3 cups matzo farfel
2 onions, chopped
1 pound mushrooms, chopped
2 tablespoons vegetable oil
salt and pepper to taste
1 pinch garlic powder
1 teaspoon dried dill weed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8x12 inch baking dish.
  • Place farfel in a colander and pour boiling water over it.
  • In a large skillet, saute onions and mushrooms in vegetable oil. Stir in salt and pepper, garlic powder, and dill. Remove from heat and stir farfel into the skillet.
  • Bake at 350 degrees F (175 degrees C) for 1 hour.

5 tablespoons olive oil, vegetable oil or rendered chicken fat
1 large onion, sliced
10-12 ounces mushrooms, sliced
12 ounces thin egg noodles
4 large Eggs, beaten
Salt and freshly ground black pepper to taste

Steps:

  • Preparation 1 Preheat the oven to 375 degrees. Lightly grease a 9"x13" baking dish. Heat 2 tablespoons of the olive oil in a sauté pan over medium heat. Add the onion and mushrooms and cook for 3 minutes. Remove from the heat and set aside. Cook the noodles according to package directions, drain and place in a 2 large bowl. Add the remaining fat, cooked vegetables and eggs. Stir to mix ingredients well. Season to taste with salt and pepper. Place in the prepared baking dish. Sprinkle the top with paprika. Bake for about 35 minutes or until the top is crispy and brown. Makes 6-8 servings Special instructions This is what my grandma cooked so often I think she could make it in her sleep. It is crunchy on top, soft in the middle, savory and so wonderful with roasted chicken or braised meat. Pour the meat juices over the noodles.

3 lb potatoes ((about 6 medium), peeled)
2 tablespoons olive oil
1 large onion (, diced)
3/4 teaspoon salt (, or to taste)
black pepper, to taste
1 lb mushrooms (, sliced)
1/4 cup parsley leaves (, chopped)

Steps:

  • Prep all the ingredients. Prep the potatoes: Peel the potatoes and cut them into 2-3 inch pieces about the width of a French fry. Dice the onion. Clean and slice the mushrooms.
  • In a large skillet with a lid, heat the olive oil. Add the cut potatoes and diced onion. Cook over medium-high heat for about 3-5 minutes without disturbing, so that the bottom layer of potatoes get nice and crispy. Season with salt, stir and cover with a lid. Continue cooking for 5-8 more minutes, stirring every few minutes to prevent burning, and covering with a lid in between stirring.
  • Add the sliced mushrooms and stir. Cover with a lid, and cook for 5 minutes, stirring once or twice. The mushrooms will release some juice, this is fine. Remove the lid, and continue cooking for another 5 minutes stirring frequently, or until the potatoes are fully cooked and any liquid has evaporated. Stir in parsley and remove from heat.

A truly lovely, earthy kugel from Jayne Cohen's wonderful cookbook, "The Gefilte Variations."

1 ounce porcini mushroom, dried
4 tablespoons extra virgin olive oil (plus oil for the pan)
3 cups onions, thinly sliced
salt & freshly ground black pepper
2 teaspoons garlic, minced
4 lbs baking potatoes, peeled
4 large eggs, beaten

Steps:

  • Soak the mushrooms in two cups of hot water for one hour, until soft; strain through a sieve lined with paper towel or a coffee filter.
  • Reserve the soaking liquid.
  • Rinse the mushrooms, pat them dry and chop them coarsely.
  • Heat the 4 tablespoons of oil in a large, heavy skillet over medium heat.
  • Add the onions and saute, stirring, until lightly browned, about 15 minutes.
  • Transfer the onions to a bowl and season with salt and pepper.
  • In the same skillet, place the mushrooms, garlic and mushroom liquid.
  • Cook over high heat, stirring occasionally, until the liquid evaporates.
  • Season to taste with salt and pepper and remove from heat.
  • Preheat oven to 400°F.
  • Generously oil the bottom and sides of a heavy baking dish (a 13" x 9" lasagna pan for example) (an enamelled, cast iron pan works best).
  • Grate the potatoes, transfer to a colander, rinse well, drain, and then squeeze out as much liquid as possible with your hands.
  • Combine potatoes in a large bowl with the onions, eggs, and a generous sprinkling of salt and pepper.
  • Place the baking pan (empty) in the oven for a moment or two until the oil is just sizzling.
  • Remove the pan from the oven and layer half the potato mixture in the pan.
  • Spread the mushrooms over the potatoes, then add the remaining potato mixture, smoothing the top.
  • Drizzle a little olive oil on the top and bake the kugel about 50 minutes, until the top is golden and crisp.
  • Remove from the oven and let stand, until it reaches room temperature, at least 30 minutes.
  • Reheat 15 minutes at 350°F before serving.

5 large onions (chopped)
1/2 cup canola oil
4 eggs
3/4 cup water
1 1/2 cups flour
1 teaspoon baking powder
3 tablespoons onion soup mix
black pepper (to taste)
1 can mushrooms, (drained, optional)

Steps:

  • Preheat oven to 400 F (200 C).
  • Spray a 9x13 baking pan with non-stick cooking spray.
  • Chop onions.
  • Heat 1/4 cup oil in a large frying pan.
  • Saute onions until transparent. Set aside to cool.
  • In a large bowl, mix the rest of the oil with eggs and water.
  • Add cooled sauteed onions.
  • In a small bowl, mix flour with baking powder. Stir into the onion-egg mixture.
  • Spice with onion soup mix and pepper.
  • Add mushrooms, if desired.
  • Spoon mixture into the greased pan.
  • Bake, uncovered, at 400 F (200 C) for 45 to 60 minutes, or until golden on top. Baking times depends on the size of the pan used (smaller pans with thicker kugels require more baking time). Serving Suggestions: Serve warm as a side dish.

1 dash salt
3 tablespoons olive oil
2 medium onions, chopped
1/2 lb small mushroom, quartered
3/4 teaspoon salt
1/2 teaspoon pepper
1/4 cup chicken broth
2 large eggs, beaten
1/2 teaspoon paprika

Steps:

  • Place potatoes in a large pot and cover with salted water.
  • Bring to a boil, then cover and simmer for 35 minutes or until very tender.
  • Drain and cool slightly.
  • Preheat oven to 350°F
  • Heat oil in a large skillet.
  • Saute onions over medium heat approximately 7 minutes or until lightly browned.
  • Add mushrooms and saute until browned.
  • While onions and mushrooms are cooking, cut potatoes into large pieces and roughly mash.
  • Stir broth in with potatoes, then add beaten eggs.
  • Stir in 1/2 cup mushroom onion mixture, salt and pepper.
  • Spoon half of the potato mixture into a 8 x 8 square casserole dish sprayed with cooking spray.
  • Top with remaining mushroom onion mixture, then with remaining potato.
  • Smooth top of potatoes and sprinkle with paprika.
  • Bake uncovered for 50 minutes or until top is firm and light golden at edges.
