ORANGE GLAZED SALMON

- Preheat oven to 300°. Line a large rimmed baking sheet with foil and grease with cooking spray.
- In the center of the foil, lay orange slices in an even layer. Place salmon skin side down on top of orange slices and season with salt and pepper.
- In a small bowl, whisk together butter, chili sauce, zest, garlic, ginger, and red pepper flakes. Spread all over salmon fillet.
- Roast salmon until a skewer or paring knife inserted into the side of the salmon has no resistance, about 25 minutes.
- Garnish with sesame seeds and serve with lime wedges.

- Season the salmon fillets generously with salt and pepper. Make sure to season the sides as well.
- In a large skillet/frying pan, heat 1 tablespoon of oil. When hot, place the salmon in, skin side down. Cook on medium-high heat for about 4 minutes before turning it around. At this stage you can add more oil if needed. Again, cook for a further 4 minutes or until ready. Remove the fillets and set them aside.
- Add butter to the pan and pressed garlic. Saute, stirring constantly for half a minute. Now add the stock, honey, orange zest, orange juice and lemon thyme and increase the heat to high. Cook until reduced slightly (about 5 minutes). Taste it. Add more seasoning, if needed.
- To thicken the sauce, dilute 1 tablespoon of cornstarch in 1 tablespoon water. To this add little bit of the sauce before you stir all into the sauce. Stir until thickens. Place the salmon pieces back in and spoon some of the sauce over them. Simmer until the salmon is heated through.

- Heat olive oil in a large non-stick saute pan or skillet over medium-high heat.
- Season both sides of salmon with salt and pepper.
- Add salmon and to pan and cooked until browned on both sides and cooked through, about 3 - 4 minutes per side. Transfer salmon to a plate while leaving oil in pan.
- Add garlic and rosemary to pan and saute 20 seconds, then add 1/4 cup chicken broth and simmer until mostly reduced.
- Stir in orange zest, orange juice, lemon juice and honey. In a small bowl whisk together remaining 1 Tbsp chicken broth with cornstarch.
- Pour into pan, season sauce with salt and pepper to taste then bring to a boil and allow to boil 1 minute, stirring constantly.
- Return salmon to pan, spoon sauce over salmon.

- Pat salmon dry with a paper towel, then season with salt and pepper.
- Heat the avocado oil in a pan on medium high heat. Add salmon and cook for 3-4 minutes each side.
- While the salmon is cooking, make an arrowroot slurry by stirring together the arrowroot powder and water. Set aside.
- Once the salmon is cooked, transfer to a plate.
- Turn the heat down to medium-low and sauté the minced garlic in the pan for 30 seconds. Add the orange juice, honey, tamari, thyme and arrowroot slurry. Whisk the ingredients together for 1-2 minutes or until slightly thickened.
- Add the salmon back to pan and spoon glaze over salmon before serving.

- Mix orange juice, honey, soy sauce, lemon juice, and ginger together in a small bowl.
- Place salmon in a shallow dish. Pour all but 3 tablespoons of the orange juice mixture on top. Reserve remaining mixture in the bowl. Let salmon marinate at room temperature for 30 minutes.
- Preheat oven to 450 degrees F (230 degrees C).
- Transfer salmon to a baking dish lined with aluminum foil; pat dry with paper towels. Discard marinade. Spoon 1 tablespoon of reserved orange juice mixture over salmon; season with salt and pepper. Drizzle olive oil on top.

ORANGE-GINGER GLAZED SALMON
Salmon is my version of fast food. It's already so wonderfully flavorful on its own that I don't have to put much effort into it. A brush of oil and a sprinkle of salt and pepper, plus a few minutes in a hot oven or skillet and dinner is ready. In this recipe I whisk together marmalade, soy sauce and some freshly grated ginger, then I add a squeeze of fresh orange juice, pour it over the salmon, and then into the oven it goes. The result is sticky, sweet, tangy and oh so flavorful!

- Preheat the oven to 400 degrees F. Line a rimmed baking sheet or baking pan with foil. Sprinkle the salmon generously with salt and pepper and place on the foil.
- Whisk the marmalade, ginger, soy sauce, oil and orange juice together in a small bowl. Pour over the salmon. Drop the peel form the orange onto the baking sheet along with the salmon. Bake until the salmon is cooked through, 10 to 15 minutes. If you like, turn the oven to broil for the last 3 or so minutes of cooking to brown the top of the fillets.
- Serve the salmon immediately or cool and refrigerate to use in salads or sandwiches.
ORANGE GLAZED SALMON

- Rinse salmon fillet under cold water and pat dry with paper towels. Cut into 6 serving portions and place salmon fillets in a large zip-top bag; set aside.
- In a small bowl stir together remaining ingredients. Pour into zip-top bag. Squeeze air from bag and seal. Marinate in refrigerator for 1 to 2 hours.
- Remove salmon from refrigerator 30 minutes before cooking, and bring to room temperature.
- Light broiler and line baking sheet or broiler pan with aluminum foil.
- Remove salmon from marinade and place on baking sheet. Discard marinade. Broil salmon 6 to 8 inches from heat source for 6 to 8 minutes or until cooked through. Do not overcook.
- Serve immediately.

- Preheat oven to 400°F.
- Sear the fish fillets in the sesame oil in a large, very hot skillet for 1 minute on each side. You should hear the fish sizzle. Remove fillets from the heat and transfer them to a glass baking dish or baking pan. Drizzle the soy sauce and the wine over them and bake them for 10 minutes. Remove them from the oven.
- Meanwhile, heat the orange juice, zest, sherry and ginger together in a small saucepan over medium-high heat until reduced by half. Add the orange slices, and stir once or twice, until the sauce becomes thick. Remove from heat, drizzle the sauce over the fish, and serve.
