Steps:
- For the chicken: In a large bowl, whisk together the cornstarch and egg whites with a fork until almost frothy, about 1 minute. Add the chicken to the mixture and allow to sit for 5 to 10 minutes.
- For the sauce: Meanwhile, put the orange juice, soy sauce, sugar, vinegar, sesame oil, salt, crushed red pepper, garlic and ginger in a small nonstick skillet and whisk. Heat until bubbling and starting to thicken, about 5 minutes.
- Whisk together the cornstarch and 1/4 cup water in a small bowl and add 1 to 2 tablespoons of the cornstarch slurry to the sauce. Mix in and thicken for 1 minute.
- Heat about 2 inches of vegetable oil in a heavy-bottomed Dutch oven until a deep-fry thermometer inserted in the oil registers 350 degrees F. Carefully drop the chicken into the oil and move it around, flipping gently, until golden, 3 to 4 minutes. Let the pieces drain on a plate lined with paper towels for 2 to 3 minutes. Then drop them back into the oil for 1 minute to really solidify the coating.
- Toss the chicken in the sauce and serve.

ORANGE CHICKEN SUPPER
"We're an American military family stationed in Germany," writes Lynda Muller. "Since we're just as busy as stateside families, this meal really fits our lifestyle. Because it uses a rice mix, orange juice and other items I keep on hand, it's both satisfying and swift."

Steps:
- Preheat oven to 400°F.
- In a small bowl, whisk together honey, orange juice, orange zest, 1 T olive oil, ginger, garlic cloves, red pepper and sea salt (about 1/4 tsp or to taste) and pepper. Place chicken in a medium bowl. Season with salt, pepper and garlic powder as desired (I like garlic, can you tell??) Pour marinade over top and toss to evenly coat.
- Cut stems from broccoli and break into florets. Toss 2 tablespoons olive oil, dash of sea salt 1/2 tsp garlic powder and cracked pepper together so that broccoli is coated. This should double as oiling the sheet pan as well. Spread the broccoli out to the edges of the pan. Add the chicken to the center of the pan and pour remaining marinade over top. ** Short on time? Line the chicken straight onto the pan and pour the marinade right on top before popping in the oven.
- Place in oven and bake for about 20 minutes or until chicken reaches 165°F internal temperature. When you pull out the pan, some extra liquid may be on it. Blot it with a paper towel or pour it gently off the side.
- Serve with rice or as desired! I like to add an extra drizzle of honey and a garnish of red pepper when serving.
