Orange Delight is a light and sweet treat made of mandarin oranges, crushed pineapple, orange gelatin, cottage cheese and Cool Whip. This old fashioned dessert salad recipe can be made in just 10 minutes!

6 ounces orange gelatin
16 ounces cottage cheese
16 ounces crushed pineapple (drained)
15 ounces mandarin oranges (drained)
8 ounces whipped topping (thawed)

Steps:

  • Mix dry gelatin with cottage cheese.
  • Drain juice from pineapple and mandarin oranges. Stir into cottage cheese mixture.
  • Stir in whipped topping and refrigerate for at least 1 hour before serving.

My favorite gelled salad. I usually only get to make it at Christmas or Thanksgiving though. It is too much for just hubby and me, even though it is a smallish one. Cook time is chill time.

1 cup boiling water
3 ounces orange Jell-O
1 cup small marshmallow
8 ounces Philadelphia Cream Cheese
1/4 cup sugar
1 cup whipping cream
8 ounces crushed pineapple (drained)
1/2 cup pecans

Steps:

  • Pour boiling water over jello and marshmallows. Stir until marshmallows melt. Set aside this mixture until cooled slightly.
  • Cream the cream cheese and sugar; then add whipping cream. Whip until mixture is smooth and thick.
  • Add jello mixture, drained pineapple and nuts. Pour into mold and chill.

COOKIES:
2 cups all-purpose flour
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2/3 cup softened unsalted butter
3/4 cup sugar
1 egg
2 tablespoons orange zest
1/2 cup orange juice
ORANGE FROSTING:
2 1/2 tablespoons softened unsalted butter
1 1/2 cups confectioners' sugar
2 tablespoons orange zest
1 1/2 to 2 tablespoons orange juice (I used closer to 2 1/2 tablespoons)

Steps:

  • Preheat oven to 400°F. Sift flour, baking powder, baking soda, and slat into a medium bowl and set aside. In a stand mixer, cream butter and sugar on medium speed for several minutes until light and fluffy. Add the egg and orange zest and mix until combined. Add flour mixture and orange juice in three additions, alternation between the flour mixture and the juice. Drop tablespoons of dough onto an ungreased cookie sheet at least 1 1/2 inches apart. Bake for 8 to 10 minutes. Remove and allow to cool on wire racks for at least 30 minutes before frosting. FROSTING: In a stand miner, cream butter and sugar at medium speed for several minutes until light and fluffy. Add orange zest and juice, and mix until smooth. Frost cooled cookies using a mini rubber spatula.

3 pkg. (3 oz. each) JELL-O Cherry Flavor Gelatin
2-3/4 cups cold water
1 can (15 oz.) DOLE Mandarin Oranges, drained
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
2 Tbsp. sugar
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed

Steps:

  • Add boiling water to gelatin mixes in medium bowl; stir 2 min. until completely dissolved. Stir in cold water. Refrigerate 1-1/4 hours or until slightly thickened. Reserve a few orange segments for garnish. Gently stir remaining oranges into gelatin.
  • Beat cream cheese and sugar in separate medium bowl with whisk until blended. Stir in COOL WHIP. Spoon into 2-1/2-qt. serving bowl; cover with gelatin mixture.
  • Refrigerate 2 hours or until firm. Garnish with reserved oranges before serving.

2 cups cake flour
1 ⅓ cups white sugar
2 teaspoons baking powder
¼ teaspoon baking soda
¾ teaspoon salt
2 teaspoons orange zest
⅔ cup shortening
⅓ cup orange juice
⅓ cup water
2 eggs
2 tablespoons lemon juice
2 egg whites
1 ½ cups white sugar
5 tablespoons water
⅛ teaspoon salt
1 ½ teaspoons light corn syrup
⅛ teaspoon cream of tartar
1 teaspoon vanilla extract
2 tablespoons grated orange zest
½ cup chopped walnuts

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease and flour two 8 inch cake pans.
  • Sift together into a large bowl the cake flour, 1 1/3 cups sugar, baking powder, baking soda, and 3/4 teaspoons salt. Add grated orange rind, shortening, orange juice, and 1/3 cup water. Beat on medium speed for 2 minutes with an electric mixer, scraping bowl while beating. Add two whole eggs and beat batter for 2 more minutes. Beat in the lemon juice. Pour batter into prepared pans.
  • Bake at 375 degrees F (190 degrees C) for 30 to 40 minutes. Remove cakes from pans and let cool. Frost with Double Boiler Icing or whipped cream. Sprinkle cake with grated orange rind and finely chopped nuts or coconut.
  • To Make Double Boiler Icing: In the top of a double boiler put; the 2 egg whites, 1 1/2 cups of the sugar, 5 tablespoons water, 1/8 teaspoon salt, light corn syrup, and cream of tartar. Place over boiling water and beat until blended. Cook mixture beating constantly until mixture will stand in peaks. Remove from heat and add the vanilla. Continue beating until of spreading consistency, about 5 minutes. Spread onto cooled cake.

12 ounces mandarin oranges, 2 small cans (drained)
8 ounces crushed pineapple
1/2 cup finely chopped walnuts
1 (6 ounce) box orange Jell-O
1 (8 ounce) container Cool Whip, thawed

Steps:

  • Combine sour cream and jello in a small bowl. Mix until jello has dissolved (will take a bit). Drain the pineapple and oranges very well, there should be NO juice remaining. Mix the fruit into the jello mixture. Add the walnuts. Fold in the Cool Whip. Let cool in the fridge for an hour or more.

  • Pour the water into a 4-quart glass bowl. Whisk in the 3/4 cup cornstarch 1/4 cup at a time until dissolved. Microwave mixture for 2 minutes; whisk smooth. Return to microwave and heat for 2-3 more minutes, or until the mixture starts to turn opaque. Whisk again - mixture should have the appearance of white paste.
  • Add sugar and corn syrup. Heat for 5 minutes in microwave. Remove bowl with pot holders and whisk smooth. Heat for 5 more minutes; remove and whisk smooth again. At this point the mixture will be thick and translucent. Heat for an additional 5 minutes and whisk in orange extract and food coloring. Whisk until mixture is smooth and color is evenly distributed. Heat 3 more minutes in microwave. You'll know when the mixture is done when you try to whisk the mixture and a large portion of the candy batter holds in the balloon of your whisk. Mixture will be very thick. You can check consistency by letting a small bit candy batter sit for a few minutes in a condiment cup. When cooled a little, you should be able to pick it up and roll it into a ball without it being tacky. If your batter has not reached consistency, heat at 1 minute intervals until consistency is achieved.
  • Grease the 8x8 or loaf pan with cooking spray or oil and pour in candy batter. Spray/grease the back of a spoon -the batter doesn't spread well, so just do the best you can to spread it evenly with the back of greased spoon. Let candy set up at room temperature until firm enough to handle. This may take several hours - mine set up in about two.
  • Cut candy with a sharp knife or scissors into even squares. You can do this in the pan or turn the block of candy out on a cutting board dusted with cornstarch. I cut mine a little larger than usual at about 1 1/2" square. In a bowl, combine the remaining 1/2 cup cornstarch, 1/2 cup powdered sugar and ground cloves. Dust squares in mixture. Serve with cocktail picks, or in individual paper cups.
