ROMERTOPF CLAY POT ROAST CHICKEN

Romertopf Roast Chicken has the right seasonings to make it very moist. A Romertopf chicken baker makes one of the best clay pot chicken dishes.

1 5 lb whole chicken
1 rib celery (cut into 2-3 pieces)
1/2 large red onion (cut into half)
1/2 lemon (cut in two)
4 tbsp butter (room temperature)
sprigs fresh thyme
sprigs fresh parsley
sprigs fresh rosemary
2 cloves garlic (minced)
1/2 cup white wine
1/2 cup chicken broth
Romertopf Roaster (optional)

Steps:

  • If using Romertopf clay pot soak for at least 20 minutes, I usually soak it longer, about 1 hour.
  • Only if using a regular roaster pan Preheat oven to 400 degrees. (Remember always place a Romertopf roaster in a cold oven then bring to temperature.)
  • Using a fork mix the butter with one minced garlic clove and 1 tablespoon of each of the herbs that you choose to use. ( I used all three) to make herb butter.
  • Wash chicken and dry thoroughly.
  • Gently ease up the breast skin of the chicken and spread the herb butter between the skin and the meat of the breast being careful not to pierce the skin. Also gently lift the skin of the drumsticks and spread butter under them.
  • Place the lemon, celery, and onion in the chicken and any herbs that you choose.
  • Season the outside of the chicken with salt and pepper.
  • Tie legs together with kitchen twine
  • Place chicken in roaster and pour the wine and chicken broth over the chicken. Cover with lid.
  • (A) If using a clay pot Romertopf roaster place in a cold oven and set the oven temperature to 400° F . Bake for 2 hours covered until done.(B) If using regular Stoneware roaster bake for 65-70 minutes
  • 11. Remove the lid and cook for 10-15 minutes longer until chicken is golden brown and thermometer registers 165° F and juices run clear.

1 (3-pound) frying chicken, giblets removed and reserved
1 tablespoon olive oil
12 small onions, peeled
3 garlic cloves, peeled
6 sprigs parsley, plus extra for garnish
1/4 pound prosciutto, small dice
2 whole bay leaves
3 large tomatoes, peeled, seeded and chopped
1/2 cup dry white wine
1/3 cup tawny or ruby Port
2 tablespoons brandy
1 tablespoon Dijon mustard
Freshly ground pepper

Steps:

  • Preheat an oven to 350 degrees F. Rub the chicken all over with the oil, and loosely stuff the cavity with 3 onions, 1 garlic clove and 1 sprig of parsley. Set aside. On the bottom of a 3-quart terra-cotta jug or deep heavy casserole, spread half the prosciutto, 2 sprigs parsley, 4 onions, 1 garlic clove, 1 bay leaf and all of the giblets. Place the chicken head-first in the pot, or breast-side up in a casserole. Scatter the remaining onions, garlic, 3 sprigs parsley, prosciutto and bay leaf around and on top of the chicken. In a small bowl, combine the tomatoes, wine, Port, brandy, mustard, and pepper, and pour over the chicken. Cover the pot or casserole and bake for 1 1/2-2 hours, or until chicken is cooked through.
  • Remove pot from the oven, and carefully remove the onions and reserve. Drain the liquid from the pot into a large skillet. Lift out the chicken and transfer to a roasting pan fitted with a rack.
  • Use a slotted spoon to lift out the giblets from the pot, along with any remaining whole onions and add them to the reserved onions.
  • Set the skillet of liquid over high heat, bring to a boil, reduce to a simmer and cook for 10 minutes, or until liquid is reduced by half, stirring often. Preheat a broiler. Place the chicken under the broiler for 3 to 4 minutes, or until browned. To serve, cut the chicken into pieces and arrange on a large platter. Scatter the onions and giblets around the chicken, and spoon some of the warm sauce over the top. Garnish with parsley sprigs and pass extra sauce.

CHICKEN WITH 40 CLOVES OF GARLIC IN A CLAY POT

I found this recipe in Consumer Guide to Clay Cookery. Though it sounds like a lot of garlic - the peeled cloves cook into sweet, mellow nuggets of flavor - great to spread on crusty french bread. The chicken cooks up moist and tender. This recipe is cooked in a clay pot that must be soaked in cold water for 15 minutes and is placed in a cold oven to start.

1 tablespoon olive oil
40 cloves garlic, whole,peeled
1/4 teaspoon dried rosemary leaves
1/4 teaspoon dried thyme leaves
1/8 teaspoon crumbled sage leaf
4 -4 1/2 lbs whole frying chickens
1 tablespoon lemon juice
salt
pepper
sliced French bread

Steps:

  • Soak top and bottom of 3 1/4 quart clay cooker in water about 15 minutes; drain.
  • Line bottom and sides of cooker with parchment paper.
  • Combine olive oil, garlic and herbs in cooker.
  • Rinse and pat dry chicken reserving neck and giblets for other use.
  • Place chicken over garlic mixture.
  • Drizzle with lemon juice.
  • Sprinkle with salt and pepper.
  • Place covered cooker in COLD oven.
  • Set oven at 475 degrees F.
  • Bake until chicken is tender and juices run clear when thigh is pierced, about 1 1/4 hours.
  • Remove cover; bake until chicken is crisp and brown.
  • 5 to 10 minutes.
  • Carve chicken and spoon cooking liquid over chicken.
  • Serve with garlic and french bread.

1 chicken, cut up
1 cup sliced carrot
3 -4 medium potatoes, quartered
4 garlic cloves, chopped (can add more or less)
1/4 cup chopped fresh parsley (can use 1 tbs of dried parsley)
1 tablespoon caraway seed (optional, but I always use them)
1 tablespoon Italian dressing (optional)
salt and pepper

Steps:

  • Soak clay pot for 15 min.
  • Rub chicken with garlic, salt, pepper, caraway seeds, parsley, Italian dressing and marinate overnight ( optional) You can rub your chicken and bake it right away, but it will taste much better , if marinated.
  • In a clay pot, add potatoes, carrots and chicken on top.
  • Place your clay pot in the cold oven and roast at 430F for 1.5 hours.

CLAY POT CHICKEN AND VEGETABLES

This is a fairly quick casserole dish with little fussing. Can be made cooked 1-2 days ahead or will freeze for up to 1 month with sweet potato/carrot omitted (steam/boil separately when dish is reheating). From Family Circle Chinese & Asian cookbook.

500 g chicken thigh fillets
1 tablespoon soy sauce
1 tablespoon dry sherry
6 dried Chinese mushrooms
2 small leeks
250 g orange sweet potatoes or 1 carrot
2 tablespoons peanut oil
5 cm piece gingerroot, shredded
1/2 cup chicken stock, preferably homemade
1 teaspoon sesame oil
3 teaspoons cornflour

Steps:

  • Wash chicken under cold water. Pat dry with absorbent paper.
  • Cut into small pieces. Place in a dish with the soy sauce and sherry, cover and marinate for 30 minutes in the refrigerator.
  • Soak mushrooms in hot water to cover for 30 minutes. Drain, squeeze to remove excess liquid. Remove stems and chop caps into shreds.
  • Wash leeks thoroughly to remove all grit; cut leeks and sweet potato/carrot into thin slices.
  • Drain the chicken, reserving the marinade. Heat half the oil in a wok or heavy-based frying pan.
  • Carefully add half the chicken pieces and stirfry briefly until seared on all sides. Transfer to a flameproof clay pot or casserole dish; stirfry the remaining chicken and add to the clay pot.
  • Heat remaining oil in wok, add leek and ginger, stirfry for 1 minute. Add mushrooms, the remaining marinade, stock and sesame oil.
  • Transfer to the clay pot, add sweet potato/carrot and cook, covered, on the top of the stove over a very low heat for about 20 minutes (I cooked in the oven 160 degrees celcius for 20 minutes).
  • Dissolve cornflour with a little water and add to the pot. Cook, stirring, until the mixture boils and thickens.
  • Serve the chicken and vegetables at once with rice or noodles.

8 boneless skinless chicken breasts
45 ml grated coconut
30 ml vegetable oil
1 small onions or 2 shallots, finely chopped
2 garlic cloves, crushed
5 cm lemongrass
2 1/2 cm fresh gingerroot, thinly sliced
2 fresh chili peppers, seeded and chopped
1 teaspoon tamarind paste
400 g coconut milk
300 ml chicken stock
2 kaffir lime leaves (optional)
15 ml granulated sugar
15 ml rice wine vinegar or 15 ml white wine vinegar
2 ripe tomatoes
1 bunch fresh coriander (to garnish)

Steps:

  • Preheat the oven to 180 degrees Celcius.
  • Dry fry the coconut in a large wok until evenly browned. Add the vegetable oil, shallots or onion, garlic, lemon grass, ginger, chillies and tamarind paste. Fry for 2 - 4 minutes to release the flavours. Add the chicken pieces to the wok and brown evenly with the spices for 2 - 3 minutes.
  • Strain the coconut milk, and add the thin part with the chicken stock, lime leaves, if using, sugar and vinegar. Transfer to a glazed clay pot, cover and bake in the centre of the oven for 50 minutes or until the chicken is tender. Stir in the thick part of the coconut milk and return to the oven for 5-10 minutes.
  • Place the tomatoes in a bowl and cover with boiling water to loosen and remove the skins. halve the tomatoes, then remove the seeds and chop into large dice.
  • Add the chopped tomatoes to the finished dish, sprinkle with the chopped coriander and serve.
  • Plain rice is the usual accompaniment, but I normally serve with Naan Bread.

HERB AND LEMON CHICKEN IN A CLAY POT

This recipe utilizes a clay cooker, such as a Romertopf. (for alternative cooking method without a clay pot, see diner524's review) The chicken stays juicy but still gets a crispy skin on top. Remember the clay pot and lid need to be soaked in cold water for 15 minutes before using. Try to find an Herbes de Provence that includes lavender flowers. This is good with steamed rice, or roasted vegies. The juices from the clay pot are good over the rice or vegies.

2 tablespoons unsalted butter, room temperature
1 1/2 teaspoons herbes de provence
4 lbs chicken, whole
1 large lemon, cut in half
salt and pepper, to taste
1 medium yellow onion, peeled and cut into 8 wedges
1 stalk celery, cut into 8 pieces
1 large carrot, cut into 8 pieces
3 garlic cloves, peeled and left whole
1/2 cup chicken broth (or white wine)

Steps:

  • Mash Herbes de Provence into the softened butter until well blended.
  • Rinse chicken inside and out and pat dry with paper towels.
  • Soak clay pot and lid in cold water for 15 minutes.
  • Meanwhile, place 1/2 lemon in cavity of chicken and truss chicken with kitchen twine. Fold wings under. Rub butter mixture over chicken. Sprinkle with salt and pepper.
  • Slice remaining 1/2 lemon into 3 or 4 slices.
  • After soaking, line bottom of pot evenly with onion, celery, carrot, garlic and lemon slices. Place chicken, breast side up, on top of vegies.
  • Pour broth over chicken and cover pot with soaked lid.
  • Place in a COLD oven and set heat at 450°F.
  • Cook for 1 hour and 15 minutes, or until the legs move easily and skin is browned.
  • (Lid can be removed the last 10 minutes, for crisper skin.).
  • Transfer to a platter and let rest 10 minutes before carving. Serve with the pan juices and vegies, if desired.

This is something I threw together for dinner one night when I wanted something simple that didn´t take a lot of work. The chicken turned out very juicy with a distinct onion flavor, so if onions aren´t your thing, you can substitute them for other veggies such as carrots and other firm vegetables. The amount of salt in this recipe might sound like a lot, and you can add less if you like, but the clay pot absorbs a lot of it, so keep this in mind. Do not preheat the oven or the clay pot could crack. This recipe is for an unglazed claypot.

1 (1200 g) chicken
1 medium leek
2 medium onions
4 whole spring onions
10 garlic cloves, peeled
50 ml butter
2 -3 teaspoons salt

  • Rinse the claypot and lid in cold water. (If it´s the first time you´re using it, let both lid and bottom soak for 15 minutes in cold water.).

  • Rub the chicken inside and out with salt, pepper, garlic powder and paprika powder.
  • Put the chicken in the claypot breast side up, and surround with, leeks, onions and garlic cloves.
  • Put the butter in small clicks over the chicken and veggies.
  • Cover with the lid and put the pot on a rack far down in a cold oven.
  • Turn on oven and bake at 225 degrees celsius for about 1 and 1/2 hours removing the lid for the last 15 minutes to brown. (Check to make sure the chicken is cooked through since ovens vary).
  • Place the pot on a wooden cutting board or something like that, not on any cold surface or it could crack, replace the lid and let rest for about 10 more minutes before serving.
