ORANGE MINT PASTA RECIPE
Orange Mint Pasta Recipe is a citrus pasta recipe that's a refreshing and light dinner idea! Makes the perfect spring pasta recipe and summer pasta recipe! Though honestly, I love it all year long!

Steps:
- Cook pasta based on box directions.
- Melt butter in a large skillet.
- Stir in orange zest and mint (save just a little for a garnish if desired) as well as salt and pepper (I start with a pinch of salt and 4 turns of my pepper grinder to start. You can add more later if desired.). Only cook for 1-2 minutes.
- Pour in orange juice and cook until it's reduced to about half it's volume and has thickened slightly. Remove skillet from heat source.
- When pasta is cooked al dente, drain it and then toss in the sauce.
- Top with grated cheese and any remaining zest and mint as a garnish.

- Peel oranges, removing threads and seeds. Cut roughly into cubes.
- Transfer oranges into a blender with water, 3 mint leaves, lemon juice, black salt, and powdered sugar. Blend until smooth.
- Strain into a large glass over ice. Add jalapeno. Taste and adjust salt and sugar as needed. Stir continuously, 10 to 15 times. Add remaining mint leaves as garnish.

PASTA WITH MINT AND PARMESAN
The pairing of pasta with mint and Parmesan is a good one. There is something about the lightly assaultive yet somehow sweet nature of mint that is unlike any other herb. Older cuisines use it occasionally, but it is rarely seen as a major player. In this dish, however, softened by butter and cheese, mint converts a basic but undeniably heavy combination into an easy yet complex pasta dish best described as refreshing. To the inevitable question, Can I use olive oil instead of butter? my answer is that you can, but you will completely change the nature of the dish; it won't be bad, but it won't be as good. Better, I think, to cut the butter back to two tablespoons. But because this sauce is cut with the pasta cooking water, the butter is spread nicely throughout, and it really isn't a huge amount per person.

- Bring a large pot of water to a boil and salt it. When it boils, cook pasta until it is tender but not mushy. Drain pasta, reserving about 1/2 cup of cooking liquid.

- Bring a large pot of salted water to a boil and add the pasta. While that's happening, heat a skillet over medium heat and add the olive oil and pancetta/bacon (if using). Allow the pancetta to crisp up, and then add the onion and garlic. Cook for about 10 minutes, or until caramelized.
- Stir in the orange juice and tomato paste, and bring to a simmer. Season with salt and pepper to taste, and add the half and half. Scoop in your cooked pasta (reserve the cooking liquid), and parmesan cheese. Give everything a good stir. Add in a little more of the starchy pasta water if the sauce needs thinning out.
- Stir in the orange zest and basil. Give the pasta a taste and adjust the seasoning if needed. Serve!
