Our tasty orange frosting is made with butter, confectioners' sugar, orange juice, and orange zest and is great on cupcakes and Bundt cakes.

4 tablespoons butter, softened
1/2 teaspoon vanilla extract
3 cups confectioners' sugar
1/4 teaspoon salt
3 to 4 tablespoons orange juice
2 tablespoons orange zest (from 1 orange, finely grated)

Steps:

  • In a mixing bowl with an electric mixer, beat the butter with the vanilla extract until light and well blended.
  • Sift the confectioners' sugar and gradually beat it into the butter along with the salt.
  • Add a few tablespoons of orange juice and the orange zest. Beat until well blended and add more orange juice as needed for a spreadable frosting.

3 ounces cream cheese, softened
2 tablespoons butter, softened
1 teaspoon orange zest
2 tablespoons fresh orange juice
2 ½ cups confectioners' sugar
¾ cup chopped walnuts

Steps:

  • Beat cream cheese, butter or margarine, orange peel, and orange juice until creamy. Beat in confectioner's sugar until blended and smooth.
  • Spread about 1 1/2 teaspoons on each cooled cookie. Sprinkle with walnuts.
  • Let icing set 1 to 2 hours. Refrigerate in an airtight container with waxed paper between layers up to 1 week.

1 (.25 ounce) package active dry yeast
¼ cup warm water (105 - 115 degrees F; 40 - 45 degrees C)
¾ cup warm orange juice (105 - 115 degrees F; 40 - 45 degrees C)
¼ cup warm milk (105 - 115 degrees F; 40 - 45 degrees C)
¼ cup shortening
¼ cup white sugar
1 egg, lightly beaten
1 teaspoon salt
3 ¾ cups all-purpose flour, or as needed
1 cup white sugar
½ cup butter, softened
2 tablespoons orange zest
2 cups confectioners' sugar
½ (8 ounce) package cream cheese, softened
3 tablespoons butter, softened
3 tablespoons orange juice
2 teaspoons orange zest

Steps:

  • Dissolve yeast in warm water and warm orange juice in a bowl. Let stand until yeast softens and begins to form a creamy foam, about 5 minutes.
  • Beat warm milk, shortening, 1/4 cup white sugar, egg, and salt together in a separate bowl. Stir yeast mixture into milk mixture. Add enough flour to mixture to create a soft dough. Turn dough onto a lightly floured surface; knead until smooth and elastic, 6 to 8 minutes.
  • Grease a large bowl and two 11x7x2-inch baking sheets.
  • Place dough in the greased bowl and turn dough to coat all sides. Cover bowl with plastic wrap or a clean towel and let rise in a warm place until dough is doubled in size, about 1 hour.
  • Punch dough down and divide in half. Roll each half on a lightly floured surface creating two 15x10-inch rectangles.
  • Mix sugar, softened butter, and orange zest in a bowl until filling is smooth. Spread half of the filling onto each dough rectangle. Roll each rectangle around the filling, jelly roll-style, starting with the long end creating a log. Cut each log into 15 rolls.
  • Arrange rolls on the prepared baking sheets. Cover baking sheets with plastic wrap and let rolls rise until doubled in size, about 45 minutes.
  • Preheat oven to 375 degrees F (190 degrees C). Remove plastic wrap from baking sheets.
  • Bake rolls in the preheated oven until lightly browned, 20 to 25 minutes.
  • Beat confectioners' sugar, cream cheese, softened butter, orange juice, and orange zest in a bowl until frosting is smooth. Spread frosting on the warm rolls.

3 to 3 1/2 cups confectioners' sugar
1/2 teaspoon vanilla extract
1 1/2 teaspoons orange extract
1 tablespoon orange zest, finely grated
3 to 4 tablespoons orange juice, fresh
Orange food coloring, optional

Steps:

  • Gather the ingredients.
  • In a mixing bowl with an electric mixer , combine the butter, 3 cups of confectioners' sugar , and vanilla and orange extracts until well blended.
  • Add the orange zest and 3 tablespoons of fresh orange juice. Beat until smooth and creamy.
  • Add more confectioners' sugar or orange juice, as needed, for spreading or piping consistency. Beat in a few drops of orange food coloring , if desired.

Steps:

  • Preheat oven to 350°F. Butter three 9-inch-diameter cake pans. Line bottom of pans with waxed paper. Butter and flour pans; tap out excess flour. Sift first 8 ingredients into medium bowl. Using electric mixer, beat sugar, butter and orange peel in large bowl until fluffy. Beat in eggs 1 at a time. Stir flour mixture into butter mixture alternately with sour cream and milk. Divide batter among prepared pans.
  • Bake cakes until tester inserted into center comes out clean, about 25 minutes. Transfer pans to racks and cool 10 minutes. Turn cakes out onto racks and cool completely. (Can be made 1 day ahead. Store airtight at room temperature.)
  • Place 1 cake layer on platter. Spread 2/3 cup frosting over. Top with second cake layer. Spread 2/3 cup frosting over. Top with third cake layer. Cover top and sides of cake with remaining frosting. (Can be made 1 day ahead. Cover with cake dome and store at room temperature.)

This fruity orange frosting makes a deliciously decorative topping for Halloween Cupcakes (page 81) and other festive treats. Change it up and make your own lemon cream cheese frosting by substituting lemon zest for the orange zest and eliminating the food coloring.

Yield makes 1 1/4 cups

Number Of Ingredients 6

8 ounces cream cheese, at room temperature
1/2 cup butter (1 stick), at room temperature
1/4 cup agave nectar
1 tablespoon firmly packed orange zest
Red food coloring, made from vegetable dye
Yellow food coloring, made from vegetable dye

Steps:

  • In a deep bowl, whip the cream cheese, butter, and agave nectar until smooth using a handheld mixer. Add the orange zest and food coloring and mix until the desired orange hue is achieved, adding more food coloring as necessary.
  • Refrigerate for 30 minutes, until the frosting is slightly chilled and thickened so that it is easily spreadable.
  • Use immediately or store in a glass Mason jar in the refrigerator for up to 3 days.
