In a medium bowl, whisk together the milk/lemon juice, the vegetable oil, sugar, eggs, orange juice, vanilla and orange zest. Add the wet mixture to the dry ingredients, mixing just until combined and no flour is visible. Fold in the cranberries.
  • Divide the batter amongst the 10-12 muffin cups (10 for large muffins, 12 for regular muffins). Sprinkle tops generously with sugar.
  • Bake at 425F (220C) for 5 minutes, then reduce the oven temp to 375F (190C) and bake for another 13-16 minutes if you started with fresh cranberries or 18-22 minutes if you started with frozen cranberries. Bake until lightly golden and a tester inserted in the middle comes out clean.
  • Remove from oven and allow to cool in the pans. Remove from pans and store in an airtight container.

1/4 cup wheat germ
2 teaspoons baking powder

2/3 cup orange juice
1 eggs or 2 egg whites
1 cup dried sweetened cranberries

  • Preheat oven to 350 degrees. Prepare muffin pans by spraying with oil or use paper liners. This recipe seems to make more than 12.
  • Combine first six ingredients. Can replace 1/4°C wheat germ with additional 1/4°C whole wheat flour.
  • Add butter until mixture is crumbly.
  • Stir in the sugar.
  • In a separate bowl, combine orange juice & egg.
  • Add to flour mixture just until blended. Dough will be stiff.
  • Add cranberries and apricots.
  • Fill muffin cups 3/4 full.
  • Bake 18 minute until a toothpick comes out clean when inserted into a muffin.
  • Cool 5 minutes & then remove from pan & completely cool on rack.

1/4 cup (60 ml) sour cream
1/4 cup (60 ml) whole milk
1/2 cup (120 ml) freshly squeezed and strained orange juice

1 cup add-in of your choice: dark or white chocolate chips (, berries, raisins, nuts)
1/2 cup powdered sugar
1-2 tablespoons orange juice

Steps:

  • Preheat oven to 190C/375F. Grease 12 muffin cups or line them with liner papers.
  • In a large bowl, toss together sugar and orange zest. Add flour, baking powder, and salt, and mix to combine. In another medium bowl, whisk eggs with melted butter, sour cream, milk, orange juice, and vanilla extract until well combined. Make a well in the dry ingredients and pour the wet ingredients into it, then stir with a wooden spoon or rubber spatula just until combined. Do not over mix. Fold in add-ins.
  • Divide batter evenly between muffin cups (almost all the way to the top). Bake for 15-20 minutes or until a toothpick inserted into the center of the muffin comes out clean. Allow to cool for 10 minutes, then remove muffins from the tin and transfer to a wire rack to cool completely.
  • To make the orange drizzle topping: In a small bowl, sift powdered sugar. Add orange juice, a bit at a time, and whisk until you get a thick yet pourable consistency. Once muffins have cooled, pour glaze over the tops using a tablespoon, letting it drizzle down the sides.
  • Muffins are best the same day they are made, but can be stored in an airtight container at room temperature for an additional day. Muffins can be frozen for up to 2 months.

  • 1. Preheat oven to 400 degrees. It's best to let your oven sit at the desired temperature for 5-10 minutes before popping your muffins in.
  • 2. Combine flour, sugar, baking powder, baking soda, and salt in a large bowl; make a well in the center of mixture.
  • 3. Combine rind, juice, oil, and egg in a small bowl, stirring well with a wisk. Add to flour mixture, stirring just until moist. DON'T OVER MIX BATTER! Fold in cranberries and pecans(if desired at this point, or sprinkle on top after baking). Spoon batter into 12 muffin cups either coated with cooking spray or liners. BAKE at 400° for 15 minutes or until the muffins spring back when touched lightly in the center.
  • 4. MIX 1 cup powder sugar with approximately 3-4 Tablespoons of orange juice. Add orange juice until you get a nice smooth drizzle consistency. Once your muffins are finished baking, carefully remove each muffin and place on a wire rack. Drizzle each muffin with the orange glaze and sprinkle with pecans; let cool.
