The most popular item on the Maid-Rite menu, these Loose Meat Sandwiches taste as good as the Iowa-famous diner classic. This easy ground beef recipe cooks in just 10 minutes!

1 pound ground beef ((85/15 recommended, see note 1))
1/4 cup water
1 tablespoon yellow mustard
1 teaspoon granulated sugar
1/2 cup onion (finely chopped, plus more for topping (see note 2))
Salt and freshly ground black pepper
4 hamburger buns (split, for serving)
Toppings (such as ketchup, mustard, mayonnaise, pickles, for serving)

Steps:

  • In a large skillet, combine beef, water, mustard, and sugar. Simmer over medium heat until the beef is cooked through, about 5 minutes, breaking up clumps of meat with a spoon.
  • Drain the fat if desired (I don't, and it is closer to the original recipe if you don't, but you can if you want). Stir in onion and season to taste with salt and pepper (I like 1 teaspoon salt and 1/2 teaspoon pepper).
  • Serve meat on buns with toppings on the side such as ketchup, mustard, mayonnaise, and pickles.

1/2 yellow onion
1/2 teaspoon kosher salt
1/4 teaspoon coarse ground black pepper
1 pound ground beef (, (85/15))
1 clove garlic (, minced)
2 tablespoons Worcestershire sauce
3 tablespoons yellow mustard
hamburger dill pickles
6 plain hamburger buns

Steps:

  • Add the vegetable oil, ground beef and onion to large skillet on medium high heat.
  • Break the meat apart and continue cooking until the onions are translucent, about 6-8 minutes.
  • Add salt, pepper, garlic, Worcestershire and mustard and stir well to combine.
  • Serve on hamburger bun topped with pickles.

2 pounds lean ground beef
1 teaspoon salt
½ teaspoon ground black pepper
1 ½ cups water
1 onion, chopped
24 slices dill pickle slices
4 ounces prepared mustard
8 hamburger buns

Steps:

  • In a large skillet over medium heat, cook the ground beef until brown. Drain. Return to pan with salt, pepper, and water to cover. Reduce heat to low and simmer, uncovered, until water is gone, 15 to 30 minutes.
  • Serve meat on buns topped with chopped onion, dill pickle slices and mustard.

¼ cup minced onion
3 tablespoons Worcestershire sauce
4 cups beef broth
1 teaspoon salt
1 teaspoon ground black pepper
2 teaspoons butter
12 hamburger buns, split

Steps:

  • Crumble the ground beef and onion into a large skillet over medium-high heat. Cook, stirring to break up lumps, until no longer pink. Drain off the grease and return to the stove. Add the Worcestershire sauce, beef broth, salt, pepper, and butter. Bring to a boil, then set the heat to low and simmer uncovered until the liquid is almost completely gone, about 40 minutes. Remove from the heat, cover, and let rest for 15 minutes before serving on buns.

It's been an Iowa tradition since 1926. Although the sandwich is not much more than a traditional hamburger with the ground beef arranged uncompressed on the bun, the product has a huge cult following. And since the meat is loose, the sandwich is served with a spoon for scooping up the ground beef that will inevitably fall out. The Recipe isn't so much about ingredients as it is about technique. You want to be sure to chop the ground beef thoroughly as it cooks so that you get tiny rice-size pieces. Then when you build your sandwich, you firmly press the beef into a 1/2-cup measuring cup. Dump the meat onto the bottom of plain hamburger bun; add your choice of mustard, onions, and pickles; ready a spoon, and dig in.

1.5 cans condensed French onion soup 10.5 oz
16 hamburger buns split
1 can beef consomme 10 3/4 ounce

1 tablespoon vegetable oil, 1 turn of the pan
1 1/4 pounds ground sirloin
1 cup chicken stock, eyeball it, 1/2 a 14-ounce can or box
1 teaspoon sweet paprika
1 teaspoon Worcestershire sauce
Salt and pepper
4 burger buns, spilt, or kaiser rolls, split
1/2 yellow skinned onion, finely chopped

Steps:

  • Heat a medium skillet over medium high heat. Add oil and meat to the pan and brown the meat, breaking it up with the back of a wooden spoon as it cooks. Add chicken stock to the meat. Season the meat with paprika, Worcestershire, salt and pepper. When the liquid comes to a bubble, reduce heat to simmer. Cook meat 15 minutes, stirring occasionally.
  • Pile meat into buns or rolls and top with raw finely chopped onions.

bread and butter pickles

Steps:

  • In a large Dutch oven or skillet, brown beef with onion. Drain if necessary and season with salt and pepper. In a small bowl whisk together ketchup, mustard, brown sugar, Worcestershire, garlic powder and paprika. Add to beef mixture and stir well. Add beef consomme. Stir well. Bring to a boil.
