Ono Pineapple Coconut Butter Mochi image

1/2 pound mochiko (glutinous rice floor)
1 1/4 cups white sugar
1/2 tsp baking powder
1/4 cup butter
1 1/2 cups whole milk
2 1/2 eggs
1/2 tsp vanilla extract
1/2 cup sweetened, flake coconut
1/2 cup crushed pineapple

Steps:

  • Preheat oven to 350 degrees F. Grease 4 1/2 x 7 1/2 inch baking dish.
  • In a small bowl, whisk together the eggs, vanilla and milk. In a separate larger bowl, stir together the rice flour, sugar, and baking powder. Pour the wet ingredients into the dry ingredients, and stir to blend. Mix in the melted butter, pineapple and coconut. Pour into the prepared pan.
  • Bake 1 hour in the preheated oven. Cool completely, then cut into eight pieces.

3 cups whole milk
5 eggs
1 teaspoon vanilla extract
1 cup sweetened, flaked coconut

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  • In a medium bowl, whisk together the eggs, vanilla and milk. In a separate larger bowl, stir together the rice flour, sugar, and baking powder. Pour the wet ingredients into the dry ingredients, and stir to blend. Mix in melted butter and coconut. Pour into the prepared pan.
  • Bake for 1 hour in the preheated oven. Cool completely, then cut into squares to serve.
