This tangy, sweet brisket recipe makes a wonderful main dish, or a fabulous appetizer when paired with crackers or bread rounds. It's been a favorite with my husband's family for years. This recipe can also be prepared in a slow cooker.

1 (3 pound) beef brisket
1 cup Catalina salad dressing
1 (1 ounce) envelope dry onion soup mix
1 (12 ounce) package fresh cranberries

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place brisket in 9x13 inch pan.
  • In a medium bowl, combine dressing, soup mix, and cranberries. Pour over brisket, and cover pan with foil.
  • Cook for 3 to 4 hours, or until brisket is extremely tender. Brisket will get very dark/caramelized; this adds flavor, and doesn't mean that you have overcooked it.

"My mother-in-law gave me the recipe for this tender brisket," relates Annette Bartle of Lees Summit, Missouri. It yields a lot, so the leftover beef can be used in the two comforting recipes that follow.

2 tablespoons canola oil
1 fresh beef brisket (4 to 5 pounds)
1 can (14 ounces) whole-berry cranberry sauce
1/2 cup beef broth
1/2 cup red wine or additional beef broth
1 envelope onion soup mix

Steps:

  • Preheat oven to 350°. In a large skillet, heat oil over medium heat. Brown brisket on both sides. Transfer to a greased roasting pan. Combine remaining ingredients; pour over beef., Roast, covered, until meat is tender, 3-4 hours. Cut diagonally across the grain into thin slices. If desired, strain cooking juices and serve with brisket.

I've shared this recipe with many friends and co-workers. The flavor is fantastic. You'd never know the main sauce ingredient is cranberry. Being from New England, I love cranberries. Not everyone does. If your family thinks they don't like cranberries use the jellied the first time so there are no tell-tale berries. The brisket comes out so tender. Add some baby carrots along with the roast; they are so sweet. The gravy it makes is fabulous on mashed potatoes. It couldn't be easier. A guaranteed winner.

1 (4 lb) beef brisket
1 -2 tablespoon garlic powder
1 (15 ounce) can whole berry cranberry sauce (or jellied)
1 (1 1/4 ounce) envelope dry onion soup mix
2 cups water

Steps:

  • To make in oven: Put brisket in roasting pan. Sprinkle generously with garlic powder. Sprinkle with dry onion soup. Mash up jellied cranberry sauce and spread over brisket. Pour 1 can (about 2 cups) water over all. Cover pan with foil sealing tightly and bake at 350° for about 3 hours.
  • To make in crockpot: Put brisket in crockpot. Sprinkle generously with garlic powder; add dry onion soup. Mash up cranberry sauce and spread over brisket; pour ¼ cup water into pot. Cover and cook on HIGH for about 3 - 4 hours (or on LOW for 6 - 8 hours). Serve with mashed potatoes.
  • To thicken the gravy: About 20 minutes prior to serving remove drippings from crock. De-fat. In a small saucepan, warm drippings on medium heat. Combine ½ tbsp of cornstarch and 2 tbsp of cold water in a small bowl. Stir until there are no lumps. Add cornstarch slurry to saucepan stirring constantly to avoid lumps. When it comes to a boil add a dash of black pepper and stir about a minute. Remove from heat and serve over brisket.

This is one of my personal favorites. Love cranberry and don't see why it should only be served with poultry.

Number Of Ingredients 8

1 brisket, 4 lbs or whatever will fit in your crockpot
garlic salt and cayenne pepper
4-6 tsp beef bouillon granules or 4-6 cubes
3 Tbsp dried minced onion
1 tsp onion powder
1 jar(s) organic whole berry cranberry sauce
1/2 c water
1 large onion, quartered

Steps:

  • 1. Trim brisket of any visible fat, pierce all over with a fork, sprinkle generously with garlic salt and cayenne pepper. Brown meat on all sides in about 1 TBS olive oil if needed. There was still enough fat left on mine that I just browned it fat side down first without any added oil. At this point you have two choices crockpot or Dutch oven.
  • 2. Tuck 2 quarters of the onion under the brisket, put the other two on top.
  • 3. In a small bowl, mix the the bouillon, dried minced onion, onion powder, cranberry sauce and water. Pour it over the brisket and kind of spread it around. EIther bake in a 350 oven for 3 to 3 1/2 hours or until tender. If it looks like the liquid is getting too low, pour in a little more water. You can also baste the brisket with the gravy.
  • 4. OR turn the crockpot on low for 5-6 hours or high for 3-4 hours or some combination thereof until the meat is tender and you can't resist the aroma any longer. I removed the meat from the crockpot, sliced it, and then spooned out some juice to use to dip the meat in.

4-6 pound beef brisket
2 cans whole cranberry sauce
2 envelopes lipton onion soup mix

Steps:

  • Mix together cranberry sauce and onion soup mix. Wrap the brisket in heavy duty aluminum foil. Pour cranberry mixture over top. Bake brisket (fully wrapped in foil) for 3 hours at 350 degrees. Put in a dish because some juice will spill out. Cool and then refrigerate overnight. Slice cold meat crosswise with a sharp knife, then place meat and sauce back in pyrex cover with foil and reheat.

Heat the oil over medium-high heat in a heavy flameproof roasting pan or ovenproof enameled cast-iron pot just large enough to hold the brisket and carrots snugly. Add the brisket to the pan and sear on both sides until crusty brown areas appear on the surface, 5 to 7 minutes per side.
  • Transfer the brisket to a platter, then add the onions to the pot and stir constantly with a wooden spoon, scraping up any browned bits stuck to the bottom of the pot. Cook until the onions are softened and golden brown, about 15 minutes. (If browned bits stick to the bottom of the pan and start to burn, add a few tablespoons of water and scrape with a wooden spoon to release them.)
  • Turn off the heat and place the brisket, fatty side up, and any accumulated juices on top of the onions. Spread the tomato paste evenly over the brisket, then scatter the garlic and carrots around the edges of the pot. Cover the pot very tightly with aluminum foil (preferably heavy-duty or two layers) or a lid, then transfer to the oven and cook for 1-1/2 hours.

  • Preheat oven to 325°F. Uncover brisket, and discard any fat that has solidified on surface of brisket and pan drippings. Scrape off cranberry sauce, place in a bowl, and set aside. Transfer brisket to a carving board, and slice against the grain. Arrange brisket slices in an ovenproof serving dish, and spoon reserved cranberry sauce over top. Cover and bake in preheated oven until heated through, 45 minutes to 1 hour.
