4 cups chicken stock
1 (28 ounce) can tomatoes, coarsely chopped
1 onion, finely chopped
1/2 teaspoon oregano
4 cups cannellini beans (rinsed if canned)
2 garlic cloves
1/2 cup fresh basil
2 teaspoons olive oil
salt and pepper
1 cup ditalini (or any small pasta)
basil leaves, for garnish

Steps:

  • In large saucepan, bring chicken stock to a boil over medium heat. Add tomatoes, onion and oregano and simmer about 10 minutes. Add beans and continue cooking until onion is tender, about another 10 minutes.
  • In blender or food processor, finely chop the garlic and basil. Add olive oil and process until combined. Using a slotted spoon, transfer half the beans and veggies to the basil mixture. Process until smooth, then stir puree back into the soup.
  • Cook pasta, reserving 1 cup of cooking water. Stir the pasta into the soup and season with salt and pepper. If the soup is too thick, thin out with the pasta cooking water.
  • Garnish with basil and serve.

1 tbsp olive oil (15 mL)
1 medium onion, chopped
1 clove garlic, minced
1 cup sliced mushrooms (250 mL)
1/2 cup chopped green or red pepper (125 mL)
4 cups vegetable broth (1 L)
2 tsp dried basil leaves 1(0 mL)
8 oz cheese-filled tortellini, fresh or frozen (250 g)
1 medium zucchini, quartered lengthwise and sliced
1 can (14 oz./398 mL) Beans in Tomato Sauce

Steps:

  • In large saucepan, heat oil over medium-high heat. Sauté onion, garlic, mushrooms and green pepper 3 minutes. Add vegetable broth and basil. Bring to boil; stir in tortellini and zucchini. Simmer uncovered, 8 minutes (for fresh) to 15 minutes (for frozen) until tortellini is tender. Stir in beans and heat through.

1/4 cup butter
1 large onion (Chopped )
1 garlic clove (Chopped )
4 medium potatoes (Cubed )
4 medium carrots (Chopped )
2 stalks celery (Chopped )
6 cups chicken stock
1 (28 ounce) can tomatoes (Chopped )
1 teaspoon salt
1/2 teaspoon pepper
1/2 bunch fresh basil (Chopped )
1 cup French style green bean
1 cup peas
2 (14 ounce) cans romano beans
2 (14 ounce) cans white kidney beans
1 cup pasta shells
2 tablespoons parsley (Chopped )
romano cheese (Grated)

Steps:

  • Saute onion in butter for 5 minutes.
  • Add garlic, potatoes, carrots, and celery.
  • Saute for 5 minutes.
  • Add stock, tomatoes, salt, pepper, and basil.
  • Boil, reduce heat and simmer for 10 minutes.
  • Add green beans, peas, both beans and pasta.
  • Simmer for 10 minutes.
  • Add parsley and serve sprinkled with cheese.

  • Place beans into a large bowl or pot and add 8 cups of water. Allow beans to soak for 6 to 8 hours. After soaking, drain and give the beans a quick rinse under cold water. Set aside.
  • In a large soup pot, heat olive oil over medium heat and add pancetta, onions and garlic. Cook until the pancetta is fully cooked, occasionally stirring, about 5 minutes.
  • Add the rinsed beans, water and vegetable broth. Cover and bring to a boil, then reduce heat and simmer (with a low boil) covered for 1 hour. Stir occasionally.
  • After 1 hour, add the tomatoes, chili powder, salt and fresh basil and stir to blend into the soup. Toss in one Parmesan rind. Cover and continue to simmer for additional 15 to 20 minutes. The soup should be thick and creamy. Turn off heat. Season with fresh cracked pepper to taste.
