EASY ORANGE CRANBERRY GLAZE

Easy Orange Cranberry Glaze image

A good, easy, yummy glaze that can be used on chicken or turkey. I came up with this a few years ago for Thanksgiving, to change up the old boring turkey. Everyone loved it. There was no left-over turkey that year.

Time 15m

Yield 30

Number Of Ingredients 4

1 cup orange juice
1 cup packed dark brown sugar
1 (16 ounce) can jellied cranberry sauce
1 (3 inch) cinnamon stick

Steps:

  • Mix together the orange juice, brown sugar, and cranberry sauce in a saucepan, stirring to dissolve the sugar. Bring the mixture to a boil, drop in the cinnamon stick, and reduce heat to a simmer. Cook, stirring frequently, until the cranberry sauce is melted and the glaze is hot and bubbling, about 10 minutes.
  • To use: brush the glaze all over a roasted turkey during the last 45 minutes of cooking. Return the turkey to the oven and bake for 10 to 15 minutes to set the glaze. Repeat several more times before the end of cooking time.

ROSEMARY CHICKEN WITH ORANGE-MAPLE GLAZE

Rosemary Chicken with Orange-Maple Glaze image

Chicken breasts adorned with a fresh rosemary rub, then sauteed and braised in a sauce of orange juice, white wine and maple syrup. This wonderfully rich glaze makes an elegant, quick dinner to serve to guests. To serve, place chicken on top of hot cooked rice on each plate and spoon sauce over the top. Wonderful served with steamed asparagus.

Time 35m

Yield 4

Number Of Ingredients 9

1 cup orange juice
½ cup dry white wine
½ cup maple syrup
2 teaspoons chopped fresh rosemary
½ teaspoon salt
½ teaspoon freshly ground black pepper
4 skinless, boneless chicken breast halves
2 tablespoons butter
2 tablespoons olive oil

Steps:

  • Bring orange juice and wine to a boil in a small saucepan. Reduce heat slightly, but keep high enough to continue a low boil for 5 minutes, stirring occasionally. Stir in maple syrup and continue boiling for another 5 to 6 minutes, stirring frequently, until glossy and just slightly thickened. Set aside.
  • In a small bowl mix together the rosemary, salt and pepper. Rub mixture on both sides of chicken breasts, and set aside.
  • Melt butter and olive oil in a large skillet over medium high heat. Add chicken breasts, cover skillet and saute for about 5 minutes on each side until lightly browned. Pour orange-maple mixture over chicken (mixture will boil and bubble). Reduce heat to simmer; cover and let cook for another 10 minutes, basting occasionally, until chicken is cooked through and sauce has turned into a rich, thick glaze.

  • Combine fresh cranberries, sugar, orange juice (and extra water, if necessary), and rosemary in cheesecloth in a medium saucepan over medium-high heat. Reduce the heat to a simmer and simmer 1 - 4 minutes, depending on how many berries you like whole. The berries will pop as they cook, and you can help this process by pressing them against the sides of the pot with the back of a spoon.
  • When you're satisfied with the consistency, remove the saucepan from the heat and stir in orange zest. Cover and let stand for 10 minutes. Remove rosemary from pan and press the cheesecloth against the side of the saucepan with the back of a spoon to extrude all juices. Transfer to serving bowl. Let cool to room temperature then refrigerate.

  • Preheat the oven to 350°. Prepare one strip of parchment to form handles to place in a 9 x 5-inch metal loaf pan; this will help you release the bread without losing the streusel. Grease the bottom and sides of the parchment.
  • For the streusel: combine the flour, sugars, cinnamon and nutmeg in a small mixing bowl. Cut the butter in using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  • For the bread: combine the sugar and orange zest in a large mixing bowl. With your fingers, rub them together to combine and release the oils. Add the flour, sugar, baking powder and salt in a large mixing bowl. In a large measuring cup, beat the egg; add the milk, oil, and extracts, stirring to combine. Make a well in the middle of the dry ingredients and pour the liquid in the center. Stir until just moistened. Fold in the 2 cups of the cranberries until well dispersed, taking care not to overmix and break up the cranberries. Pour half of the batter into the prepared pan, spreading to even the mixture. Sprinkle the remaining 1/2 cup cranberries into the center and add the remaining half of the batter, spreading to even the top. Sprinkle the streusel mixture over the batter, pressing down lightly on the top. Bake for 60 to 75 minutes, until a toothpick inserted in the center comes out clean. Cool in the pan for 10 minutes, then lift the bread out using the parchment handles and place
  • For the sugared cranberries: in a small saucepan, combine 1/2 cup granulated sugar with 1/2 cup water and bring to a boil over high heat. Stir until the sugar has dissolved. Remove from the heat and add the cranberries, stirring to coat. Drain the berries using a slotted spoon and transfer to a wax- or parchment-paper-lined plate. Cool the cranberries in the refrigerator for at least 30 minutes. Once cool, coat in the superfine sugar.
