MATRIMONIAL DATE SQUARES
Delicious! This favorite recipe has been passed down in the family for many years. It has lots of date filling and can be stored in the refrigerator for a week.

- Preheat oven to 350 degrees F (175 degrees C).
- Heat dates, 2/3 cup brown sugar, orange juice, and orange zest in a saucepan over low heat; cook, stirring occasionally, until dates have softened, absorbed the liquid, and mixture is like a paste, about 10 minutes. Remove from heat; stir in vanilla extract.
- Stir oats, flour, 1 cup brown sugar, baking soda, and salt together in a bowl; cut in butter with a knife or pastry blender until mixture resembles coarse crumbs.
- Lightly press 2/3 of the crumb mixture into the bottom of a 9x9-inch pan. Spread date mixture evenly over the crumb crust; sprinkle remaining crumbs evenly over the top of date mixture.
- Bake in the preheated oven until top is golden, about 30 minutes; cool on a wire rack for at least 1 hour before slicing into bars.

NEWFOUNDLAND DATE CRUMBLES
Newfoundland Date Squares or Date Crumbles is a recipe every local family knows and loves. The secret is having the right proportion of butter in the crumble and this recipe gets it just right.

- Preheat oven to 350 degrees F. Lightly grease a 9x13 inch baking pan and line with parchment paper if you want.
- As noted in the recipe description, some people prefer these date squares with less filling so you can reduce the amounts in the filling by 1/4, 1/3 or even 1/2 if you prefer.
- In a medium saucepan combine and gently simmer until thickened (about 10-15 minutes).
- The filling should be very thick; you will need to watch it carefully and stir constantly in the last few minutes of cooking time.
- Set aside to cool slightly while you prepare the crumble mixture.
- In a large bowl, toss together the rolled oats, baking powder, coconut, flour and brown sugar.
- Using your hands, rub the butter thoroughly through the dry ingredients.
- Divide crumble mixture in half and press half into the bottom of the prepared baking pan.
- Spread date mixture over the base.
- Top with remaining crumb mixture, pressing it together in clumps in your hands and then breaking it into small pieces with your fingers to scatter evenly over the date filling.
- Press down lightly.
- Bake for 40 minutes at 350 degrees F.
- This is a very good basic recipe but I have also had very good variations of date crumbles over the years.
- Orange Date Crumbles: Substitute orange juice for the water in the filling and add the zest of a medium orange.
- Cocoa Date Crumbles: Add 4 tbsp cocoa to the filling.
- Hazelnut or Almond Date Crumbles: Prepare filling as usual. Add ½ cup ground Almonds or Hazelnuts plus 1 tsp cinnamon and ½ tsp nutmeg to the crumble.

- In a 4 cup(1L) glass bowl, combine dates and orange juice.
- Cover and microwave at high for 5-6 minutes, stirring once.
- Stir vigorously, breaking up dates to form a homogeneous filling.
- Set aside.
- In separate bowl, cream butter and brown sugar, stir in flour, add rolled oats, mixing until crumbly.
- Press about 2/3 of mixture in bottom of 8" or 9" square glass baking dish.
- Microwave on high for 2-3 minutes, or until firm.
- Spread date filling over base.
- Top with remaining crumb mixture, pat down lightly.
- Microwave on high 5-6 minutes or until firm.
- Rotate dish partway through cooking.
- Let stand directly on counter top 10 minutes.
- Cool completely, cut into squares.

- Conventional cooking.
- For date filling, increase orange juice to 1 cup.
- Cook dates and orange juice in a covered saucepan, stirring occasionally, over medium-low heat 8-10 minutes.
- Prepare crumb mixture and assemble squares as directed.
- Bake at 350° oven 25-30 minutes or until light golden.

BEST DATE SQUARES EVER
These rich tasting squares use less sugar than other recipes but you would never know it. Bring squares to room temperature to serve, about 15 minutes.

- Preheat oven to 325 degrees F (165 degrees C). Grease a 9x11-inch baking pan and line with parchment paper.
- Heat dates, orange juice, and lemon juice in a large saucepan over medium-low heat, stirring often, until dates are soft, about 6 minutes.
- Stir whole wheat flour, oats, brown sugar, baking powder, baking soda, and salt together in a large bowl; stir in melted butter. Press half of the oat mixture evenly into the prepared pan.

Steps:
- Cream butter and sugar, add eggs one at a time and mix smooth.
- Add Baking Powder, Baking Soda, salt and Graham crumbs.
- Add nuts and dates.
- Add orange juice and zest and mix well.
- Bake in a 9x9 greased pan at 350 degree oven 35 to 40 minutes. When cool you may want to ice with orange icing.
- Orange Icing: In a medium bowl mix butter, cream and orange juice.
- Add in icing sugar, adding more if needed to make for desired consistency.

- In a saucepan, mix water, dates, figs, sugar, lemon juice and orange juice. Let rest for 30 minutes then bring to boil. Reduce to medium heat and let simmer, stirring frequently, for 10 minutes or until mixture has thicken. Let cool.
- In a large bowl, mix oats, flour, brown sugar, orange peel and salt. Add butter and with a pastry knife or with 2 knives, work the mixture until you have rough crumbs. Press uniformly half of this mixture in a 8 inches square pan (with parchment paper). Spread the cold dates garnish on the oat mixture. Mix the remaining oat mixture with hazelnuts. Distribute this mixture on the date garnish and press slightly.
- Cook in a preheated oven of 350 F for about 45 minutes or until the top is lighly golden. Put the pan on a rack and let cool. Cut in squares. (You can prepare these squares in advance, let cool and cover with plastic wrap. They will be good up to 3 days in the fridge or up to 2 weeks in the freezer, wrapped with foil paper).

- Preheat oven to 350F degrees.
- Measure flour, salt and baking powder in bowl and stir to blend, set aside.
- Melt butter in small saucepan over low heat, remove from stove. Stir in brown sugar.
- Blend in egg, vanilla and orange zest.
- Add flour mixture to the butter mixture.
- Stir in coconut and dates.
- Spread mixture into a greased 7"x 11" pan.
- Bake for 25 - 30 minutes.
