ORANGE OATMEAL CHEWS
This was my boys' favorite cookie when they were growing up (still is come to think of it!!) These are really good and good for you too.

Steps:
- Spread the rolled oats out on a cookie sheet and toast in a 350 degree oven for 10 minutes.
- Cool completely.
- Sift the flour, salt, soda and baking powder to- gether and set aside.
- Cream the Crisco in a large mixing bowl and grad- ually add in both of the sugars, creaming well after each addition.
- Blend in the egg, vanilla and orange rind, mixing well.
- Stir in the dry ingredients; then the toasted oats and the pecans, mixing well after each addition.
- Drop the cookie dough by teaspoonfuls onto lightly greased cookie sheets.
- Bake at 350 degrees for 10-12 minutes until golden brown.
- Cool on the cookie sheet for 1 minute, then remove the cookies to wire racks to finish cooling.

Steps:
- Beat the butter, brown sugar, and white sugar with an electric mixer in a large bowl until smooth. Beat the first egg into the butter mixture until completely blended; beat the vanilla into the mixture with the last egg.
- Whisk the flour, baking soda, cinnamon, and salt together in a separate bowl. Beat the flour mixture into the butter mixture about 1/2 cup at a time. Fold the rolled oats and butterscotch chips into the resulting dough. If the dough isn't firm enough, mix in more rolled oats, about 1/4 cup at a time, until dough is of desired consistency.
- Refrigerate the dough for 1 to 2 hours before baking.
- Preheat oven to 350 degrees F (175 degrees C).
- Scoop up dough by heaping tablespoonful and roll into balls. Place cookies about 2 inches apart on baking sheets.
- Bake in the preheated oven until very lightly browned and cookies are set in the middle, 10 to 12 minutes. Allow cookies to cool for about 5 minutes before removing from baking sheets to finish cooling on wire rack.

- Heat oven to 350°F. Grease cookie sheets. In large bowl, combine brown sugar, shortening, orange juice, orange peel and eggs mix well. Add flour, baking soda and salt mix well. By hand, stir in oats, nuts and coconut. Drop by rounded teaspoonfuls 2 inches apart onto greased cookie sheets.Bake at 350°F. for 10 to 12 minutes or until light golden brown. CRANBERRY ORANGE COOKIES
A nice thing to have around during the holidays, but don't expect them to stay around long. These orange-flavored cranberry cookies are tart and delicious, not to mention beautiful. Not really a favorite of kids.

- Preheat the oven to 375 degrees F (190 degrees C).
- In a large bowl, cream together the butter, white sugar and brown sugar until smooth. Beat in the egg until well blended. Mix in 1 teaspoon orange zest and 2 tablespoons orange juice. Combine the flour, baking soda and salt; stir into the orange mixture. Mix in cranberries and if using, walnuts, until evenly distributed. Drop dough by rounded tablespoonfuls onto ungreased cookie sheets. Cookies should be spaced at least 2 inches apart.
- Bake for 12 to 14 minutes in the preheated oven, until the edges are golden. Remove from cookie sheets to cool on wire racks.
- In a small bowl, mix together 1/2 teaspoon orange zest, 3 tablespoons orange juice and confectioners' sugar until smooth. Spread over the tops of cooled cookies. Let stand until set.

- 1. Heat oven to 375 degrees. Blend flour, sugar, baking powder, salt and nutmeg; add shortening, eggs, orange rind, and juice. Mix well.

- Preheat oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper.
