2 pkg yeast
1/2 c warm water
2 c sugar
2 tsp salt
4 eggs
1 c sour cream
1 c butter, melted (2 sticks)
6 c flour
2 c coconut, toasted
4 Tbsp orange zest
ORANGE GLAZE
1 1/2 c sugar
1 c sour cream
4 Tbsp orange juice
1/2 c butter

Steps:

  • 1. Soften yeast in warm water in mixing bowl. Stir in 1/2 cup sugar, salt, eggs, sour cream and 12 T. butter into the yeast mixture. Gradually add flour to form a soft dough, beating well after each addition. Knead for a few minutes if using the mixer. Knead for 8 minutes if doing by hand. Cover and let rise in warm place until light and doubled, about 2 hours.
  • 2. Combine 1 1/2 cups sugar, 1 1/2 cups coconut and orange zest. Knead dough on well-floured surface about 15 times. Roll out half of dough to a 12-inch circle. Brush with 2-3 tablespoons melted butter. Sprinkle with half of sugar-coconut mixture. Cut into 12 wedges. Roll up, starting with wide end and rolling to point. Repeat with remaining dough. Place rolls, point side down, in 3 rows in a well-greased pan. Cover and let rise in warm place until light and doubled, about 1 hour. Bake at 350 degrees F for 25-30 minutes or until golden brown. Leave in pan. pour glaze over hot coffee cake. Sprinkle with 1/2 cup coconut. Serve warm or cold.
  • 3. GLAZE: Combine orange glaze ingredients in saucepan. Boil for 3 minutes, stirring occasionally.

1 ounce dry yeast
1/4 cup warm water
2 eggs, lightly beaten
1 cup sugar
1/2 cup sour cream (dairy)
1/2 cup butter, melted
1 teaspoon salt
2 3/4-3 1/4 cups all-purpose flour
1 cup flaked coconut
4 teaspoons orange zest
1/4 cup sugar
1/2 cup sour cream
1/4 cup orange juice
1/4 cup butter

Steps:

  • In bowl soften yeast in water.
  • Stir in eggs,JUST 1/4 cup sugar, the sour cream, and JUST 6 TBS.
  • butter, and salt.
  • Stir in 2 3/4 cups flour.
  • On floured surface knead enough flour in to make a moderately soft dough.
  • Knead til smooth and elastic, about five minutes.
  • Place in greased bowl, turn.
  • Cover and let rise in a warm place about 1/12 hours or until double.
  • Punch down Turn onto floured surface.
  • Divide in half.
  • Shape each half into a ball.
  • Cover and let rest ten minutes.
  • Roll each half into a 12 inch circle.
  • Brush each with 1 TBS of remaining butter.
  • Combine remaining sugar, JUST 3/4 cup of coconut,and the orange peel;sprinkle over dough.
  • Cut each circle into 12 triangles.
  • Roll up each piece starting at wide end.
  • Arrange rolls, like a pinwheel in two greased 9" round pans.
  • Cover;let rise again til double (30 mins) Bake in 350 oven for 25-30 minutes.
  • Immediately remove from pans and put on wire racks, with waxed paper under.
  • Glaze In saucepan combine sugar, the sour cream, orange juice, and butter.
  • Stir over medium heat until the sugar dissolves.
  • Boil 3 minutes stirring constantly.

1/4 cup butter, softened
3/4 cup sugar
2 large eggs
1 tablespoon orange juice
1 tablespoon grated orange zest
1-1/2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup whole milk
TOPPING:
1/2 cup sugar
1/2 teaspoons ground cinnamon
2 tablespoons butter, melted

Steps:

  • In a large bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Beat in orange juice and zest. Combine the flour, baking powder and salt; add to creamed mixture alternately with milk, beating well after each addition. , Pour into a greased 9-in. square baking dish. For topping, combine sugar and cinnamon; sprinkle over batter. Drizzle with butter. Bake at 375° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 10 inch round cake pan.

  • In a large bowl, mix the 2 cups flour, white sugar, baking powder, baking soda, and salt. In a separate bowl, mix the 1/2 cup melted butter, orange juice, orange zest, and eggs. Stir the melted butter mixture into the flour mixture until well blended. Transfer to the prepared cake pan. Sprinkle with the brown sugar mixture.

  • Prep: 30 minutes, plus cooling. Cook time: 1 hour 15 minutes. Preheat the oven to 180°C /160°C fan/gas mark 4. Grease the base and sides of a 23cm square cake tin and line with baking paper. Put the oil and sugar into a bowl and mix well. Add the eggs and whisk in well, then stir in the coffee mixture. Add the flour and baking powder and mix until you have a smooth batter. Pour the mixture into the prepared tin and bake for 50 minutes to 1 hour. The cake is ready when a skewer inserted comes out clean. Take the cake out of the oven and leave it to cool in the tin. Then, using the handle of a wooden spoon, poke holes evenly across the cake. You need 36 holes - about 4 holes per portion - this sounds very exact but we want an equal measure of pokes per person. However, be sure not to poke the holes all the way down to the base of the cake, or the curd may seep out. To make the curd, put the egg yolks, orange zest and juice, sugar, butter and cornflour into a pan and whisk it all together until combined. Pop on a low to medium heat, whisking all the time until the mixture thickens. It's ready when the curd coats the back of a spoon. Put the curd into a bowl and leave it to cool completely in the fridge. Once the cake has cooled, take it out of the tin and put it on a serving dish or cake stand. Put the cold curd into a piping bag and pipe it into the holes. When all the holes are filled, use the rest of the curd to cover the top of the cake
