MOZZARELLA, BASIL & ZUCCHINI FRITTATA

Mozzarella, Basil & Zucchini Frittata image

This vegetable-studded frittata recipe is one of the quickest meals you can make. Make it for breakfast, or serve for lunch or dinner with a tossed salad and a slice of olive oil-drizzled crusty baguette.

Categories     Healthy Frittata Recipes

Time 20m

Number Of Ingredients 9

2 tablespoons extra-virgin olive oil
1 ½ cups thinly sliced red onion
1 ½ cups chopped zucchini
7 large eggs, beaten
½ teaspoon salt
¼ teaspoon freshly ground pepper
⅔ cup pearl-size or baby fresh mozzarella balls (about 4 ounces)
3 tablespoons chopped soft sun-dried tomatoes
¼ cup thinly sliced fresh basil

Steps:

  • Position rack in upper third of oven; preheat broiler.
  • Heat oil in a large broiler-safe nonstick or cast-iron skillet over medium-high heat. Add onion and zucchini and cook, stirring frequently, until soft, 3 to 5 minutes.
  • Meanwhile, whisk eggs, salt and pepper in a bowl. Pour the eggs over the vegetables in the pan. Cook, lifting the edges to allow uncooked egg from the middle to flow underneath, until nearly set, about 2 minutes. Arrange mozzarella and sun-dried tomatoes on top and place the skillet under the broiler until the eggs are slightly browned, 1 1/2 to 2 minutes. Let stand for 3 minutes. Top with basil.
  • To release the frittata from the pan, run a spatula around the edge, then underneath, until you can slide or lift it out onto a cutting board or serving plate. Cut into 4 slices and serve.

Time 35m

Yield 4 serving(s)

Number Of Ingredients 8

1 cup thinly sliced onion
1 teaspoon olive oil, for sauteing
1 medium tomatoes, diced
salt and pepper
1/4 cup fresh basil, chopped (1 tsp dried)
4 tablespoons parmesan cheese
4 eggs
1 tablespoon water

Steps:

  • In a small nonstick skillet (I use 8-inch), over medium heat, sauté the onions until translucent.
  • Add the tomatoes, salt and pepper and cook, stirring occasionally for 5 minutes.
  • Add basil and cook 2 more minutes.
  • Place in a bowl and let cool slightly.
  • Clean out the pan and spray with nonstick spray.
  • Beat the eggs the water and 3 tablespoons Parmesan until a little foamy and pour into the nonstick skillet.
  • Pour the veggie mixture into the eggs and mix it up a bit.
  • Cook over low heat, without stirring, about 10-15 minutes until the eggs are set- it will still be a bit runny on top.
  • While eggs are cooking, heat up your broiler and after eggs have set, sprinkle remaining Parmesan over the top and broil until bubbly and lightly brown.
  • Great for weekend brunch!
  • This serves 2 hungry folk or 4 not so hungry folk.

ONION, GARLIC AND BASIL FRITTATA

Onion, Garlic and Basil Frittata image

Onions and garlic are slowly pan-cooked until caramelised and then used as the base of a delicious frittata. Adapted from a recipe on the Simply Great Recipes website. Obviously you can use your own pesto recipe or a pesto from your favourite deli in place of the commercially available one. I left the Leggo's pesto named in the original recipe in this recipe, as that makes for a quicker version when time is limited. For the best results from this simple dish, use free range eggs.
