Time 45m

Yield 22 to 24 cupcakes

Number Of Ingredients 13

18 tablespoons (2 1/4 sticks) unsalted butter, at room temperature
3 cups sugar
6 extra-large eggs, at room temperature
1 cup sour cream, at room temperature
1 1/2 teaspoons pure vanilla extract
3 cups all-purpose flour
1/3 cup cornstarch
1 teaspoon kosher salt
1 teaspoon baking soda
3/4 pound (3 sticks) unsalted butter, at room temperature
1 pound cream cheese, at room temperature
3/4 pound confectioners' sugar, sifted
1 1/4 teaspoons pure vanilla extract

Steps:

  • Heat the oven to 350 degrees F. Line muffin pans with paper liners.
  • Cream the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment on high speed, until light and fluffy. On medium speed, add the eggs, 2 at a time, then add the sour cream and vanilla. Scrape down the sides and stir until smooth.
  • Sift together the flour, cornstarch, salt, and baking soda in a bowl. With the mixer on low speed, add the flour mixture to the butter mixture until just combined. Fill the cupcake liners to the top with batter. Bake in the center of the oven for 20 to 30 minutes, until a toothpick comes out clean. Cool to room temperature.
  • For the icing, mix the butter, cream cheese, sugar, and vanilla in the bowl of an electric mixer fitted with the paddle attachment, on low speed, mixing just until smooth. Spread the frosting generously on top of each cupcake.

Time 40m

Number Of Ingredients 19

130 g plain (all purp) flour ((1 cup / 4.6oz) )
33 g corn flour (cornstarch) ((¼ cup / 1.2oz) )
1 teaspoon baking powder
¼ teaspoon salt
115 g unsalted butter, melted ((½ cup / 1 stick) )
¾ cup caster (superfine) sugar ((150g / 5.3oz) )
¼ cup whole milk, room temp
2 large eggs, room temp
2 tablespoons orange juice ((notes))
Zest of 1/2 medium orange
1 teaspoon vanilla extract
1 cup whole milk
¼ cup plain (all-purp) flour ((33g / 1.2oz) (notes))
Peel of 1 orange, no pith, in thick strips (use a vegetable peeler)
226 g unsalted butter, softened ((1 cup / 2 sticks))
1 cup caster (superfine) sugar
½ teaspoon vanilla extract
1 teaspoon orange zest
Pinch of salt

Steps:

  • Preheat the oven to 180C / 350F / 160C fan forced. Line a 12 hole muffin tin with cupcake liners.
  • Place the flour, corn flour, baking powder and salt in a bowl and whisk to mix well.
  • In a separate bowl, mix together the melted butter and sugar just to combine.
  • Add the milk, eggs, orange juice, zest and vanilla and whisk really well to combine.
  • Add the dry ingredients to the wet ingredients and stir through gently with a spatula until just combined.
  • Fill the cupcake cases to about ⅔ full. Bake for around 20 minutes or until toothpick inserted comes out with just a couple of crumbs on it. Transfer to a cooling rack. You can go straight on with steps 1-3 of the buttercream.
  • In a small saucepan, whisk the flour with a little milk to a paste. Add the remaining milk, 1/2 cup of sugar and orange peel.
  • Heat over low heat, stirring constantly until it gets very thick (like a thick custard or pudding).
  • Press this mixture through a strainer into a bowl. Discard the orange peel and cover with plastic wrap pressed to the surface and let it cool to room temperature before continuing (notes).
  • Once the pudding mixture is cool, beat together the butter and ½ cup of sugar until lightened and creamy. About 5 minutes. Scrape down the bowl a few times through the process.
  • Add 1 spoonful of the pudding mixture at a time, mixing on low between each. Make sure each spoonful is incorporated before adding the next.
  • Once all the pudding mixture is added, beat for a further 5-7 minutes on medium until it looks whipped and creamy. You should not be able to feel any sugar granules. (If it looks like it separates, don't worry, just keep on beating. It will all come together into a beautiful, almost whipped cream looking frosting).
  • Finally add the vanilla and orange zest and give it one final quick mix just to mix it through.

HEFEWEIZEN ORANGE CUPCAKES

Hefeweizen Orange Cupcakes image

Ground cloves and orange zest enhance the natural flavors already present in hefeweizen, a traditional wheat beer from Germany.

Provided by Food Network Kitchen

Categories     dessert

Time 2h45m

Yield 24 cupcakes

Number Of Ingredients 17

1 cup sugar
1/2 cup all-purpose flour
1 teaspoon kosher salt
One 11.2-ounce bottle hefeweizen beer
3 sticks (1 1/2 cups) unsalted butter, at room temperature
1/4 teaspoon vanilla extract
Twenty-four small 1/8-inch-thick orange wedges
2 cups all-purpose flour (see Cook's Note)
2 teaspoons baking powder
3/4 teaspoon kosher salt
1/2 teaspoon ground cloves
1 cup plus 2 tablespoons sugar
1 1/2 sticks (12 tablespoons) unsalted butter, at room temperature
1/2 teaspoon vanilla extract
Finely grated zest of 1 orange
2 large eggs
3/4 cup hefeweizen

Steps:

  • For the frosting: Whisk the sugar, flour and salt together in a medium saucepan, then stir in the hefeweizen. Place the pan over medium heat and bring to a boil, stirring constantly. Continue boiling, stirring constantly, for 3 minutes (this cooks out the raw flour taste). Remove the pan from the heat and scrape the frosting base into a shallow bowl. Press a sheet of plastic wrap directly on the surface and refrigerate until chilled and thick, at least 2 hours.
  • For the cake: Meanwhile, preheat the oven to 350 degrees F. Line the cups of two 12-cup muffin pans with cupcake liners.
  • Whisk the flour, baking powder, salt and cloves in a bowl until evenly combined. Combine the sugar, butter, vanilla and orange zest in the bowl of a stand mixer fitted with the paddle attachment and beat on medium speed until pale and fluffy, about 3 minutes. Add the eggs, one at a time, beating well after each addition, until smooth. Alternately, add the flour mixture and the hefeweizen, beginning and ending with the flour mixture, until the batter is smooth. Divide the batter among the muffin cups (about scant 1/4 cup per muffin cup) then bake until a cake tester inserted in the center of the cupcakes comes out clean, about 25 minutes.
  • Let the cupcakes cool in the pan for 10 minutes, then transfer the cupcakes to a wire rack and let cool completely.
  • Remove the frosting base from the refrigerator and let stand for 10 minutes to come to room temperature. Beat the butter for the frosting on medium speed until lightened and creamy, about 3 minutes. Mash the frosting base with the back of a spoon until it is spreadable, then add a third of the frosting base to the butter and beat until evenly incorporated. Add half of the remaining frosting base, beat until smooth, then add the remaining frosting base and the vanilla and beat until the frosting is fluffy and light, about 2 minutes.
  • Frost the cupcakes with a spoon or transfer the frosting to a pastry bag fitted with a 1/2-inch-wide fluted tip and pipe mounds onto the top of each cupcake. Garnish each cupcake with an orange wedge before serving.

Time 1h40m

Yield 12 cupcakes

Number Of Ingredients 16

1 1/3 cups all-purpose flour (see Cook's Note)
1 teaspoon baking powder
1/2 teaspoon salt
1 stick unsalted butter, at room temperature
1 cup granulated sugar
1/2 vanilla bean, split and scraped
2 large eggs
2 teaspoons vanilla extract
1/2 cup milk
1 1/2 sticks unsalted butter, at room temperature
3 cups confectioners' sugar
2 tablespoons milk
2 teaspoons vanilla extract
6 small mandarins, peeled and segments separated
12 raspberries
1/4 cup apricot jelly

Steps:

  • For the cupcakes: Preheat the oven to 350 degrees F. Line a 12-cup muffin pan with paper liners. Whisk together the flour, baking powder and salt in a medium bowl; set aside. Beat the butter, granulated sugar and vanilla bean seeds together with an electric mixer on medium-high speed until light and fluffy, about 3 minutes. Beat in the eggs one at a time until blended, then beat in the vanilla extract. Reduce the mixer speed to low and beat in half the flour mixture, followed by the milk and then the remaining flour mixture until smooth.
  • Divide the batter among the prepared muffin cups and bake until the tops are lightly browned and spring back when pressed, about 25 minutes. Cool in the pans for a few minutes, then transfer to a wire rack to cool completely.
  • For the frosting: Beat the butter and confectioners' sugar together in a large bowl using an electric mixer on medium speed until smooth. Increase the speed to medium-high and beat until fluffy, 2 to 3 minutes more. Beat in the milk and vanilla extract until smooth and creamy. Transfer to a piping bag with a plain round tip (about 3/8-inch).
  • Frost each cupcake evenly and top with a circle of overlapping mandarin segments that touch in the middle and curve in the same direction. Place a raspberry in each center. Combine the jelly with 1 tablespoon water in a microwave-safe bowl and heat in the microwave until warm but not hot, about 30 seconds. Using a pastry brush, lightly coat the mandarin and raspberries with the jelly.

¾ cup creamy salad dressing (such as Miracle Whip®)
1 (1.3 ounce) envelope dry whipped topping mix (such as Dream Whip®)
¾ cup freshly squeezed orange juice
3 large eggs
2 tablespoons grated orange zest
1 (13 ounce) jar marshmallow creme
½ cup unsalted butter at room temperature
½ cup vegetable shortening
½ cup unsalted butter at room temperature
½ cup vegetable shortening
¼ cup freshly squeezed orange juice
1 tablespoon orange zest
¼ teaspoon vanilla extract
2 drops orange paste food coloring, or as desired
4 cups confectioners' sugar

CHOCOLATE-ORANGE MERINGUE CUPCAKES

Chocolate-Orange Meringue Cupcakes image

Provided by Food Network Kitchen

Categories     dessert

Time 2h

Yield 12 cupcakes

Number Of Ingredients 17

1/2 cup unsweetened cocoa powder
1/2 cup whole milk
1/2 cup water
1 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup sugar
3/4 cup vegetable oil
1 large egg
1 teaspoon pure vanilla extract
1/2 teaspoon grated orange zest
2 ounces semisweet chocolate, chopped
1/4 cup heavy cream
2 large egg whites
1/2 cup sugar
Pinch of cream of tartar
Orange gel food coloring, for tinting

Steps:

  • Make the cupcakes: Preheat the oven to 350 degrees F. Line a 12-cup muffin pan with liners. Put the cocoa powder in a large bowl. Microwave the milk and water in a small microwave-safe bowl until steaming, 1 to 2 minutes; pour over the cocoa powder and whisk until smooth. Let cool slightly.
  • Whisk the flour, baking soda and salt in a small bowl. Whisk the sugar, vegetable oil, egg, vanilla and orange zest into the cocoa mixture, then whisk in the flour mixture.
  • Divide the batter among the prepared muffin cups, filling them three-quarters of the way. Bake until the tops of the cupcakes spring back when gently pressed, 20 to 25 minutes. Let cool 5 minutes in the pan, then remove to a rack to cool completely.
  • Make the ganache: Microwave the chocolate and heavy cream in a microwave-safe bowl in 30-second intervals, stirring, until melted, about 1 minute. Let sit until thickened but still pourable, 5 minutes. Spoon over the cupcakes, gently spreading to cover. Let set 10 minutes.
  • Meanwhile, make the meringue: Whisk the egg whites, sugar and cream of tartar in a large heatproof bowl set over a saucepan of simmering water (do not let the bowl touch the water). Cook, whisking, until the sugar dissolves, 2 to 3 minutes. Remove from the heat; beat with a mixer on medium-high speed until stiff glossy peaks form, 5 to 8 minutes. Tint with orange food coloring. Generously spread the meringue on the cupcakes and lightly brown with a kitchen torch.

ORANGE & ALMOND CUPCAKES

Orange & almond cupcakes image

Delicate little cupcakes with almond buttercream icing- if you're feeling ambitious, follow our guide to creating an edible bouquet

Provided by Cassie Best

Categories     Dessert, Treat

Time 1h55m

Yield Makes 24 cupcakes (enough for 1 bouquet)

Number Of Ingredients 24

300g butter , softened
300g golden caster sugar
4 large eggs
250g plain flour
100g ground almond
2 ½ tsp baking powder
zest 1 orange , plus 2 tbsp juice
1 tsp almond extract
200g butter , softened
450g icing sugar , plus a little extra
200g cream cheese
1 tsp almond extract
1 tbsp orange juice
food colouring paste of your choice (we used a mixture of pink and yellow to create coral)
250g pack green sugar paste (or fondant icing mixed with green food colouring)
24 muffin cases (we used green ones)
large piping bag
large curved star point piping nozzle
15cm/6in styrofoam ball
15cm/6in flowerpot (measured across the top)
green tissue paper
sticky tape
24 short wooden skewers (or long ones cut in half)
ribbon , to decorate (optional)

Steps:

  • Heat oven to 170C/150C fan/gas 3½. Line 2 x 12-hole muffin tins with muffin cases. Put the butter and caster sugar in a large bowl and blend with an electric hand whisk until pale and fluffy. Add the eggs, one at a time, whisking well between each addition. Add the flour, almonds, baking powder and a pinch of salt. Mix again, then add the orange zest and juice, and almond extract. Give a final mix to combine everything.
  • Use 2 dessertspoons to divide the mixture between the cases. Bake for 22-25 mins, changing the tins over after 15 mins. Remove from the oven, leave to cool for 10 mins in the tins, then transfer to a wire rack to cool completely. Can now be frozen for up to 3 months.
  • To make the icing, tip the butter into a large bowl and blend with an electric hand whisk until smooth. Add the icing sugar, cream cheese, almond extract and orange juice. Mash everything together first with a spatula (to avoid a mess), then go in with the electric whisk and mix until smooth. Add your food colouring and mix again until you have an even colour. (If you're using liquid food colouring, it will make the icing runny, so add a little more icing sugar.)
  • Fit the piping bag with a large curved star point piping nozzle, then fill the bag with half of the icing and twist the end closed. To pipe, hold the piping bag directly above the centre of the cake and, applying a steady pressure, pipe in a swirl, working out towards the edge of the cupcake. When you reach the edge, swipe the nozzle to create a smooth finish - you can always cover this bit with leaves, so don't worry too much if it looks messy. When you have piped 12 cupcakes, empty any remaining icing from the bag back into the bowl with the reserved icing. Add a little more colouring to create a deeper shade (and a little extra sifted icing sugar if the icing gets too runny). Whisk again, then refill your piping bag and ice the remaining cakes. Can be stored somewhere cool for up to 1 day (the fridge is fine, just make sure that you remove 30 mins before eating).
  • Before serving, add a few leaves, if you like: pinch off small pieces of green sugar paste or fondant icing and shape into leaves. Use a sharp knife to add detail, then stick onto the cupcakes. See tips, below left, for how to build your bouquet.
