Steps:
- For the base: Position a rack in the middle of the oven and preheat to 350 degrees F. Put the butter, flour, cocoa, confectioners' and granulated sugars, chocolate and 1/4 teaspoon salt in a food processor. Process until the mixture is slightly damp and holds together when pinched, about 1 minute.
- Generously spray a 9- by 13-inch pan with cooking spray. Line the pan with aluminum foil leaving a 2-inch overhang on all four sides and spray the foil as well. Sprinkle the crust mixture into the prepared pan and press evenly along the bottom. Take care to seal up any cracks. Bake the base until it is no longer shiny and leaves only a slight indentation when pressed, 25 to 30 minutes. After removing the base, reduce the oven temperature to 300 degrees F.
- Meanwhile, make the orange filling: Whisk the eggs, egg yolks, granulated sugar, flour and pinch of salt together in a large liquid measuring cup or bowl until smooth. Whisk in the orange and lemon juices and zests. Pour the filling over the warm crust. Bake until the filling is just set, 35 to 40 minutes.
- Cool the bars in the pan completely on a rack. When cool, refrigerate for 2 hours or up to overnight. Lift the bars out of the pan by using the foil. Trim the edges and cut into 24 bars. Dust with confectioners' sugar and top with a strip of candied orange, if using, before serving.

CRANBERRY-ORANGE COOKIE BARS
The first time I tried these, a co-worker on a specialized team brought them in for breakfast. She got them from Starbucks® (a seasonal delight, I'm told). So, I checked them out after I got off from work and at over $2 per little "triangle" piece, I decided I'd learn to make them for a lot less. My family members all urged me to recreate these. So after a bit of research, I found that there's a few copycat recipes online; but this is my twist on that concept.

Spread the stiff batter into the prepared pan.

- Combine cranberries and orange zest for topping in a food processor and roughly chop. Sprinkle evenly over the frosted bars.

- Line a 9-inch square baker with two strips of criss-crossed parchment paper, cut to fit neatly against the base and up the sides. The parchment paper will make it easy for you to slice the bars later.
- In a medium skillet over medium heat, toast the pecans and pepitas, stirring often, until they are fragrant and the pepitas are starting to make little popping noises, about 5 minutes. Transfer the toasted pecans and pepitas to a food processor. Add the cranberries and then run the machine for about 10 seconds, until the nuts and cranberries are all broken up. (If you skip the food processor step, your bars will be more difficult to slice through and more likely to crumble at the edges.)
- In a mixing bowl, combine the contents of the food processor with the oats, orange zest, cinnamon and salt. Whisk to combine.
- In a smaller mixing bowl, whisk together the almond butter, honey and vanilla extract until well blended.

- To prepare dough, beat margarine at medium speed of a mixer until smooth. Add 1/4 cup sugar; beat 2 minutes. Add 1/4 cup honey, vanilla, and egg; beat until well-blended. Lightly spoon flour into dry measuring cups; level with a knife. Combine flour, baking powder, and salt in medium bowl. Add flour mixture to egg mixture, stirring just until moist. Divide the dough in half, and gently press each half of dough into a square on plastic wrap. Cover dough with additional plastic wrap; chill 8 hours.
- To prepare filling, place figs and orange rind in a food processor; process until minced. Combine boiling water, 2 tablespoons sugar, and 2 tablespoons honey, stirring until sugar dissolves. Stir in fresh orange juice. With processor on, slowly add orange juice mixture to fig mixture through food chute. Process until well-blended, scraping sides of bowl occasionally; set aside.
- Working with one portion of dough at a time (cover remaining dough to keep from drying), roll each portion to a 9-inch square on a heavily floured surface. Fit one portion of dough into a 9-inch square baking pan coated with cooking spray. Spread the fig mixture evenly over dough in pan. Place the remaining square of dough on top of the fig filling. Combine milk and egg yolk in a small bowl, stirring with a whisk. Brush milk mixture over top of dough.

- Preheat the oven to 350ºF. Line an 8x8-inch pan with foil with enough overhang on all sides for easy removal.
- In a medium bowl, combine the flour, sugar, and salt. Stir to combine. Using a pastry blender or a fork, cut in the butter until the mixture resembles coarse crumbs. Press the dough evenly into the bottom of the prepared pan. Bake for 15 to 20 minutes, or until lightly golden brown.
- Make the filling: While the crust cools, whisk the eggs, yolks, sugar, and salt together in a medium pot. Stir in the blood orange juice and zest. Cook over medium heat, stirring constantly, for about 10 minutes. The curd will thicken to the consistency of pudding. Stir the butter and cream into the smooth curd filling. If you want to deepen the color of the curd, add 2 drops of red and 1 drop of blue food coloring. Alternate colors and stir between each addition. Add more color if needed to achieve the desired hue. Strain the curd through a fine-mesh sieve set over a medium bowl. Pour the curd over the crust and spread evenly with a silicone spatula. Bake for 15 to 20 minutes, or until the filling is set.
- Cool in pan on a wire rack for 1 hour. Cover and refrigerate for at least 2 hours. Lift the bars out of the pan using the foil overhang. Cut into 16 squares.
