This is one of the best pork recipes I've ever tried. My family looks forward to this roast for dinner, and guests always want the recipe. The flavorful rub, and the glaze brightened with orange juice, are also outstanding on pork chops. -Lynnette Miete, Alna, Maine

1 teaspoon salt
1 garlic clove, minced
2 to 3 fresh thyme sprigs or 1/4 teaspoon dried thyme
1/4 teaspoon ground ginger
1/4 teaspoon pepper
1 boneless pork loin roast (5 pounds)
GLAZE:
1 cup orange juice
1/4 cup packed brown sugar
1 tablespoon Dijon mustard
1/3 cup cold water
1 tablespoon cornstarch

Steps:

  • Preheat oven to 350°. Combine the first 5 ingredients; rub over roast. Place fat side up on a rack in a shallow roasting pan. Bake, uncovered, for 1 hour. , Meanwhile, in a saucepan over medium heat, combine orange juice, brown sugar and mustard. In a small bowl, mix water and cornstarch until smooth. Add to orange juice mixture. Bring to a boil; cook and stir 2 minutes. Reserve 1 cup glaze for serving; brush half of remaining glaze over roast. , Bake until a thermometer reads 145°, 20-40 minutes longer, brushing occasionally with remaining glaze. Let stand 10 minutes before slicing. Reheat reserved glaze; serve with roast.

3 lbs boneless pork loin roast, center-cut
1 1/2 teaspoons black pepper
1/2 teaspoon salt
1 cup orange marmalade
2 teaspoons dry mustard
2 teaspoons rosemary
2 tablespoons all-purpose flour
14 ounces fat free chicken broth

Steps:

  • Place roast on a rack coated with cooking spray in roasting pan. Rub roast with salt and pepper and set aside.
  • Heat marmalade in microwave on high 10 seconds or till melted. Add mustard and rosemary, stirring till blended. Brush mixture over roast.
  • Bake at 425°F for 45 minutes (or until meat thermometer registers 155 degrees).
  • Remove roast from pan, cover with foil and let stand for 10 minutes. Meanwhile, place roasting pan on stove top over medium heat and sprinkle flour over juices. Gently and constantly whisk and cook for 1 minute.
  • Add broth, and cook 5 more minutes, whisking constantly until mixture thickens. Serve with sliced pork.

1 cup orange juice
1/2 cup cider vinegar
1/2 cup packed brown sugar
1/4 cup honey
2 tablespoons chili powder
1 tablespoon ground coriander
1 tablespoon ground cumin
1-1/2 teaspoons ground cinnamon
1 boneless pork loin roast (4 pounds)
1 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a small saucepan, combine the first 8 ingredients. Bring to a boil. Reduce heat; simmer, uncovered, until glaze is reduced to 1 cup, 45 minutes. , Meanwhile, preheat oven to 350°. Sprinkle pork with salt and pepper. Place on a rack in a shallow roasting pan lined with heavy-duty foil. Roast until a thermometer reads 145°, 1-1/4 to 1-3/4 hours, brushing with glaze 2-3 times after first hour of roasting. Let stand for 10-15 minutes before slicing.

5 lbs boneless pork loin roast, rolled
1 teaspoon salt
1 garlic clove, minced
1/4 teaspoon dried thyme
1/4 teaspoon ground ginger
1/4 teaspoon pepper
1/4 cup packed brown sugar
1 tablespoon cornstarch
1 cup orange juice
1/3 cup water
1 tablespoon Dijon mustard

Steps:

  • Combine the salt, garlic, thyme, ginger and pepper; rub over the entire roast. Place roast with fat side up on a rack in a shallow roasting pan. Bake, uncovered, at 350* for 2 hours.
  • Meanwhile, in a saucepan, combine brown sugar and cornstarch. Stir in the remaining glaze ingredients until smooth. Bring to a boil; cook and stir for 2 minutes. Brush some of the glaze over roast.
  • Bake 1 hour longer or until a meat thermometer reads 160*, brushing occasionally with glaze. Let stand 10 minutes before slicing; serve with remaining glaze.

1/2 teaspoon salt
1 cup orange marmalade
2 tablespoons creole mustard
2 teaspoons snipped fresh rosemary

1 (14 1/2 ounce) can fat-free chicken broth

Steps:

  • Place roast on a rack coated with nonstick cooking spray in an foil-lined shallow roasting pan.
  • Rub roast with pepper and salt.
  • Add marmalade to a microwave safe bowl; heat on HIGH for 10 seconds or until melted.
  • Add in mustard and rosemary; stir to blend.
  • Brush mixture over roast.
  • Bake in a 375° oven for 1 hour or until meat thermometer registers 155°.
  • Cover with foil; let stand 10 minutes or until meat thermometer registers 160°.
  • Remove roast from pan; cut into slices; cover and keep warm.
  • Sprinkle roasting pan with flour; place on cooktop and cook over medium heat for 1 minute, whisking constantly.

1 1/2 lbs boneless pork loin roast
1/4 cup orange marmalade
2 tablespoons Dijon mustard
2 tablespoons low-fat peanut butter
1 tablespoon lemon juice
1/2 tablespoon olive oil
1 teaspoon horseradish
1/8 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Marinade: Comine orange marmalade, Dijon mustard, peanut butter, lemon juice olive oil, horseradish, salt and pepper in a zip lock bag. Add pork roast and turn to coat both sides. Cover and chill for several hours or overnight, turning pork at least once.
  • Preheat grill.
  • Remove pork from zip lock bag. Sear the pork roast for 1 minute on each side. Cover grill and cook 18 to 22 minutes or until a meat thermometer registers 150 to 155, turning pork every 5 minutes and brushing with reserved marinade after pork has cooked for 12 minutes. Allow pork roast to sit for 5 minutes before carving.
