8 ounces broad egg noodles, such as Pennsylvania Dutch
Kosher salt
1 cup small‐curd cottage cheese or farmer cheese
1 1/4 cups sour cream
1/3 cup plus 1 tablespoon sugar
1 teaspoon finely grated lemon zest, plus 1 tablespoon fresh juice
3 large eggs
4 tablespoons unsalted butter, melted
1/4 cup dried currants
1/4 cup orange marmalade, plus more for serving (optional)

Steps:

  • Preheat oven to 350°F. Line a standard muffin tin with tulip-shaped baking cups (or standard cups). Cook noodles in a large pot of salted boiling water 6 minutes; drain. Let cool 10 minutes.
  • Whisk together cheese, sour cream, 1/3 cup sugar, zest and juice, and 1/4 teaspoon salt. Whisk in eggs and 3 tablespoons butter. Stir in noodles and currants. Divide mixture among muffin cups. Drizzle with remaining butter; sprinkle with remaining sugar. Dollop a little marmalade over each cup.
  • Bake until kugel is set and tops are golden brown, about 30 minutes. Let cool 30 minutes before serving with more marmalade on the side.

The genius of this sweet noodle kugel - the rich, custardy casserole that is a staple of Jewish cooking - is that its top is designed to offer maximum crunch while its interior remains creamy and luscious. The secret: use a jellyroll pan, which means that there is a greater amount of kugel surface area to brown in the oven, and bake it at a slightly higher temperature. Soaking the raisins in sherry or orange juice adds flavor, and also keeps them from burning in the extra-hot oven.

1 cup raisins
Sherry or orange juice
1 pound egg noodles
6 tablespoons unsalted butter, cut into pieces, more for pan
4 large eggs
3 cups cottage cheese
1 cup sour cream
1/3 cup sugar
1 teaspoon ground cinnamon
Grated zest of 1 lemon
Pinch of salt

Steps:

  • Put raisins in a microwave-safe bowl or small saucepan and cover with sherry or orange juice. Heat on stove top or in microwave oven until liquid is steaming hot (about 1 1/2 minutes in microwave or 3 minutes on stove). Let cool while you prepare kugel mixture.
  • Preheat oven to 400 degrees. Butter an 11-by-17-inch jellyroll pan. Cook noodles according to package directions and drain well. Immediately return noodles to pot and add butter. Toss until butter melts.
  • In a large bowl, whisk together the eggs, cottage cheese, sour cream, sugar, cinnamon, lemon zest and salt. Drain raisins and add to bowl along with buttered noodles. Mix well.
  • Spread mixture in prepared pan and smooth top. Bake until top is crusty and golden, 25 to 35 minutes. Serve warm or at room temperature.

A dairy kugel from a community cookbook. I just made and it for Rosh Hashana and it was very good. I made it lighter by using a low-fat sour cream. No cheese in this recipe. Note* If you want to use the raisin topping you'll need to soak the raisins overnight in orange juice. I had no time for the raisins this time but it sounds really good to me.

1 (8 ounce) package broad egg noodles, cooked and drained
1/2 cup butter
4 eggs
16 ounces sour cream, can use lowfat
1 cup sugar, I used 3/4 cup Splenda
1/2 cup milk
1 teaspoon vanilla
1/2 teaspoon salt
1 cup golden raisin, soaked overnight in orange juice and drained
2 tablespoons cinnamon sugar, can use cinnamon

Steps:

  • In a 9" X 13" Pyrex baking dish, place the butter.
  • Put the hot drained noodles on top of the butter to melt it and toss the noodles to coat, until butter is melted. (If you have noodles that are cold that you want to use, just melt the butter and toss in the noodles).
  • In a mixing bowl, use an electric mixer, beat together the eggs, sour cream, sugar, milk, vanilla and salt until the mixture is well blended.
  • Pour the mixture over the buttered noodles in the baking dish and spread evenly in the pan; all noodles should be coated.
  • Sprinkle top with raisins and cinnamon sugar.
  • Bake at 350 degrees F. for 1 hour.

After reading a lot of different recipes, I "stole" what I liked from each one and came up with this. I'm not a kugel expert, but this recipe has worked for me on several occasions. The marmalade was used simply because I happened to have a jar of it handy, and it went well with the cinnamon. If you aren't as sugar-crazy as I am, by all means eliminate or reduce the amount of sugar (or, use unsweetened marmalade). This is a great dessert or side-dish for a crowd of people! :)

1 (16 ounce) package egg noodles
6 eggs
2 cups low-fat sour cream
2 cups low fat cottage cheese
2 cups orange marmalade
1/2 cup dried apricot, chopped
1 apple, peeled &,chopped
1/3 cup sugar
1/2 tablespoon cinnamon
1/3 cup plain breadcrumbs
2 tablespoons sugar
1 teaspoon cinnamon

Steps:

  • Preheat oven to 350*.
  • Bring a pot of water to boil, then add the egg noodles.
  • Allow them to boil for about 5 minutes, or until*just* al-dente.
  • (Noodles will continue cooking while in the oven.) Drain noodles.
  • Return noodles to (now empty) pot.
  • Add marmalade to noodles.
  • (The hot noodles should melt the marmalade& make it easy to mix)-- Mix well.
  • Whisk sour cream, eggs, cottage cheese, cinnamon, and sugar together in a bowl.
  • When mixture is smooth, add fruit and stir.
  • Pour egg mixture over noodles.
  • Mix well.
  • Spray a 9 x 12 casserole dish with cooking spray.
  • Pour kugel mixture into casserole.
  • Mix topping ingredients together, and sprinkle over kugel.
  • Bake at 350* for 1 hour, or until the top has become crispy.

1 lb extra-wide egg noodles
1/2 cup unsalted butter, at room temperature,cut into pieces
8 ounces cream cheese, at room temperature
3/4 cup granulated sugar, plus
2 tablespoons sugar
2 cups sour cream
5 large eggs
3/4 cup apricot preserves
1/2 cup corn flakes cereal, crumbs
1 teaspoon cinnamon

Steps:

  • Preheat oven to 350 degrees F.
  • Butter a 9x13" glass baking dish.
  • Cook noodles according to package directions until tender but still firm to the bite (al dente).
  • Drain noodles well, then return to the hot pan.
  • Add butter and toss until butter melts and the noodles are coated.
  • Combine cream cheese and 3/4 cup sugar until smooth.
  • Add sour cream and eggs to the sugar mixture and whisk until blended well.
  • Mix in buttered noodles gently.
  • Spoon half of the noodle mixture into the prepared baking dish.
  • Dot with preserves.
  • Spoon remaining noodle mixture over preserves layer.
  • Sprinkle cornflake crumbs all over the top.
  • Combine cinnamon and remaining 2 Tbsp sugar and sprinkle evenly over the crumbs.
  • Bake until kugel is set and the top is golden brown, approximately 45 minutes.
  • Let cool slightly before slicing into 12 squares.
  • Serve warm or chilled.

RICH AND FRUITY LOKSHEN KUGEL

"Sweet Noodle Pudding" recipe that was given to me by a dear friend who is now passed on and deeply missed. For best results, do NOT use non-fat sour cream or non-fat cream cheese in this recipe.

2 tablespoons sugar
1 teaspoon ground cinnamon
8 ounces medium egg noodles (2/3 of a 12 ounce package)
1 (16 ounce) can pitted sweet dark cherries in heavy syrup
1 (10 ounce) can mandarin oranges in light syrup
1 cup sour cream (8 ounce container)
1 (8 ounce) package cream cheese, softened and cut into small pieces
1/2 cup sugar
2 teaspoons vanilla extract
4 large eggs or 1 cup egg substitute
1 (8 ounce) can crushed pineapple in juice

Steps:

  • For the topping: Put the sugar and cinnamon in a small bowl, and mix them well. Set the topping mixture aside.
  • For the kugel: Cook the egg noodles in a 5-quart or similar pot following the package directions. While the noodles are cooking, drain cherries and mandarin oranges in a colander, and rinse them slightly with cool water. When the noodles are done cooking, drain them well, and return them to the pot off the heat. Set aside.
  • Preheat oven to 350 degrees Fahrenheit. Coat a 9"x13" baking dish with non-stick cooking spray or grease it well.
  • In a food processor(fitted with a steel blade) or a blender, combine the sour cream, cream cheese, sugar, vanilla, and eggs. Process until the mixture is completely smooth, about 1 minute or longer, scraping down the sides of the container once or twice. Pour the mixture over the noodles, then stir the noodles gently with a large spoon so that the cream cheese mixture is evenly distributed. Add the drained cherries and mandarin oranges, along with the pineapple, and gently stir so that the fruit is evenly distributed.
  • Transfer the noodle mixture to the prepared baking dish. Smooth the top, pushing down any cherries that have floated to the top. Sprinkle all of the reserved cinnamon-sugar topping over the top of the kugel.
  • Bake the uncovered kugel at 350 degrees for 1 hour or until set. Let it rest for at least 10 to 15 minutes before cutting it. Serve warm or at room temperature, cut into squares.
  • Notes: If the kugel is made ahead, let it cool to room temperature. Then cover the top tightly with plastic wrap, and refrigerate or freeze the kugel. Defrost it, covered, in the refrigerator for several hours or overnight. Shortly before serving the kugel, reheat it, covered, in a microwave oven or a 350 degree oven until warmed through.
  • Also, try to use the mandarin oranges canned in syrup. They hold their shape better than those canned in juice. For this recipe, all the syrup is drained off. And again, don't use non-fat sour cream or cream cheese.

1/2 pound wide egg noodles
1 large Granny Smith apple
1/3 cup sliced blanched almonds

Steps:

  • In a small bowl soak currants in hot water to cover 5 minutes and drain well.
  • In a blender blend together sour cream, cottage cheese, eggs, 1/4 cup plus 2 tablespoons sugar, 3 tablespoons butter, zest, vanilla, 1/4 teaspoon cinnamon, and salt until smooth.
  • Preheat oven to 350°F. and butter a 2-quart gratin dish or other shallow baking dish.
  • In a kettle of salted boiling water cook noodles until just tender, about 5 minutes, and drain well. Peel apple and grate coarse into a bowl. Add noodles and toss with sour cream mixture and currants. Transfer mixture to prepared dish.
  • In a small bowl stir together remaining 2 tablespoons sugar, remaining 1/4 teaspoon cinnamon, and almonds and sprinkle evenly over kugel. Drizzle top with remaining 2 tablespoons melted butter.
  • Bake kugel in middle of oven 40 to 45 minutes, or until cooked through and golden.
