ORANGE COCONUT SNOWBALLS



Orange Coconut Snowballs image

Number Of Ingredients 7

1 12oz box vanilla wafer cookies (see notes)
1 1/4 cup pecans
2 cups coconut flakes (sweetened or unsweetened depending on your preference)
2 cups powdered sugar
3/4 cup orange juice concentrate, mostly thawed (about 6 oz)
1/2 tsp vanilla extract
1 stick unsalted butter, softened

Steps:

  • In a food processor, pulse the vanilla wafers into a very fine crumb. Transfer to a mixing bowl. Pulse the pecans into a fine crumb and add to the bowl with the wafers. Finally, pulse the coconut until coarsely chopped and transfer to a separate shallow dish.
  • Add the powdered sugar, orange juice concentrate, vanilla extract, and butter to the pecan and wafer crumbs. Using a hand mixer, mix until combined.
  • Use a small cookie scoop to scoop dough and use your hands to form balls. Roll each ball in the chopped coconut and then place onto a cookie sheet. Chill until firm and then transfer to a container. Store leftovers in the refrigerator.

1 cup of powdered sugar
3 cups of crushed vanilla wafers
1/4 cup of butter (softened)
1/2 cup of finely chopped pecans (can use any type of nuts)
3 ounces of orange juice concentrate (thawed)
coconut (optional)

Steps:

  • Mix all ingredients together and shape in to walnut size balls. Roll balls in additional powder sugar or coconut. Place in refrigerator to chill until firm. Makes 15-20 cookies.

Yield Makes 40 cookies

Number Of Ingredients 6

Sugar Cookie Dough
Vegetable oil cooking spray
1/2 cup shredded sweetened coconut
2 tablespoons confectioners' sugar
Zest of 1 orange
2 tablespoons orange juice

Steps:

  • Heat oven to 350°F. Cut dough in half; roll out both halves to an even 1/4-inch thickness. Cut out cookies with a 2-inch star cookie cutter; reroll scraps to get 40 cookies. Coat 2 cookie sheets with cooking spray; place cookies on sheets 1 inch apart and bake 1 batch at a time until firm and slightly golden at edges, 4 to 5 minutes. Cool on wire racks. Line baking sheet with foil; spread coconut on foil. Bake, stirring once or twice, until golden, 3 to 4 minutes. Spread coconut on sheet of wax paper; crush with fingers. Whisk sugar, zest and juice in a bowl until combined. Dip 1 side of cookie into orange glaze, then press into coconut; let set on wire racks.

1 16-ounce container dark chocolate fudge or milk chocolate frosting, preferably Duncan Hines Creamy Home-Style
2 3/4 cups confectioners' sugar, sifted
2 teaspoons pure orange extract, preferably McCormick
1 1/2 cups chocolatey sweetened rice cereal, preferably Kellogg's Cocoa Rice Krispies
2 cups sweetened flaked coconut, toasted, preferably Baker's

Steps:

  • Line cookie sheet with wax paper. Beat frosting and sifted confectioners' sugar in large bowl until well-blended. Beat in orange extract. Stir in rice cereal.
  • Using tablespoon or 1-ounce cookie scoop, shape mixture into balls and place on cookie sheet. Cover and refrigerate for 20 minutes, or until slightly firm. Roll balls in coconut to coat. Cover and refrigerate until ready to serve.
