ORANGE OATMEAL COOKIES
This is a wonderful cookie recipe for those who love oatmeal cookies and also orange-flavored cookies. They are chewy, not crispy, and are fairly quick-cooking!

Steps:
- In large bowl of mixer, cream butter and sugar until fluffy; beat in egg, orange zest and juice.
- Gradually beat in flour, baking powder, soda, salt and nutmeg until mixed.
- Add oats (I used quick-cooking oats, but I think that old-fashioned or rolled oats would improve the texture.).
- Drop by heaping teaspoonfuls on greased cookie sheets.
- Bake in 350° oven until golden around edges.

- 1. Heat oven to 375 degrees. Blend flour, sugar, baking powder, salt and nutmeg; add shortening, eggs, orange rind, and juice. Mix well.
- 2. Stir in oats.
- 3. Drop level tablespoonfuls of dough on greased baking sheet 2 inches apart. ***Bake 12 to 15 minutes for a crispy, crunchy light orange flavor cookie. *****Bake 10 to 11 minutes for soft, chewy and pop of orange flavor cookie.
- 4. Ready to eat....gotta pour a tall glass of cold milk first. :-)

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper.
- Beat butter, white sugar, and brown sugar with an electric mixer in a large bowl until smooth. Stir egg white and applesauce into butter mixture until just combined into a dough. Add orange juice with pulp and orange zest to the dough; stir.
- Mix flour, oats, walnuts, baking soda, cream of tartar, and cinnamon in a separate bowl; fold into the dough until evenly incorporated.
- Drop by heaping tablespoon onto prepared baking sheets.
- Bake in preheated oven until bottom of cookies are lightly browned, 10 to 12 minutes. Cool on baking sheets 2 to 3 minutes before moving to wire racks to cool completely.

Steps:
- Spread the rolled oats out on a cookie sheet and toast in a 350 degree oven for 10 minutes.
- Cool completely.
- Sift the flour, salt, soda and baking powder to- gether and set aside.
- Cream the Crisco in a large mixing bowl and grad- ually add in both of the sugars, creaming well after each addition.
- Blend in the egg, vanilla and orange rind, mixing well.
- Stir in the dry ingredients; then the toasted oats and the pecans, mixing well after each addition.
- Drop the cookie dough by teaspoonfuls onto lightly greased cookie sheets.
- Bake at 350 degrees for 10-12 minutes until golden brown.
- Cool on the cookie sheet for 1 minute, then remove the cookies to wire racks to finish cooling.
