Meet the Cook: Several years back, my sister-in-law brought this recipe on a family camping trip and we fixed it for an outdoor potluck. It was so delicious that I asked if I could have a copy to take with me. It's become a summer standard for us. Making this dish is a team effort...I put the ingredients together, and my husband handles the grilling. - In a shallow dish, combine the first five ingredients. Set aside 1/2 cup for basting and refrigerate. Add beef to remaining marinade; turn to coat. Cover; refrigerate for 1 hour, turning occasionally., Drain and discard the marinade. On metal or soaked wooden skewers, alternate beef, tomatoes, mushrooms, green peppers and onions. Grill, uncovered, over medium heat for 3 minutes on each side. Baste with reserved marinade. Continue turning and basting for 8-10 minutes or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Serve meat and vegetables over rice if desired.

Steps:
- In small glass or plastic bowl, mix all ingredients except beef. Stir in beef. Cover; refrigerate at least 2 hours to marinate but no longer than 8 hours, stirring occasionally.
- Set oven control to broil. Remove beef from marinade; reserve marinade. On each of 2 (11-inch) metal skewers, thread beef cubes, leaving 1/4 inch space between each cube. Place on rack in broiler pan.
- Broil with tops about 5 inches from heat 4 minutes. Turn; brush with reserved marinade. Broil 3 to 5 minutes longer or until brown and medium doneness.

GRILLED GINGER-LIME CHICKEN KABOBS
The peppery-sweet ginger, along with the tang from lime juice, and fresh cilantro are the key ingredients to this delicious grilled chicken kabob. And, the chicken is guaranteed to be moist, tender, and succulent.

- Rinse, drain, and place all chicken pieces into a large zip-lock plastic bag.
- For the marinade, in a medium bowl, whisk together the next 9 ingredients. Pour over the chicken into the plastic bag. Seal the bag and turn a few times to coat the chicken. Place the bag in a shallow dish. Marinate in refrigerator for 1 to 4 hours. Turning occasionally.
- When ready to make the kabobs. Begin to thread kabobs with the chicken first onto a skewer, then add green pepper and then a grape tomato. Repeat 1 more time, and finish with chicken on top. You should have at least 3 pieces of chicken per skewer. Continue to thread all the skewers. Place each skewer onto a platter. If you have any grape tomatoes left, add them as the tops to some of the skewers.
- When all kabobs are ready, take the remaining marinade in the bag and pour it over the kabobs.
- Heat grill to medium heat. Spray gas or charcoal grill with cooking oil.
- Grill kabobs with the cover closed for about 3 to 4 minutes, brush once with some of the marinades. Then discard the rest of the marinade.
- Turn kabobs over and grill for another 3 to 4 minutes, or until chicken is fully cooked. Remove and let stand for a few minutes before serving, allowing metal skewers to cool down to handle. Serve warm.

STEAK KABOBS
These Steak Kabobs are made with an easy kabob marinade and loaded with tender steak, bell peppers and red onions. Easy to make and easy to prep ahead for summer entertaining!

- Cut steak, peppers and onion into equal sized pieces (about 1-1.5")
- In a large freezer bag, combine the oil, Worcestershire sauce, soy sauce, vinegar, garlic, honey, onion powder and chipotle powder if using.
- Add steak and let marinate for at least one hour, and up to 8 hours (see notes above regarding marinade times)
- If using wooden skewers, soak for 10 minutes before skewering your beef and vegetables.
- Preheat the grill to medium-high.
- Skewer your beef cubes and vegetables, alternating as you like. I try to ensure 3-5 cubes of beef per skewer, depending on how long your skewers are.
- Place kabobs directly over the heat, cooking for 4-5 minutes before flipping and cooking another 4-5 minutes. See notes above for cook times depending on your preference for doneness.

- Combine yogurt, cayenne pepper, ginger, orange zest, and sirloin cubes in a large freezer bag. Massage bag to mix and coat beef well. Refrigerate for at least 2 hours.
- Preheat an outdoor grill for medium heat, and lightly oil the grate. Remove beef from freezer bag; shake off as much marinade as possible. Thread onion, red pepper, and marinated beef cubes onto skewers; brush with olive oil.

- Thinly slice the flank steak across the grain and at an angle, creating slices 1 inch wide by 1/4 inch thick.
- Whisk together the hoisin sauce, lime juice, honey, garlic, salt, ginger, sesame oil, chile-garlic sauce, red pepper flakes, and black pepper in a bowl; pour into a resealable plastic bag.
