Categories     Cooking with Beer

Time 17m

Number Of Ingredients 11

2 tsp cooking oil
1 medium onion, diced
12 oz ale or lager with a solid malty backbone*
1/4 cup brown sugar
3/4 cup organic ketchup (or tomato sauce)
1 tbsp apple cider vinegar
4 tbsp honey
1 tsp cumin
2 tsp garlic powder
1 tsp black pepper
coarse salt, to taste***

Steps:

  • Saute the diced onion in the 2 tsp of cooking oil in a saucepan (preferably a deeper one) over medium heat (about 4 mins).
  • Once the onion bits soften deglaze with a splash or two of the beer, once the vigorous foaming subsides, add the rest of the beer. Simmer until reduced by half.
  • Lower the heat to medium-low. Add the brown sugar, ketchup (or tomato sauce), apple cider vinegar, honey, cumin, garlic powder and black pepper and stir to mix well together. Simmer to reduce. Once the mixture has thickened to your liking, remove from the stove.
  • Use an immersion blender to blend the beer barbecue sauce to a smooth consistency or transfer to a food processor (be careful - either allow it to cool down or if still hot, work in batches).
  • Taste the finished sauce and season with salt as needed. Transfer to a container. The sauce will keep well refrigerated for up to 2 weeks.

Number Of Ingredients 24

3 pounds beef short ribs
1 teaspoon cayenne pepper
¼ cup firmly packed brown sugar
1 TableSpoon Pure Greek Sea Salt Click to buy in our online shop
½ teaspoon freshly cracked black pepper
1 medium sliced onion
5 cloves garlic, roughly chopped
1 serrano pepper, finely diced
1 teaspoon of ginger paste or fresh ginger
1 cup water
2 cups beef stock
1 cup Belgian beer (I use Shock Top)
2 limes, juiced
1 Tablespoon dry orange peel
2 Tablespoons of LIÁ Premium Extra Virgin Olive Oil Click to buy in our online shop
1 cup of orange juice
1/2 jar of the Smoky Orange BBQ Sauce
1 ½ cups peeled and seeded, diced cucumber
1 cup diced fresh orange
¼ cup finely diced red onion
¼ cup sliced scallions
1 serrano pepper, finely diced
juice of 1 lime
½ teaspoon Pure Greek Sea Salt Click to buy in our online shop

Steps:

  • Place the short ribs in a large freezer bag, and add lime juice and cayenne pepper. Let marinate in the refrigerator for 3 hours.
  • After 3 hours, heat a Dutch oven with olive oil and sear the short ribs, about 2 minutes per side. Work in batches to prevent steam and create a perfect seal, then move the pieces to a plate.
  • In the same Dutch oven, combine beef stock, beer, water, onion, garlic, Serrano pepper, ginger, brown sugar, salt, pepper, and orange juice and orange peels.
  • Heat on high until the mixture simmers. Remember to scrape the bits from the bottom of the pot.
  • Cook for 4 hours. When done, remove the meat from the liquid, and pull apart with two forks.
  • Combine all ingredients, mix well, cover and refrigerate.
  • Add about ¾ cup of the Smoky Orange BBQ Sauce to the meat, and mix well. Reheat the meat in a pot over medium heat if necessary.
  • Warm up some corn tortillas in a skillet lightly sprayed with olive oil
  • Add the BBQ Short Ribs, salsa, and more barbecue sauce, and top with the cucumber-orange salsa.
  • Serve with lime wedges, extra salsa, and BBQ sauce.

SPICY ORANGE BBQ SAUCE

Spicy Orange BBQ Sauce image

Tangy and sweet, this sauce is a great compliment for grilled chicken or ribs. The longer you let it simmer, the spicier it will taste. The trick to this sauce is to start with the basic ingredients and then gradually add more of your favorite spice until you reach YOUR desired taste. I like it spicy but you might prefer it sweet. Be careful with the orange zest because it will overwhelm the other flavors if you use to much.
