Number Of Ingredients 12

2 tablespoons canola oil
1 medium onion, chopped
1/4 cup tomato paste
2 garlic cloves, minced
2 teaspoons smoked paprika
1/2 teaspoon sugar
1/2 teaspoon crushed red pepper flakes
2 cans (14-1/2 ounces each) fire-roasted diced tomatoes, undrained
4 large eggs
1/4 cup shredded manchego or Monterey Jack cheese
2 tablespoons minced fresh parsley
1 tube (18 ounces) polenta, sliced and warmed, optional

Steps:

  • In a large skillet, heat oil over medium-high heat. Add onion; cook and stir 6-8 minutes or until tender. Stir in tomato paste, garlic, paprika, sugar and pepper flakes; cook 2 minutes longer., Stir in tomatoes; bring to a boil. Reduce heat to maintain a simmer. With the back of a spoon, make four wells in sauce. Break an egg into each well. Sprinkle with cheese; cook, covered, 8-10 minutes or until egg whites are completely set and yolks begin to thicken but are not hard. Sprinkle with parsley. If desired, serve with polenta.

5 tablespoons extra-virgin olive oil
2 1/2 cups Tomato Sauce, recipe follows
8 eggs
1 fresh mozzarella ball, grated
6 fresh basil leaves
Salt and freshly ground black pepper
1 (28-ounce) can peeled plum tomatoes, pureed
4 tablespoons extra-virgin olive oil
1 clove garlic, finely chopped
5 basil leaves, torn

Steps:

  • Heat olive oil in a saucepan and add the tomato sauce. Bring to a boil.
  • Carefully crack the eggs into the pan, allowing them to cook right in the sauce. Scatter mozzarella cheese on top. Simmer on low to medium heat with lid on for approximately

  • Remove lid and add your torn basil leaves at the very end. Salt and pepper to season and serve immediately.
  • To make Tomato Sauce:
  • Empty peeled plum tomatoes into a bowl and break them up with your hands or a spoon.
  • Heat olive oil in a saucepan and add the chopped garlic. Gently fry ingredients together.
  • Add the peeled plum tomatoes to the saucepan. Simmer on low to medium heat for 10 minutes.
  • Season the sauce with salt. Add the torn basil leaves at the very end.

Number Of Ingredients 16

1 grilled pork chop (leftover from Grilled Apple Brined Pork Chops), chopped, recipe follows
1/2 small onion, chopped
2 teaspoons minced garlic
1/2 cup chili sauce
1/2 cups shredded Cheddar
1/2 pound refrigerator pizza dough (leftover from Grilled Flat Bread), at room temperature, recipe follows
1 egg, lightly beaten with 1 tablespoon water
1 pound refrigerator pizza dough, room temperature
2 tablespoons reserved marinade from Garlic, Lemon, and Herb Rubbed Legs
2 cups apple juice
1 tablespoon coarsely ground black pepper
1/4 cup salt
1/4 cup light brown sugar
1 teaspoon red pepper flakes
5 rib end pork chops, about 1 1/2 pounds
1 tablespoon grill seasoning

Steps:

  • Preheat oven to 400 degrees F. Line a baking sheet with parchment paper.
  • In a medium bowl, combine pork, onion, garlic, chili sauce, and cheese. Mix together and set aside.
  • Divide the pizza dough into 4 pieces. Roll each piece into a round about 4 to 5 inches in diameter on a lightly floured surface. Divide filling mixture among the dough rounds. Brush perimeter of dough with egg wash and fold in half. Fold the edges up to seal and transfer to prepared baking sheet. Cut a small vent in each pocket and brush with egg wash. Bake in preheated oven for about 15 minutes or until golden brown.
  • Preheat grill or grill pan over medium heat.
  • Cut the dough in half and save 1 half for the round 2 recipes. On a lightly floured work surface roll the remaining half out into a rectangular shape about 1/4-inch thick.
  • Place the dough onto an oiled grilled grate. Brush the top with half of the reserved marinade. Grill for 4 minutes. Flip the bread and top with remaining marinade and grill for another 3 minutes.
  • Remove bread from the grill to a cutting board, cut into pieces and serve warm.
  • In a large pot over medium-high heat, add 1 cup of water, apple juice, pepper, salt, sugar and red pepper flakes. Bring to a simmer making sure to stir occasionally to dissolve the salt and sugar. Remove from heat and add to a large bowl with 2 cups of ice.
  • Once the brined has cooled add pork chops. Brine for at least 4 hours or up to 24 hours in the refrigerator.
  • Remove pork from brine, rinse with cold water and pat dry with paper towels.
  • Heat grill or grill pan over medium heat. Sprinkle 1 side of the pork chops with 1/2 the grill seasoning. Place chops on hot oiled grill, seasoned side down. Sprinkle the topside with remaining grill seasoning. Grill chops for 4 to 5 minutes per side. Let rest for 5 minutes before serving.

1 cup potatoes, reserved from Barcelona Potatoes recipe, chopped
Salt and fresh ground black pepper
1 tablespoon canola oil
2 plum tomatoes, diced
2 tablespoons chopped fresh basil leaves
1 tablespoon olive oil
Pinch salt and fresh ground black pepper

Steps:

  • In a large bowl beat together the eggs and the milk. Season with salt and pepper, to taste.
  • Preheat the oven to 350 degrees F.
  • In an 8-inch nonstick oven-proof skillet add the canola oil and heat over medium heat. Add the potatoes, and then the egg mixture. Reduce the heat to medium-low. Cook, undisturbed, until almost completely set (center will still be loose), about 3 minutes. Put the skillet in the oven until set and slightly puffed, about 5 to 8 minutes. Remove from the oven to a cutting board and let cool for 5 minutes. Cut into wedges and transfer to a serving platter.
  • Topping: In a small bowl, combine all of the ingredients and serve alongside the tortilla wedges.

Stir in the crushed tomatoes, reserved bloody Mary mix and season with salt and crushed red pepper. Let simmer 5 minutes and then add the basil.
  • Crack the 4 eggs into the tomato sauce, and cook until the whites are set and the yolks are still runny. Transfer some of the sauce into 2 shallow serving bowls. Add 2 eggs to each bowl and serve with toasted bread.
