ORANGE-CHOCOLATE ICE CAPP
I love my ice capps from the local coffee shop. They are a great pick me up with a bit of coffee along with some sweet. Like a milkshake. I took my love of orange chocolate and made my own frozen sweet coffee. Tried to make a bit more healthier by using frozen yogurt. But feel free and use any brand ice cream or gelato. This certainly would make a great dessert after a nice italian dinner. Or made into a cocktail.

Steps:
- In blender or bullet, add frozen yogurt, zest orange and add and juice add. (reserving 1/8 teaspoon zest for sugar rim) add coffee (i used leftover morning coffee) Blend together til smooth. May need more coffee depending on how thin or thick You want your drink.
- Pour in sugar orange zested rimmed glass. Add straw and garnish. ENJOY! Save zest to mix with sugar. Rub orange around glass top and dip in orange sugar. Also to make into cocktail add some orange vodka.
DARK CHOCOLATE ORANGE ICE CREAM

Steps:
- Whisk together the sugar, cream, milk, cocoa, cinnamon, salt, and orange zest in a medium size saucepan. Bring to a boil and then reduce to a simmer while stirring occasionally for 2 minutes.
- Add the chocolate chips and continue stirring while the chocolate melts. Remove from the heat and stir in the orange juice and vanilla extract. Let cool and then chill in the refrigerator for at least 4 hours.
- Pour the chilled mixture into your ice cream machine and churn according to the manufacturer's directions.
EASIEST ICE CAPS EVER
Better than any I've tried from restaurants because they won't separate. I like to keep ice cube trays in my freezer at all times just in case I need to satisfy a craving! My friends request them every time they're over! Serve with straws!

- Mix water and instant coffee together in a cup until dissolved; pour into ice cube trays. Freeze 8 hours to overnight.
- Blend coffee ice cubes, ice cream, and chocolate milk in a blender on medium speed for 1 minute. Increase speed to high and blend for 30 seconds more.

ORANGE SPICE ICED COFFEE
With two hits of orange (once in the syrup and then a few pinches of zest in the drink itself), it's decidedly orange flavored, yes - but not cloyingly so. It's just right. The spices - cinnamon, cloves, and nutmeg - lend warm fuzzy notes that help bring this all together in a swirl of creamy, caffeine-packed, entirely-too drinkable pure goodness.

- In a small saucepan over medium heat, stir together the sugar and water. Using a paring knife, peel two large (about 2 - 3 inches long) strips of peel from a fresh orange. Be careful to avoid the bitter pith (the white part) as much as possible. Add the orange peel, cinnamon stick, cloves, and nutmeg, to the sugar-water mixture and bring to a boil. Reduce heat and simmer for fifteen minutes, stirring occasionally. Remove from heat and allow to cool completely. Pour syrup over a sieve into a small bowl or jar and discard solids.
- Keeps refrigerated in an airtight container for up to two weeks.
- Fill a 12 ounce or larger glass with ice. Pour coffee concentrate and syrup over ice, stir in cream, if using. Top with orange zest and a dash of cinnamon. Serve with a straw.

- Whisk the yolks and 1/4 cup of the sugar until light and creamy, about 2 minutes. Set aside. Heat the cream, milk, remaining 1/2 cup of sugar, and salt in a medium pot and cook on medium heat for 2-3 minutes, until the sugar is dissolved and the milk is nearly simmering. Lower the heat and scoop a 1/2 cup of the milk mixture into the creamed yolks, whisking the entire time to combine. Scoop another 1/2 cup of milk into the yolks, whisking the entire time to combine. Pour the heated yolk mixture back into the pot, again whisking the entire time to combine. Then, using a spatula, slowly stir the custard mixture while it heats. The custard should thicken in 3-5 minutes. You will know it’s ready when it coats the back of a spoon and holds its shape when you draw your finger through it. Quickly remove from heat and stir in orange zest, lemon juice, and vanilla extract. Immediately pour into a bowl, and place bowl in the ice bath to cool the mixture.
- Once ice cream chills to a warm (not hot) temperature, cover with plastic wrap and allow to chill in the freezer for at least 3 hours, and up to overnight.*
- Once chilled, make chocolate chips. Melt the chocolate in a microwave-safe bowl in 30 second increments, stirring in between each heating. Pour onto a parchment-lined cookie tray and spread thinly with a spatula. Sprinkle with salt and place in freezer for 10-15 minutes. Finely chop the chocolate and set aside.
