- In a large saucepan over medium heat, bring water to a boil. Add apples, oats and salt; cook and stir for 5 minutes. , Remove from the heat; stir in brown sugar, cinnamon and vanilla. Cover and let stand for 2 minutes. Sprinkle each serving with almonds. If desired, serve with syrup and milk.

- Preheat oven to 350°F.
- Whisk flour, baking powder, baking soda, and salt. Set aside.
- In a mixing bowl, cream butter, butter flavored shortening, sugar, and brown sugar. Add eggs and vanilla. Mix well. Add flour mixture and mix until everything is just blended. Make sure not to overmix.
- Add oats and raisins, stir w/ a wooden spoon.
- Drop by rounded teaspoonfuls on ungreased cookie sheets, 2 inches apart.
- Bake 10-13 minutes or until golden.
- Remove from oven. Let cookies sit on baking sheet for 2 minutes before transferring to a wire rack to cool.

- Preheat the oven to 375°F (190°C).
- In a large mixing bowl, beat together the sugar, butter, peanut butter, milk, vanilla and egg until smooth and creamy.
- Add the flour, oats and baking soda, beating until combined.
- Stir in the raisins and the breakfast cereal (the mixture will be stiff and hard to stir; just mix until everything sticks together fairly well).
- Now comes the fun part.
- Working with about 1/3 cup (75 mL) at a time, roll dough by hand into 2 inches (5 cm) diameter balls, and place on an ungreased cookie sheet.
- Make sure you pat the dough balls firmly so that they stick together, and leave at least 2 inches (5 cm) of space between them on the cookie sheet (they will expand).
- Lightly press down to flatten each ball to about 1 inches (2 cm) thickness.
- Bake for 13 to 15 minutes, or until lightly browned on the bottom.
- Let cool for 5 minutes before removing from the cookie sheet.

SO GOOD (FOR YOU) OATMEAL COOKIES!
Due to making a deal with my sister to not have any SUGAR, I was forced to recreate some of our favorite treats, using natural alternatives! I'm happy to say...I like these better than the REAL DEAL! They are packed full of "good stuff", so you can eat them, guilt free (for the most part). In fact, my kids say that it's just too hard to only eat one! :0) They come out moist and chewy. You could, also, easily turn these into a great oatmeal chocolate chip cookie! So, have fun experimenting, and let me know what you think!

Steps:
- Preheat oven to 350 degrees.
- Cream together butter and honey.
- Add applesauce, yogurt and vanilla. Mix until fully combined.
- Add eggs, one at a time, until they are fully incorporated.
- Add in flax meal.
- Add in whole wheat flour, oats, salt, baking soda and cinnamon. Mix until fully combined. ***Dough will seem a little runny.
- Add in raisins.
- Place spoonfuls onto a cookie sheet and bake for 10-12 minutes.
- Let cool, and enjoy!

These were given to me by a co-worker. She'd made them for a fundraiser and I asked her for the recipe. She added toffee bits to the cookies. Delicious!

- Position a rack in the center of the oven; preheat to 375°.
- Lightly grease several baking sheets or line them with parchment paper.
- In a small bowl, whisk together the flour, ground nuts, baking powder, and salt.
- In the bowl of an electric mixer set on medium speed, cream the butter, brown sugar, sugar, and vanilla until light and fluffy.
- Decrease mixer speed to low; add the eggs, one at a time, beating well and scraping the sides of the bowl after each addition.
- Gradually beat in the flour mixture.
- Stir in the chocolate.
- Refrigerate the dough for 10 minutes.
- Drop the dough by rounded tablespoonfuls onto the prepared baking sheets.
- Bake for 12 minutes, or until the cookies are golden brown.
