2 boneless skinless chicken breast halves, cubed
1/4 teaspoon garlic salt
1/2 cup orange juice
2 tablespoons soy sauce
2 teaspoons cornstarch
1/4 teaspoon ground ginger
1 medium navel orange, peeled and sectioned
2 green onions, thinly sliced
Hot cooked rice
Chopped walnuts and red pepper flakes, optional

Steps:

  • Heat oil in a skillet or wok over medium heat; add chicken, sprinkle with garlic salt. Cook chicken until no longer pink, stirring occasionally, 3-5 minutes. , In a small bowl, combine the orange juice, soy sauce, cornstarch and ground ginger. Pour over chicken. Bring to a boil; cook and stir until thickened, 1 minute. Add orange segments; stir gently. Sprinkle with green onions. Serve with rice. If desired, garnish with chopped walnuts and red pepper flakes.

2 tablespoons fresh oregano, chopped
2 tablespoons sherry vinegar

Steps:

  • For the orange citrus glaze: Whisk together the orange juice, orange zest, honey, oregano, sherry vinegar, 2 large pinches of salt and a pinch of pepper. Slowly incorporate the canola oil to create an emulsion. Yield: about 1 cup
  • For the chicken: Preheat the oven to 400 degrees F. Line a baking sheet with foil and set a rack over the sheet.
  • Pat the chicken dry with a paper towel. Coat the chicken with the canola oil and generously sprinkle with salt and pepper. Place on the rack set over the baking sheet and roast in the oven until cooked through and the internal temperature is 165 degrees F, 40 to 50 minutes depending on the size of the chicken. In the last 10 minutes of cooking, brush the chicken with 2/3 cup of the orange citrus glaze in 5 minutes intervals. Let rest 5 to 10 minutes before serving. Reserve the remaining glaze for Roasted Asparagus with Orange Glaze.
  • For the asparagus: Whisk together the orange juice, orange zest, honey, oregano, sherry vinegar, 2 large pinches of salt and a pinch of pepper. Slowly incorporate the canola oil to create an emulsion. Yield: about 1 cup
  • For the asparagus: Place a rimmed baking sheet in the oven and preheat the oven to 400 degrees F.
  • Toss the asparagus with the olive oil in a large bowl and sprinkle with salt and pepper. Add the asparagus to the hot baking sheet and cook until tender, about 10 minutes.
  • Transfer the asparagus to a serving platter. Drizzle with 1/3 cup of the orange citrus glaze and sprinkle with some orange zest.

10-12 chicken drumsticks, bone-in and skin-on
salt and pepper
1 cup orange juice (freshly squeezed, or whatever you have)
3 tablespoons liquid honey
a squirt of sriracha (according to your tastes)
2 tablespoons hoisin sauce
2 tablespoons rice vinegar
4 tablespoons soy sauce
2 tablespoons cornstarch
2 teaspoons sesame oil
1 1/2 teaspoons freshly grated ginger
3 cloves garlic, finely minced
orange slices, sesame seeds, and fresh parsley for garnish (optional)

Steps:

  • Preheat your oven to 375 degrees Fahrenheit.
  • Heat a large oven-safe skillet over medium-high heat and add the olive oil.
  • Pat the chicken drumsticks dry with paper towels and season with salt and pepper.
  • Place the chicken drumsticks in the oiled pan and cook on all sides until golden brown. No need to worry about cooking the chicken through at this point - just get a good golden crust on it!
  • In a medium bowl, whisk together the orange juice, honey, sriracha, hoisin sauce, rice vinegar, soy sauce, cornstarch, sesame oil, ginger and garlic until well blended.
  • When the chicken has browned on all sides, pour the sauce over the chicken evenly to coat and turn off the heat under the pan.

Not only you can use this orange sauce to make orange chicken or a quick stir fry, you can even make roasted vegetables with it! {gluten-free, vegan}

1 tablespoon vegetable oil ((or grapeseed oil))
4 cloves garlic (, minced)
2 tablespoons ginger (, minced)
1/2 cup loosely packed dried tangerine peel ((or grated orange zest))
1 cup orange juice
3/4 cup rice vinegar ((or distilled white vinegar))
1/4 cup light soy sauce
1/4 cup Shaoxing wine
1/2 cup sugar
2 and 1/2 tablespoons cornstarch
1 teaspoon fine sea salt

Steps:

  • Add dried tangerine skin in a small bowl and add hot water to cover. Let soak for about 20 minutes, or until the tangerine skin softens. Drain and finely slice. Transfer 1/4 cup sliced tangerine skin into a bowl, and save the rest in a airtight container in the fridge for next time. If you do not use dried tangerine peel, grate about four fresh orange skins to make 1/2 cup orange zest.
  • Add the rest of the sauce ingredients and the rehydrated tangerine skin to a big bowl. Stir until the cornstarch is fully combined.
  • Heat oil in a saucepan until warm. Add garlic and minced ginger. Cook and stir until you smell a strong fragrance.
  • Stir to mix the sauce again to completely dissolve the cornstarch. Pour into the pan. Cook and stir until the sauce thickens, just enough to coat the back of a spoon.
  • Transfer the sauce into a bowl immediately, so it won't continue to cook in residual heat.
  • Transfer the sauce in a airtight jar or container once cooled down. Store in the fridge for 1 to 2 weeks, or in the freezer for 2 to 3 month.

Orange sauce:
2 large (organic oranges (you will need 1 teaspoon zest and 200 ml/ 6.7 fl. oz/ ¾ cup juice))
1 tablespoon icing sugar
3/4 cups chicken stock
1-2 tablespoons cognac (to taste (optional))
2 tablespoons cold butter (30 g/ 1 oz)
fine sea salt and black pepper
Pan-fried chicken:
2-4 chicken breasts (depending on size (See note))
2 tablespoons olive oil
some sweet paprika (or other spices of choice)
fine sea salt and black pepper

Steps:

  • Sauce: Start by making the sauce; it needs to cook a little longer than the chicken.
  • Oranges: Zest one orange; you will need about 1 teaspoon zest. Juice both oranges; you will need 200 ml/ ¾ cup orange juice.
  • Caramelize the icing sugar in a small saucepan. Add the orange juice and the chicken stock and stir to dissolve the sugar clumps.
  • Reduce: Add the orange zest, bring everything to a boil, and reduce this liquid to half. It will take about 10 to 15 minutes.
  • Sieve: Add salt, pepper, and 1 or 2 tablespoons cognac to taste (optional) and sieve the sauce through a fine-mesh sieve.
  • Add butter: Pour the sauce back into the saucepan. Cut the cold butter into small cubes and add the cubes to the sauce, one after another, while stirring all the time. The sauce needs to be served immediately.
  • Chicken: While the sauce is cooking, prepare the chicken breasts. If you have 2 large chicken breasts, slice them diagonally to obtain 2 thinner pieces.
  • Pound: Place the chicken breasts between 2 layers of plastic foil and pound them using a meat pounder. Make sure that the chicken pieces are evenly thick all over. Sprinkle with paprika, salt, and pepper on both sides. You can choose other spices if you wish.
  • Cook: Heat the olive oil in a large, cast iron pan. Cook the chicken, 3 minutes per side or until cooked through. Do not overcook!
  • Rest: Place on a warm plate, cover loosely with aluminum foil, and let rest for 5 to 10 minutes or until the sauce is ready.
  • Serve immediately with the orange sauce, rice, and veggies of choice.

  • Carefully place chicken on the hot baking sheet in an even layer and spray generously with cooking spray. Bake at 375 degrees for 10 minutes then move the baking sheet about 8" away from broiler and broil until crispy, watching closely so the chicken doesn't burn (about 2-4 minutes). Flip chicken pieces over and broil another 2-3 minutes, or until crispy.
