SLICED FENNEL, ORANGE & ALMOND SALAD



Sliced fennel, orange & almond salad image

3 bulbs of fennel
1 handful of almonds
3 oranges
a few springs of fresh mint
2 handfuls of rocket
sherry vinegar
extra virgin olive oil

Steps:

  • Using a speed peeler, shave the fennel, then place in a bowl of ice water.
  • Toast the almonds in a dry frying pan, then crush in a pestle and mortar.
  • Peel and very thinly slice the oranges, then arrange on a platter.
  • Pick the mint leaves. Drain the fennel, spin, then mix with the mint, rocket, a splash of sherry vinegar and oil, and season well with sea salt and black pepper.
  • Scatter the fennel mixture over the oranges and top with toasted almonds.

3 medium oranges , segments and juice
1 small bunch mint , leaves chopped
4 tsp white wine vinegar
3 tbsp olive oil
2 x 250g packs halloumi cheese , drained
50g walnut pieces, toasted
145g rocket , watercress and spinach

Steps:

  • Heat a large griddle or frying pan over a high heat. In a large bowl, combine the orange segments and juice, mint leaves, vinegar and olive oil. Season, then gently toss together.
  • Slice each block of halloumi into 8-10 pieces, then griddle or fry for 1-2 mins on each side until charred and beginning to melt.
  • Add the walnuts and salad leaves to the orange and mint, then toss together. Top with the griddled halloumi slices and season with some black pepper.

1/2 garlic clove, halved
1/4 teaspoon salt
1/4 teaspoon dry mustard
2 tablespoons rice vinegar
1/4 cup olive oil
fresh ground pepper
1/4 cup chopped fresh mint leaves
1 large head lettuce, torn

Steps:

  • Grate the zest of one of the oranges, then juice the orange to make ¼ cup juice.
  • Peel and section the other two oranges and set aside for garnish.
  • In a salad bowl, rub garlic in salt and mustard. Add vinegar.
  • Whisk in olive oil and pepper to taste.
  • Remove garlic.
  • In salad bowl, toss together mint leaves, lettuce and reserved oranges. Sprinkle with grated orange zest.

2 large beets, washed but not peeled
2 tablespoons olive oil
coarse salt
fresh ground black pepper
1 teaspoon freshly squeezed orange juice
2 teaspoons balsamic vinegar
4 1/2 teaspoons extra-virgin olive oil
3 oranges, preferably navel, peeled and separated into segments (can sub blood oranges or tangerines)
1/4 cup coarsely chopped mint leaf
3 teaspoons minced shallots
1 cup french feta cheese (can sub blue cheese or goat cheese) or 1 cup Greek feta cheese, crumbled into large pieces (can sub blue cheese or goat cheese)

Steps:

  • Preheat the oven to 400°F.
  • In a bowl, toss the beets with the olive oil and season them with salt and pepper. Put the beets on a roasting pan and cover them with foil. Roast in the preheated oven until tender, about 1 1/2 hours. (They are done when a sharp, thin-bladed knife can easily pierce through to their center.) Remove the pan from the oven, remove the beets from the pan and set them aside to cool.
  • While the beets are roasting, make the vinaigrette: In a small bowl, whisk together the orange juice, balsamic vinegar and extra-virgin olive oil. Season to taste with salt and pepper. Set aside.
  • When the beets are cool enough to handle, peel and cut them into 1/2-inch dice. Put them in a bowl with 1 cup of the orange segments, the mint and the shallots. Add the vinaigrette, season with salt and pepper and toss gently.
  • Transfer the salad to a platter. Arrange the cheese and the remaining orange sections on top. Serve.

  • Cut the top and bottom off of each orange. Stand the orange on 1 end on a cutting board and, following the curve of the fruit, cut away the skin and pith of the orange. Cut each orange section out of its pith.

  • Peel then segment the oranges, removing the white pith. Place in a bowl along with any juices, then add the dates, chopped mint and rose syrup and toss gently. Divide between 4 dessert bowls, scatter on the mint leaves and serve.
