Orange Mint Pasta Recipe is a citrus pasta recipe that's a refreshing and light dinner idea! Makes the perfect spring pasta recipe and summer pasta recipe! Though honestly, I love it all year long!

1 box fettuccini noodles
4 tablespoons butter
6 tablespoons orange zest
3 teaspoons finely shredded fresh mint
Salt and pepper to taste
3/4 cup freshly squeezed orange juice
1/2 cup fresh parmesan

Steps:

  • Cook pasta based on box directions.
  • Melt butter in a large skillet.
  • Stir in orange zest and mint (save just a little for a garnish if desired) as well as salt and pepper (I start with a pinch of salt and 4 turns of my pepper grinder to start. You can add more later if desired.). Only cook for 1-2 minutes.
  • Pour in orange juice and cook until it's reduced to about half it's volume and has thickened slightly. Remove skillet from heat source.
  • When pasta is cooked al dente, drain it and then toss in the sauce.
  • Top with grated cheese and any remaining zest and mint as a garnish.

2 medium oranges
1 cup water
5 leaves fresh mint, or more to taste
1 lemon, juiced
⅛ teaspoon black salt (kala namak), or more to taste
⅛ teaspoon powdered sugar, or to taste
½ cup ice as needed
2 slices jalapeno pepper, or more to taste

Steps:

  • Peel oranges, removing threads and seeds. Cut roughly into cubes.
  • Transfer oranges into a blender with water, 3 mint leaves, lemon juice, black salt, and powdered sugar. Blend until smooth.
  • Strain into a large glass over ice. Add jalapeno. Taste and adjust salt and sugar as needed. Stir continuously, 10 to 15 times. Add remaining mint leaves as garnish.

1 pound campanelle pasta
1 cup grated Pecorino Romano cheese
1 1/4 cups chopped fresh mint
1/2 cup grated Pecorino Romano cheese
1/2 cup extra-virgin olive oil
1 large serrano chile, stemmed, seeded and coarsely chopped
1 clove garlic, peeled and smashed

Steps:

  • For the pasta: Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, 8 to 10 minutes. Drain and transfer to a serving bowl. Add the cheese and toss until coated.
  • For the sauce: Combine the mint, cheese, oil, chile and garlic in a food processor. Blend until smooth.
  • Add the sauce to the pasta and toss until coated.

1 pound dried fettuccine
Coarse salt
3 ounces Parmigiano-Reggiano cheese, grated (1 cup), plus more for garnish
2 tablespoons julienned lemon zest
1 tablespoon plus 1 teaspoon fresh lemon juice
1/2 cup torn fresh mint leaves
1 tablespoon extra-virgin olive oil
Crushed red-pepper flakes, optional

Steps:

  • Cook pasta in salted water according to package directions. Drain, reserving 1 cup cooking liquid.
  • Transfer pasta to a large bowl, and mix in reserved cooking liquid, cheese, lemon zest and juice, mint, oil, and red-pepper flakes, if desired. Divide among dishes, garnish with cheese, and serve immediately.

The pairing of pasta with mint and Parmesan is a good one. There is something about the lightly assaultive yet somehow sweet nature of mint that is unlike any other herb. Older cuisines use it occasionally, but it is rarely seen as a major player. In this dish, however, softened by butter and cheese, mint converts a basic but undeniably heavy combination into an easy yet complex pasta dish best described as refreshing. To the inevitable question, Can I use olive oil instead of butter? my answer is that you can, but you will completely change the nature of the dish; it won't be bad, but it won't be as good. Better, I think, to cut the butter back to two tablespoons. But because this sauce is cut with the pasta cooking water, the butter is spread nicely throughout, and it really isn't a huge amount per person.

1 pound cut pasta, like ziti or penne, or long pasta, like linguine or spaghetti
1/2 stick butter (4 tablespoons), cut into pieces
1/2 cup chopped mint leaves
1 cup freshly grated Parmesan cheese

Steps:

  • Bring a large pot of water to a boil and salt it. When it boils, cook pasta until it is tender but not mushy. Drain pasta, reserving about 1/2 cup of cooking liquid.
  • Toss pasta in a warmed bowl with 2 or 3 tablespoons cooking liquid, the butter, mint and half the cheese. Taste and adjust seasoning, then serve, passing remaining Parmesan at the table.

1 tbsp rose syrup or rosewater

Steps:

  • Peel then segment the oranges, removing the white pith. Place in a bowl along with any juices, then add the dates, chopped mint and rose syrup and toss gently. Divide between 4 dessert bowls, scatter on the mint leaves and serve.

400g spaghetti
200g frozen peas
3 tbsp olive oil
squeeze lemon juice
1 tbsp wholegrain mustard
20g pack fresh mint , roughly chopped

Steps:

  • Boil the spaghetti according to pack instructions and, when you have just 2 mins cooking time left, throw in the peas.
  • Meanwhile, whisk the olive oil, lemon juice and mustard together, then season with salt, if you like, and pepper. Drain the pasta, reserving a couple of tbsps of the cooking water and return to the pan. Stir the reserved cooking water, olive oil mixture and mint through the pasta, then serve.

  • Bring a large pot of salted water to a boil and add the pasta. While that's happening, heat a skillet over medium heat and add the olive oil and pancetta/bacon (if using). Allow the pancetta to crisp up, and then add the onion and garlic. Cook for about 10 minutes, or until caramelized.
  • Stir in the orange juice and tomato paste, and bring to a simmer. Season with salt and pepper to taste, and add the half and half. Scoop in your cooked pasta (reserve the cooking liquid), and parmesan cheese. Give everything a good stir. Add in a little more of the starchy pasta water if the sauce needs thinning out.
  • Stir in the orange zest and basil. Give the pasta a taste and adjust the seasoning if needed. Serve!
