ORANGE CREAM CHEESE FROSTING RECIPE

Orange Cream Cheese Frosting Recipe image

This easy and delicious Orange Cream Cheese Frosting tastes amazing with orange cakes, lemon cakes, spice cakes, and more!

Provided by Melissa Diamond

Number Of Ingredients 7

2 sticks (1 cup) (226 g) unsalted butter, let it sit out approximately 10 minutes. It should feel very cool to the touch.
2 (8oz) packages cream cheese (total weight 452g) I use full fat cream cheese. Using reduced fat or the spreadable cream cheese will cause the frosting to be too soft. Do not soften the cream cheese.
1 teaspoon (4 g) clear vanilla extract (we used clear to keep color lighter)
1 teaspoon (4g) orange extract
1/2 teaspoon salt (2g) optional - it will cut the sweetness, popcorn salt is best to use because it is fine and dissolves faster
6 to 6 1/2 cups (690g to 747g) powdered sugar
Orange Coloring Gel (optional) We used a very small amount for tinting.

Steps:

  • Cut the butter into slices and add to the bowl of your mixer. Beat on low to medium speed until the butter is softened and smooth. Cut the cold cream cheese into pieces and add to the butter, beating at low to medium speed until incorporated. Add the vanilla and orange flavorings. Gradually add the powdered sugar beating on low speed until blended. Cover the bowl with a towel to keep down the cloud of powdered sugar. Increase mixing speed and beat until fluffy. Don't over beat. This frosting will pipe best if used while still chilled. You can make it in advance, refrigerate and when ready to use let it soften slightly (do not microwave) and remix. Will frost a 3 layer 8 or 9 inch cake. When decorating our Dreamsicle Cake, we frosted our cake and then when back in with swirls of lightly tinted orange frosting for a pretty effect.

ORANGE ICING

Orange Icing image

A tasty icing for a chocolate cake such as recipe #31804 #31804, or Kittencal's recipe #116990 #116990, or my recipe #147447 #147447. Enough to frost a two-layer cake. Posted in response to a request. To make an orange cake, use a white cake mix, use orange juice instead of the water called for in the package directions, and add some orange zest. Sprinkle top of iced cake with additional orange zest, or chocolate shavings, chocolate sprinkles, or chocolate drizzle.

Time 10m

Number Of Ingredients 8

1 1/2 cups or 3 sticks unsalted butter, room temperature (339g)
1 1/2 tsp orange emulsion or orange extract (7g)
2 Tbsp fresh orange zest - about 1 large orange (18g)
1/2 tsp fine salt (3g)
3 cup powdered sugar (375g)
1 cup dark cocoa powder (100g)
1/2 cup heavy cream, room temperature (115g)
2 cups milk or dark chocolate, melted and cooled (340g)

Steps:

  • Beat 1 1/2 cups of unsalted butter on a medium speed for 30 seconds with a paddle or whisk attachment until smooth.
  • Mix in 1 1/2 tsp orange emulsion or extract, 2 Tbsp fresh orange zest and 1/2 tsp salt on a low speed.
  • Slowly mix in 3 cup powdered sugar and 1 cup dark cocoa powder on a low speed. Add 1/2 cup of heavy cream halfway through adding the powdered sugar to make it easier to mix. Scrape the sides and bottom of the bowl as need with a rubber spatula.
  • Pour in 2 cups of cooled, melted chocolate. Mix on low until the ingredients are fully incorporated and the desired consistency is reached.
  • If the frosting seems too thick, add an extra Tbsp of heavy cream. If it's too thin, add in another 1/4 cup of powdered sugar. Repeat until the frosting is the right consistency.
  • Stir by hand with a rubber spatula to get the frosting SUPER smooth. Then cover the plastic wrap and set aside until you're ready to use it. This frosting tastes delicious on cupcakes, layer cakes, macarons, and cookies.

  • Put the softened butter in a bowl first. I love my handy dandy Kitchen Aid mixer, and I beat the butter well after adding it to the bowl to make sure it is nice and creamy. You can do this with a hand mixer as well, of course, though too.
  • Then, beat the mixture well. If it is not thick enough, add some more powdered sugar. However, if you’re like me, you are always apt to add in just a bit more milk to make it slightly thinner. You'll just need to use your best judgment on this to find the consistency that is most to your personal liking.

  • Preheat the oven to 350° F. Butter the bottoms and sides of three 8-inch round cake pans, line bottoms with parchment round and dust sides with flour.
  • In a small stainless steel bowl, place the cold water and sprinkle with the gelatin. Let sit for at least 10 minutes. In a small saucepan, bring 1/3 cup of the cream just to a simmer, then stir into the gelatin mixture until the gelatin has dissolved. Refrigerate, stirring frequently, until cool but not set, about 8 minutes. (Be careful to keep your eye on it, or you'll end up with Panna Cotta!)
  • In the bowl of an electric mixer fitted with the paddle attachment, whip butter for 8 minutes on medium speed (I use “4″ on my KitchenAid). Butter will become very pale & creamy.
  • Trim any dark edges or crust from cake layers with a very sharp serrated knife. Place your first cake layer, face-up, onto a cake stand, plate or 8-inch round foil cake board. Fill your pastry bag with about 1-1/2 cups of the Whipped Orange Frosting and pipe a dam around the perimeter of the cake layer (this will keep our Orange-Vanilla Whipped Cream Filling in place). Place about 1 cup of the cream filling on top of the cake layer, inside of the dam. Gently spread the filling using a small offset spatula.
