GOOEY S'MORES BARS

2/3 cup sugar
1/2 cup butter or margarine, softened
1/2 teaspoon vanilla
1 egg
2 1/3 cups graham cracker crumbs
1/3 cup Gold Medal™ all-purpose flour
1/8 teaspoon salt
1 bag (11.5 oz) milk chocolate chips (2 cups)
1 jar (7 oz) marshmallow creme
1 cup miniature marshmallows

Steps:

  • Heat oven to 350°F. Grease bottom and sides of 13x9-inch pan with shortening or cooking spray.
  • In large bowl, beat sugar, butter, vanilla and egg with electric mixer on medium speed, or mix with spoon, until light and fluffy. Stir in graham cracker crumbs, flour and salt. Reserve 2 cups graham cracker mixture. Press remaining mixture in pan for crust.
  • Sprinkle chocolate chips over crust; press slightly. Drop marshmallow creme by tablespoonfuls over chocolate chips. Wet back of tableware spoon and use to lightly spread marshmallow creme. Sprinkle with marshmallows. Sprinkle with reserved crumb mixture; press lightly.
  • Bake 17 to 22 minutes or until marshmallows are puffed and light golden brown. Cool at least 30 minutes. For bars, cut into 6 rows by 4 rows.

Unbelievably delicious, ooey-gooey tahini s'mores bars with layers of chocolate, graham crackers, and melty marshmallows in every bite. Kiddos and adults will love these easy dairy free tahini s'mores cookie bars as the perfect nostalgic dessert during the summer!

Wet ingredients:
2 eggs
1 cup coconut sugar or packed brown sugar
1/2 cup tahini
1/4 cup melted and cooled coconut oil (or sub melted butter or vegan butter)
2 teaspoons vanilla extract
Dry Ingredients:
1 cup packed fine blanched almond flour
½ cup crushed graham crackers (from about 3 graham crackers)
1/2 teaspoon baking soda
1/4 teaspoon salt
For the mix-ins:
1 cup chocolate chips or chocolate chunks, divided
1 ½ cups mini marshmallows, divided

Steps:

  • Preheat the oven to 350 degrees F. Line a 8x8 inch baking pan with parchment paper and spray with nonstick cooking spray to prevent sticking. Set aside.
  • In a large bowl, whisk together the eggs, coconut sugar, tahini, coconut oil and vanilla extract until smooth and VERY well combined.
  • Next add the dry ingredients: almond flour, graham cracker crumbs, baking soda and salt. Mix until a cookie dough consistency forms. Please note the batter will be pretty thick! Mix in ¾ cup of the chocolate chips and 1 cup of the marshmallows.
  • Add batter to the prepared pan and spread evenly. If you are having trouble spreading the batter, coat a rubber spatula with nonstick cooking spray and it should get easier to spread. Top with remaining ¼ cup chocolate chips and ½ cup mini marshmallows, slightly pressing them into the batter.
  • Bake for 18-25 minutes until the edges are just slightly golden brown. We want to slightly underbake these bars so they stay nice and gooey. Once they come out of the oven, be sure to wait at least 30 minutes before cutting into 16 bars.

1 box (16 oz) Betty Crocker™ Supreme original brownie mix
Water, vegetable oil and egg called for on brownie mix box
2 cups miniature marshmallows
8 graham cracker squares, broken into small pieces
2 bars (1.55 oz each) Hershey's milk chocolate candy, broken into 1-inch squares

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Grease bottom of 9-inch square pan with shortening or cooking spray. Make and bake brownies as directed on box. After removing pan from oven, set oven control to broil.
  • Immediately sprinkle marshmallows and graham crackers over warm brownies. Broil with top 4 to 5 inches from heat 30 to 60 seconds or until marshmallows are golden brown. (Watch carefully; marshmallows and graham crackers will brown quickly.) Sprinkle with candy. Cool on cooling rack, about 3 hours until chocolate is set. Cut into 4 rows by 4 rows.
