1 (12 ounce) package vanilla wafers
4 cups sifted confectioners' sugar
½ cup butter, softened
1 (6 ounce) can frozen orange juice concentrate, thawed
1 cup chopped pecans
1 cup flaked coconut

Steps:

  • Crush vanilla wafers to make fine crumbs. Add sugar, butter or margarine, and orange juice concentrate. Mix well.
  • Shape dough into 1 inch balls. Roll balls in pecans or coconut. Chill until firm.

1 pound dried apricots (3 cups)
1/2 medium unpeeled navel orange
1 cup sugar, divided

Steps:

  • In a food processor or grinder, coarsely chop apricots and orange. Add 2/3 cup sugar; mix well. Shape into 3/4-in. balls; roll in remaining sugar. Store in refrigerator.

8 ounces dried apricots, finely chopped
1 cup sweetened flaked coconut
1/4 cup sweetened condensed milk
additional coconut or finely chopped pecans, for rolling

Steps:

  • In a food processor chop apricots and coconut until thoroughly combined.
  • Add the 1/4 cup sweetened condensed milk; process until combined.
  • Pour the mixture into a dish; refrigerate until firm (about 30-45 minutes).
  • Place wax paper on a baking sheet; set aside.
  • Place additional coconut or finely chopped pecans in a shallow bowl.
  • Shape apricot mixture into balls (about 1-inch in diameter).
  • Roll in coconut; place on wax paper.
  • Refrigerate until firm.
  • Store in an airtight container in the refrigerator.

250 g Marie biscuits, crushed
3 tablespoons brandy

100 g pitted prunes
75 g dried apricots
45 g raisins
1/2 cup orange juice or 1/2 cup orange-flavored liqueur
2 teaspoons orange zest
125 g desiccated coconut
90 g almonds, chopped

Steps:

  • Place prunes, apricots and raisins in a bowl.
  • Pour over the orange juice or liqueur and mix to combine.
  • Set aside for 1 hour to macerate.
  • Place fruit mixture in a food processor and process to finely chop.
  • Transfer fruit mixture to a bowl.
  • Add the orange zest, 75 g of the coconut and almonds.
  • Combine well.
  • Form fruit mixture into small balls, adding a little more orange if necessary.
  • Roll balls in remaining coconut to coat.
  • Place on a plate line with plastic food wrap, cover and chill until firm.

No-bake orange balls are similar to bourbon balls with vanilla wafer crumbs. The orange juice concentrate gives them a burst of orange flavor.

12 ounces vanilla wafer cookies (finely crushed)
1 cup confectioners' sugar (plus more for coating)
1/4 cup butter (softened)
1/2 cup orange juice concentrate (thawed)
1/2 teaspoon vanilla extract
1 cup pecans (chopped)
1/2 sifted confectioners' sugar (or shredded coconut for coating)

Steps:

  • Combine the vanilla wafer cookie crumbs and 1 cup confectioners' sugar in a mixing bowl.
  • Add the butter to the crumb mixture and blend in well.
  • Stir in the thawed orange juice concentrate; add vanilla and nuts. Mix with your hands until all the ingredients are fully incorporated.
  • With your hands, shape the mixture into balls about the size of walnuts. Place the prepared balls in a food storage bag with the sifted confectioners' sugar or shredded coconut. Shake the balls around so that the sugar (or coconut) sticks to the balls. You may want to do just a few at a time to prevent overcrowding which could impact the shape of the balls.
  • Remove the balls from the bag and arrange the orange balls in single layer on waxed paper-lined cookie sheet. Store them uncovered overnight in the refrigerator for the best flavor.   • Place the apricots and cinnamon in a food processor. Process until the apricots turn into a smooth paste, about 2 min, taking breaks to scrape the edges of the processor. If you use a small food processor like mine, do it in 2 batches.
  • Make sure that the mixture can be pressed into balls by pressing the paste with a finger. If the paste ‘doesn’t come together’ add the honey or golden syrup and process again. If it’s still too dry add more honey, 1 tsp at a time, until you get the right texture.

  • Remove the apricot paste from the freezer. With slightly wet hands, form balls out of it (1 tbsp of paste per ball), about 3 cm (1 ⅕ in) in diameter. You might need to wash your hands from time to time as they will get sticky.
