ORANGE AND BOURBON GLAZED SALMON



Orange and Bourbon Glazed Salmon image

Glazed with a combination of orange marmalade and bourbon whiskey, this easy, oven-roasted salmon makes a terrific weeknight dinner.

4 6-ounce salmon fillets, skin on
Salt and freshly ground black pepper
1/4 cup good quality orange marmalade
3 tablespoons bourbon or whiskey
1 tablespoon light brown sugar
Pinch of cayenne
1/2 tablespoon butter

Steps:

  • Preheat the oven to 425°F, line a shallow baking pan with aluminum foil and coat it with nonstick spray.
  • Arrange the salmon fillets, skin side down on the prepared baking sheet and season with salt and freshly ground black pepper.
  • Combine the orange marmalade, bourbon, brown sugar and cayenne in a small saucepan and bring to a boil. Reduce the heat to medium and cook, stirring frequently, until thickened to the consistency of maple syrup, 5 to 7 minutes. Remove from the heat, stir in the butter until melted and allow the mixture to cool.
  • Divide the glaze evenly over each of the salmon fillets and roast until the glaze is lightly caramelized and the fish is cooked to medium doneness, 8 to 10 minutes.
  • Remove from the oven and serve immediately.

1/4 cup Bourbon
1/4 cup fresh orange juice
1/4 cup low sodium soy sauce
1/4 cup packed brown sugar
1/4 cup chopped green onion
3 tablespoons chopped fresh chives
2 tablespoons fresh lemon juice
2 cloves garlic, chopped
4 (6 ounce) salmon fillets (about 1 "inch" thick)
cooking spray

Steps:

  • Combine first 8 ingredients in a large zip top bag, and add salmon to bag.
  • Seal and marinate in refrigerator for 1& 1/2 hours, turning bag occasionally.
  • Prepare grill or broiler.
  • Remove salmon fillets from bag, reserving marinade.
  • Place salmon on broiler pan coated with cooking spray.
  • Cook 6 minutes on each side or until fish flakes easily when tested with fork, basting frequently with reserved marinade.

This is a wonderful way to cook your salmon - Serve it with Stir-fried Broccoli with almond - mmmmm, so delicious!!

1/2 cup pulp-free orange juice
1/4 cup lightly packed brown sugar
1 small garlic clove, minced
1/2 tablespoon louisiana hot sauce
4 boneless salmon fillets, about 5 oz each
3/4 teaspoon salt
3/4 teaspoon pepper
1 green onion, thinly sliced

Steps:

  • Place oven rack in center of oven. Preheat broiler to high. In a small skillet over medium-high heat, stir together orange juice, brown sugar and garlic. Bring to a boil and cook until thickened and glossy, 4-5 minutes. Cool to room temperature; stir in sauce.
  • Arrange fish on a broiling pan on a rack over a rimmed baking sheet. Sprinkle with salt and pepper. Brush liberally with some of the sauce. Broil, basting twice with sauce, until fish flakes easily with a fork, 8-10 minutes. Garnish with green onions.

BOURBON - GLAZED SALMON

A great blend of flavors. I would suggest not adding the marinade to the skillet until the salmon has been turned for the final 4 minutes of cooking. The sauce tends to burn if it gets too hot or is cooked too long.

3 tablespoons Bourbon
2 tablespoons low sodium soy sauce
1 tablespoon grated peeled fresh ginger
1 tablespoon lime juice
3 garlic cloves, minced
1/4 teaspoon freshley ground black pepper
4 (6 ounce) skinless salmon fillets
cooking spray
1/4 cup thinly sliced green onion
1 tablespoon sesame seeds, toasted (optional)

Steps:

  • Combine first 7 ingredients in a large zip-top plastic bag. Add fish to bag, seal. Marinate in refrigerator 1 1/2 hours, turning occasionally.
  • Heat a large nonstick skillet over medium-high heat Coat pan with cooking spray. Add fish and marinade to pan (see my note at the top of the page under Description), cook fish for 4 minutes on each side until fish flakes easily when tested with a fork or until desired degree of doneness.
  • Place 1 fillet on each of 4 plates; drizzle each serving with about 2 t. sauce. Sprinkle each serving with 1 T. green onions. And if using, sprinkle with the toasted sesame seeds.
  • NOTE: I would consider doubling the sauce portion of the recipe. I did and was glad I did. Since there are just the two of us, I also put the remaining two uncooked pieces of salmon in the freezer and added half the marinade to the bag. I'll include an update when I cook the salmon. I'm not sure if freezing it in the marinade might not be too much for a delicate piece if fish. UPDATE: Worked great!

  • Add in the salmon fillets; seal bag tightly, and turn bag to coat evenly.
  • Place in the refrigerator for 2 hours.
  • Remove the fillets from the bag and reserve the marinade.
  • Place the fillets on a preheated outdoor grill (sprayed with cooking spray) or under the oven broiler.
  • Cook for about 6 minutes on each side, basting with reserved marinade until the fish flakes easily when tested with a fork.
  • Season with salt and pepper.

  • Heat 1 tablespoon of oil in a large pan or skillet on medium heat. Once hot, sear salmon filets for 3-4 minutes, flip and sear for 3-4 more minutes. If you prefer salmon more rare, sear for 2 minutes per side.
  • Turn the heat down to low and pour the sauce into the skillet. Let bubble and simmer until sauce thickens into a syrupy glaze, about 1 minute. Remove pan from the heat and spoon glaze over each salmon filet until fully coated. Zest with lemon and serve with lemon wedges over jasmine rice or with veggies.
