FANTASTIC ONION RING BATTER
These are great homemade onion rings that are batter-fried rather than having a bread crumb coating. They are addictive, so be careful!

Steps:
- Soak onion rings in a bowl of ice water for 1 hour; drain and pat dry with paper towels.
- Whisk 1 cup plus 2 tablespoons flour, milk, egg, 2 tablespoons vegetable oil, and salt together in a bowl until smooth.
- Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
- Dip onion rings in the batter, working in batches, until evenly coated and arrange in 1 layer on a plate.
- Fry the battered onion rings, working in batches, until browned, about 5 minutes. Transfer fried onion rings to a paper towel-lined plate using a slotted spoon.

ONION STRINGS

- Begin by peeling the onions and slicing very thinly, use a mandoline slicer if you can. Separate the onion slices and place them in a shallow baking dish and pour the buttermilk over the top. Press the onions down so they're submerged as much as possible and let them soak on the counter for at least an hour. If necessary, stir them around a bit halfway through the soaking process.
- In a bowl, combine the flour, salt, black pepper and cayenne, and set aside.
- Pour 1 to 2 quarts canola oil in a pot or Dutch oven. Heat to 375 degrees F, or until a pinch of flour sizzles when sprinkled over the pot.
- Using tongs, remove a handful of onions from the buttermilk and immediately dunk into the flour mixture. Coat the onions in the flour mixture, and then tap them on the inside of the bowl to shake off the excess.
- Plunge the onions in the hot oil. With a spoon, fiddle with them a bit just to break them up, and watch them! They'll be ready to remove from the oil in no time flat.
- When they're golden brown (this should take just a minute or two), remove them from the oil and place on a paper towel-lined plate.
- Repeat with the remaining onion slices and serve immediately.
- Pile these on top of a juicy grilled hamburger - to die for!
OLD FASHIONED ONION RINGS

- Heat the oil in a deep-fryer to 365 degrees F (185 degrees C).
- Separate the onion slices into rings, and set aside. In a small bowl, stir together the flour, baking powder and salt.
- Dip the onion slices into the flour mixture until they are all coated; set aside. Whisk the egg and milk into the flour mixture using a fork. Dip the floured rings into the batter to coat, then place on a wire rack to drain until the batter stops dripping. The wire rack may be placed over a sheet of aluminum foil for easier clean up. Spread the bread crumbs out on a plate or shallow dish. Place rings one at a time into the crumbs, and scoop the crumbs up over the ring to coat. Give it a hard tap as you remove it from the crumbs. The coating should cling very well. Repeat with remaining rings.
- Deep fry the rings a few at a time for 2 to 3 minutes, or until golden brown. Remove to paper towels to drain. Season with seasoning salt, and serve.

ONION RINGS
These onion rings are extra crispy, prepared with a simple beer batter for that golden exterior, and come with an optional smoky ketchup for dipping!

- If preparing the optional smoky ketchup, begin by preparing that: in a small bowl, whisk all of those ingredients together until well blended; then, cover with plastic and chill for 20 minutes to allow flavors to meld together for extra zip.
- To prepare the onion rings: add the sliced onions into a large bowl, and pour the buttermilk over them just to cover; allow the rings to marinate in the buttermilk for about 20 minutes.
- While the rings marinate in the buttermilk, place a medium-large pot on the stove, and add enough vegetable oil to come about half-way up the sides of the pot (about 5-6 cups), and slowly bring the temperature of the oil up to 350-360° while you prepare the rest of the steps.
- Prepare your flour dredge by adding 1 cup of the flour, along with the cornmeal, salt, pepper, smoked paprika, granulated garlic and cayenne pepper into a large Ziplock bag.
- Once the rings have marinated, thoroughly drain them from the buttermilk allowing any excess to drip off, and add them into the Ziplock bag (work in a couple of batches if you need to), tossing them very well to coat them thoroughly; remove the rings from the flour dredge and place them in a single layer onto a wire rack or baking sheet to hold for a moment.
- To prepare your beer batter, add the remaining 1 cup of flour to medium-size bowl, and slowly pour the beer into it, whisking gently until the batter is smooth and about the consistency of pancake batter.
- To fry the rings, dip each ring into the beer batter allowing any excess to drip off, and carefully place into the hot oil; repeat with another few rings (you will work in batches), and allow the rings to fry for about 3-4 minutes, or until golden-brown.
- Remove the fried rings from the oil and drain them on paper towels or on a wire rack, and sprinkle a little salt and pepper over them while still hot; repeat the process with the remaining rings. (You can keep the rings very hot by placing the finished ones on a baking sheet and into a warm, 200° oven while you work on the batches, if you desire.)
- Serve the onion rings while hot with the smoky ketchup, or your favorite dipping sauce!

- Preheat oven to 450 degrees F (230 degrees C).
- Separate onion slices into individual rings.
- Whisk egg whites with milk in a bowl until thoroughly combined; season egg mixture with a pinch of cayenne pepper. Place panko crumbs into a separate bowl.
- Place onion rings into a large resealable plastic bag. Add flour, salt, and black pepper; seal bag and shake until rings are well coated with flour.

- Slice the onion into 1/4-inch rings and separate the rings from each other. Place the onions in a large bowl and cover with the buttermilk, then sprinkle with salt. Let marinate, refrigerated, at least 2 hours or up to overnight, if possible.
- In a food processor, pulse the chicharrons to a sandy consistency.
- Add the baking powder, 2 cups flour and a sprinkle of salt to a shallow dish. Add the eggs to another shallow dish and whisk to combine. Mix the smoked paprika and remaining 1 1/2 cups flour with the crushed chicharrons in a third shallow dish. Line a sheet tray with a wire rack.
- Toss a batch of the marinated onion slices in the flour mixture until they are well coated. Place the flour-coated onions into the egg and coat. Dip the rings into the chicharron mix to coat. Place on the wire rack and repeat with the remaining rings. Reserve, chilled and uncovered, at least 30 minutes or up to 1 hour in the refrigerator.
- Preheat the oven to 450 degrees F.
- For the sauce: Add the jalapenos and onions to a 14-inch cast-iron pan or sheet tray. Drizzle with 1/4 cup oil and sprinkle with salt and pepper. Roast until slightly charred, about 10 minutes.
- Meanwhile, in a nonreactive bowl, mix together the mayonnaise, sweetened condensed milk and smoked paprika until well combined. Transfer the roasted onions and jalapeno to a food processor and process until fully combined. Add this to the mayonnaise mixture and stir until fully combined. Adjust the seasoning as needed.
- Heat the remaining quart peanut oil in a wide-bottomed pot or fryer to 375 degrees F. Line a sheet tray with a wire rack.
- Fry the onion rings in batches, being careful not to overload, until golden brown and floating, 3 to 4 minutes. Drain on the wire rack-lined sheet tray and season with salt.
- Serve hot with the dipping sauce.

- In a large bowl, whisk together 1 1/2 cups of flour with the paprika, garlic powder, salt and pepper. Whisk in the beer until the mixture is well combined. Let the batter rest at room temperature for 10 minutes.
- While the batter rests, cut the tip off of the stem side of the onions then remove the peel. Slice the onions horizontally into 1/2-inch-thick rings and toss them with the remaining 1/2 cup of flour.
