This deliciously sweet and tangy homemade Poppy Seed Dressing goes just as well on a kale or spinach salad as it does with a strawberry salad. Perfect for spring and summer dining!

Number Of Ingredients 8

1/4 cup white wine vinegar (or champagne vinegar)
1/4 cup white sugar
1 small shallot
1 tablespoon poppy seeds
pinch of salt
2 teaspoons dijon mustard
2 teaspoons plain Greek yogurt or Mayonnaise
1/2 cup grapeseed oil

Steps:

  • In a small mason jar, combine the vinegar and sugar. Secure the lid and shake until the sugar is mostly dissolved.
  • Peel the shallot and then, using a microplane or the smallest holes on a box grater, grate the shallot directly into the vinegar and sugar mixture. Then, add the poppy seeds, salt, mustard, and yogurt. Secure the lid and shake until thoroughly mixed.
  • Pour in the grapeseed oil (or other neutral flavored oil), then secure the lid and shake until well combined.

4 cups fresh baby spinach
4 cups torn iceberg lettuce
1-1/2 cups sliced fresh mushrooms
1/2 pound bacon strips, cooked and crumbled
DRESSING:
1/4 cup red wine vinegar
1/4 cup chopped red onion
3 tablespoons sugar
3/4 teaspoon salt
1/4 teaspoon ground mustard
1/2 cup canola oil
1-1/2 teaspoons poppy seeds

Steps:

  • In a large bowl, combine spinach, lettuce, mushrooms and bacon. Place vinegar, onion, sugar, salt and mustard in blender. While processing, gradually add oil in a steady stream. Transfer to a bowl; stir in poppy seeds., Divide salad among 6 plates; drizzle with dressing.

1/3 cup white vinegar
1 teaspoon kosher salt
A few turns of freshly ground black pepper
3/4 cup sugar
1 teaspoon mustard powder
1 green onion, ends removed (both the "hairy" end and where the green part starts to get floppy)
1/2 cup neutral-flavored vegetable oil like peanut or canola (check for allergies before using peanut oil)
1 teaspoon poppy seeds

Steps:

  • In a blender, combine vinegar, salt, pepper, sugar, and dry mustard. While the blender is running, add the green onion. Continue running the blender and add the oil in a steady stream and is fully incorporated into the dressing.
  • Pour the dressing into a serving or storage container and whisk in poppy seeds. Serve over leafy greens.

1 teaspoon onion flakes
1/4 teaspoon kosher salt
1/2 cup grapeseed oil* (or other neutral oil like organic vegetable or canola)
1 tablespoon poppy seeds
Variation: 1 to 2 tablespoons mayonnaise or Greek yogurt, for creamy poppy seed dressing

Steps:

  • In a medium bowl, whisk together the granulated sugar, white vinegar, dry mustard, onion flakes, and kosher salt. (For the creamy variation, whisk in the mayonnaise here.)
  • Gradually whisk in the grapeseed oil about 1 tablespoon at a time until a creamy emulsion forms.

It's almost like a cross between vidalia onion dressing and regular poppy seed dressing. It's sweet, creamy, and tangy all in one! This recipe yields enough to fill a small-ish mason jar. Cook time is chill time.
