Steps:
- Preheat the oven to 375 degrees.
- Coat the baking dish with 1 tsp of oil and place in the oven while it preheats.
- In a bowl, combine dry ingredients.
- Beat the egg separately and add to the dry mix.
- Add milk and whisk until thoroughly combined.
- Once the oven comes to temp, remove the baking dish, add the butter allowing it to bubble and melt.
- Once the butter is melted, slowly pour in the wet batter 1 tbsp at a time (simultaneously whisking and pouring). Continue to temp the batter by adding small amounts of butter until thoroughly combined and the batter is smooth. Reserve one tablespoon of butter in the baking dish.
- Pour batter into the baking dish and bake for 25 minutes until cornbread is cooked through to the center.
- Allow cornbread to cool while preparing the stuffing mixture.
- Mince onion, celery, tarragon and parsley. Set aside.
- Peel shrimp and deshell crab (or drain juice if using canned). Set aside.
- In a medium sauté pan on medium/high heat, sauté garlic, onion and celery in 1 tsp butter for 3-5 minutes.
- Season with salt and pepper and add fresh herbs sautéing an additional minute. Set aside and let cool.
- Once cornbread has cooled, begin breaking it apart into smaller pieces into a large mixing bowl. This will make about four cups of cornbread.
- Add in vegetables, herbs and one cup of dried stuffing mix and lightly stir.
- Add in mayo, cream of mushroom and celery and seasonings. Stir until combined.
- Slowly pour in the seafood stock 1/4 cup at a time, stirring until batter becomes slightly mushy. (Batter should need the entire cup of stock)
- Taste batter for flavor and adjust seasonings to your liking.
- Fold in crab and shrimp carefully and place in the baking dish, spreading out evenly.
- Sprinkle with paprika on top and bake at 375 degrees for 30-40 minutes uncovered.
- Remove from the oven and let stuffing rest for 15-20 minutes before serving.
- Place seafood stock ingredients in a large stock pot and fill with water just above ingredients.
- Bring ingredients to a boil, reduce heat and simmer for up to 30 minutes.
- Use a fine strainer to strain liquid from stock ingredients.
ONION/CELERY CORNBREAD
This is a pretty quick and easy side/bread that looks like it took a big effort to make. Might want to splash some flour on your face to look like you worked hard. This is the recipe I use to make my Mom's dressing. Recipe coming. It is also a very good Fall way to make cornbread. It's best made in an Iron Skillet but I have also...

Steps:
- 1. Preheat Oven to 375. Grease or oil an iron skillet or 9X13 glass casserole. Be sure and make it nice and oily. Place in oven for five minutes to heat thoroughly.
- 2. If you use a bag mix, use the amount of milk it calls for, For Jiffy, use the same. The reason for three eggs is to make it lighter. Pour out mixes into a regular bowl, add eggs and milk, stir until just blended. Add chopped onion and celery, stir until all large lumps disappear. Too much mixing "kills" the batter.
- 3. Pour Cornbread mixture into HOT dish. Place in Oven and cook for 25-30 minutes. Check with toothpick. When it comes out clean it's done. Remove, let cool 10 minutes before you cut. Cut into serving sizes. Goes great with my Cowboy Beans and is a great start to Chicken and Dressing.

Steps:
- To prepare cornbread: Preheat oven to 450°F. Heat a medium cast-iron skillet in the oven for 10 minutes. If using butter or bacon fat, add it to the pan to melt.
- Meanwhile, combine cornmeal, baking soda and salt in a medium bowl. Lightly beat egg in a large measuring cup and stir in buttermilk. Add the wet ingredients to the dry ingredients and stir to combine.
- Pour the melted butter (or bacon fat or 2 tablespoons oil) into the batter. Stir to combine, then pour the batter back into the hot skillet. Bake the cornbread until golden brown, 20 to 25 minutes. Let dry in the pan on a wire rack overnight before making dressing.
- To prepare dressing: Preheat oven to 350°F. Coat a 9-by-13-inch (or similar 3-quart) baking dish with cooking spray. Crumble the cornbread into a large bowl.
- Heat oil in a large skillet over medium heat. Add onion and celery and cook, stirring occasionally, until soft, 5 to 7 minutes. Add to the cornbread. Pour broth (or stock) over and add eggs, sage, thyme, pepper and salt. Stir well to combine. Transfer the dressing to the prepared baking dish.
- Bake until puffed and golden brown, 45 to 50 minutes. Let cool slightly before serving.
