JALAPENO PEPPER JELLY

Jalapeno Pepper Jelly image

Jalapeño Pepper Jelly is a delicious sweet and spicy spread. This is a great way to preserve all those summer jalapenos and peppers. Enjoy on cheese and crackers, toast, sandwiches, or grilled meats.

Provided by Garnish and Glaze

Categories     Toppings

Time 40m

Number Of Ingredients 7

10 jalapeno peppers (half seeded)
1 red bell pepper (chopped)
1 green bell pepper (or orange) (chopped)
5 1/2 cups granulated sugar
1 1/2 cup white vinegar
1/2 teaspoon salt
1 3 ounce pouch liquid pectin

Steps:

  • Place all peppers in a food processor and pulse until peppers are finely chopped. Empty into a mesh strainer and drain off excess liquid.
  • Place the chopped vegetables in a large stock pot and add in the sugar, vinegar, and salt. Bring to a boil over medium-high heat and boil for 10 minutes. Add the pectin and boil 1 more minute. Remove from heat
  • Ladle jam into hot sterile jars using a wide mouth funnel. Leave 1/4 inch headspace. Top the jars with the lids, screwing them on with just your thumb and index finger (this is to ensure that it is on but not too tight that the air can't escape).
  • Place jars back on the rack and lower into the water. Bring to a boil and boil for 10 minutes. (Add 1 more minute for each 1000 ft elevation above 1000 ft.)
  • Remove and place on a towel about 1 inch apart. After a few minutes you should start to hear the cans seal with a pop. Leave the jars untouched on the counter for 12 hours.
  • To check for a proper seal, remove the the ring of the lid and lift the can up off the counter 1-2 inches while holding the edges of the lid. If the lid stays attached the jelly is sealed properly and can be stored on the shelf (screw bands removed).
  • If a seal did not form or if you opened the lid and broke the seal, jelly can be stored in the fridge.
  • Let jelly rest 1 day before opening to allow it to fully set up and be thick.

JALAPENO JELLY

Jalapeno Jelly image

This recipe came from the Black Lakes in Canada. It is the best that I have ever tasted, and very easy to make.

Provided by Sue Delgrego

Categories     Side Dish     Sauces and Condiments Recipes     Canning and Preserving Recipes     Jams and Jellies Recipes

Time 1h5m

Yield 32

Number Of Ingredients 7

1 large green bell pepper
12 jalapeno peppers
1 ½ cups apple cider vinegar
1 pinch salt
4 ¼ cups granulated sugar
4 ounces liquid pectin
4 jalapeno peppers, seeded and finely chopped

Steps:

  • Combine the green bell pepper and 12 jalapeno peppers in the container of a food processor or blender. Process until finely chopped. This can be done in batches, if the peppers do not fit.
  • Transfer the peppers to a large saucepan, and stir in the cider vinegar. Bring to a boil, and let simmer for 15 to 20 minutes. Strain the mixture through at least 2 layers of cheesecloth, and discard pulp. You should have about 1 cup of liquid.
  • Return the liquid to the saucepan, and stir in the salt and sugar until dissolved. Bring to a boil over medium-high heat. When the mixture comes to a rolling boil (one that cannot be stirred down), boil for one minute, then stir in the liquid pectin.
  • Stir in the remaining jalapeno peppers, and ladle into sterile jars leaving 1/4 inch headspace. Seal jars in a hot water bath. Refrigerate jelly after seal is broken.

ORANGE PEPPER JELLY

Orange Pepper Jelly image

This orange pepper jelly is wonderful served with crackers and cream cheese or as a warm sauce for Boudin Balls or Coconut Shrimp.

Provided by Donna Graffagnino

Categories     Spreads

Time 1h

Number Of Ingredients 7

2 - 6 oz cans frozen orange juice concentrate
2 1/2 c water
4 - 6 jalapeno or cayenne peppers, coarsely chopped
1/2 c jalapeno or cayenne peppers, seeded and minced
4 1/2 c sugar
3 pkg powdered pectin or 4 pouches of liquid pectin
red & yellow food coloring (optional)

Steps:

  • 1. Wearing plastic gloves, remove seeds and ribs from 6-8 jalapeno or cayenne peppers and mince peppers. Store in covered container in refrigerator until needed. Separately reserve seeds for later.
  • 2. Combine orange juice concentrate with water. Add reserved seeds and coarsley chopped jalapeno or cayenne peppers to orange juice and store in refrigerator overnight.
  • 3. Strain seeds and peppers from orange juice and discard. If you desire a very clear jelly, strain juice and seeds through a fine mesh strainer, then again through a layer of white paper towels and discard peppers. seeds and residue. Add reserved minced peppers to strained OJ. In large sauce pan combine orange juice and powdered pectin pectin; cook on high heat, stirring constantly, until bubbles form around edges.
  • 4. Add sugar, stirring well, and bring back to a full rolling boil. Cook for 1 minute stirring constantly. Remove from heat and skim foam from top. If you want a richer orange color add add 2 drops of yellow to 1 drop of red food coloring. Stir and repeat until it reaches desired color.
  • 5. Pour into sterile jelly jars to within 1/2 inch of top. Seal tightly and process in a hot water bath for 10 minutes, remove from hot water and allow to set. I've found that orange jelly is sometimes finicky and won't always set up firm, so the hot water bath should do the trick. I always keep the fire on low under the jelly when putting it into the jars and the last several jars always set up better. *Note: Orange jelly could take up to 2 weeks to completely set, yet sometimes it only reaches a soft set, depending on temperature, humidity and who knows what else!
  • 6. *Tip: Place clean jars on a baking sheet and place in a 250 degree F oven for 20 minutes. Reduce temperature to 225 degrees F to keep jars hot until ready to use.

  • Peel oranges and process sections in small batches in a food processor. Pour into a mesh strainer placed over a large bowl to collect the juice. Use a spoon to spread pulp back and forth in mesh strainer to get out as much juice as possible. OR, squeeze by hand or use a juicer, if you’re lucky enough to own one. However you do it, you need to end up with 3 ½ cups orange juice. I wouldn’t recommend using purchased orange juice as freshly squeezed juice is best.
  • Mix sugar with Pomona’s pectin in a small bowl, set aside. In a large pot, add strained orange juice, water, thinly sliced lemon, peppers and calcium water. Bring to a boil over high heat stirring often. Add sugar all at once and return to a rolling boil (one that doesn’t stop when you stir it), and boil hard for one minute.
  • Ladle jelly into prepared canning jars, using a spoon to evenly distribute the peppers and lemon slices into each jar, leaving 1/4-inch head-space. Cover with lids and bands and process in boiling water bath 10 minutes.
  • Remove jars from water bath and let sit on a kitchen towel on your counter-top. Jars are sealed when button on the top of the lid is fully depressed and won’t move up and down. Once jars are sealed, and while the jelly is cooling and thickening, slightly shake jars to evenly distribute lemon slices and peppers throughout.
