ONION BREAD FOR THE ABM
From Electric Bread. A little bit different from others I've tried, and very good. The smell is divine. The original had 1 teaspoon of poppy seeds, but I didn't think they did much for the recipe. You can certainly add them if you wish. You can also use 1 tablespoon onion paste instead of onion powder. Time will vary according to your machine.

- Place all ingredients in bread pan in order recommended by manufacturer.
- Bake on regular cycle.
- This will also work on rapid bake cycles.
CARAMELIZED ONION BREAD (BREAD MACHINE)
Another wonderful onion bread, somewhat simpler than one I've posted earlier. Bread is slightly moist from the onions, makes the most wonderful sandwiches and toast. From Gold Medal.

Steps:
- Melt butter in skillet over medium-low heat. Cook onions in butter 10 to 15 minutes, stirring occasionally, until onions are brown and caramelized. Do not hurry the process. Remove from heat.
- Place all remaining ingredients in bread machine pan in the order recommended by the manufacturer.
- Set to basic cycle with medium or light crust. Add onions at beep signal or 5 to 10 minute before end of kneading cycle.
- Alternatively, use dough cycle. Remove dough at end of cycle, shape as desired, place on cornmeal-sprinkled baking sheet and let rise. Bake for app. 30 to 40 minutes in a 400 deg. oven. Exact time depends on shape.
- Note: I generally substitute one cup of whole wheat or rye flour for one cup of the bread flour. Rye is particularly excellent.

HANDMADE ONION BREAD
I know there are recipes for onion bread on the site already, but I can't find anything without a bread machine. This is the best onion bread I've ever tasted -- I don't know how I managed to do it. LOL The base recipe is "Grandma VanDoren's White Bread," taken from another site, and is my default recipe. For just the base bread recipe, eliminate the onion mixture and follow the rest of the recipe.

- In a large bowl, combine warm water, yeast, salt, oil, sugar, and half the flour. Mix thoroughly, and let sponge rise until doubled in size, approximately 35 minutes.
- While the dough is rising, place thinly sliced or finely chopped onion in a sauté pan with sesame seeds, garlic, and butter. Sauté until caramelized (light brown). Remove from heat and let cool.
- Gradually add the rest of the flour, kneading JUST until smooth. I usually knead gently with my fingertips to work the flour inches When the dough has absorbed all the flour and is beginning to get tacky, I stop kneading. (One thing I discovered was to use ONLY the amount of flour listed, even as the dusting powder for the kneading surface. So 8 cups TOTAL and no more, or the bread comes out very heavy.)
- Place dough in a greased bowl, and turn several times to coat. Allow to rise until doubled, approximately 35 minutes.
- Punch down the dough. Divide dough into three equal parts. Pour onion mixture onto the dough and fold over on itself JUST enough to distribute the onion mix throughout the dough.
- Shape into loaves (they will be a little ugly here, not smoothed on top), and place in three 8 1/2 x 4 1/2 inch greased bread pans. Let rise until almost doubled, approximately 35 minutes.
- Bake at 350°F (175°C) for 30-40 minutes (mine are done in 30 no problem). The loaves may need to be covered for the last few minutes with foil to prevent excess browning.

ONION BREAD
This recipe originally came from the booklet that accompanied my bread machine. I've modified it a bit and it's my family's favorite bread. We use it for sandwiches, toasted with parmesean cheese for dinner and even just toasted with butter for breakfast!

Steps:
- Measure and add liquid ingredients to the bread pan.
- Measure and add dry ingredients (except yeast) to the bread pan.
- Use your finger to form a well (hole) in the flour where you will pour the yeast. Yeast must NEVER come into contact with a liquid when you are adding ingredients. Measure the yeast and carefully pour into the well.
- Close up bread machine.
- Choose the "basic" setting that most machines have - it's the three hour setting on mine.
- I always use the "light" crust color because the bread comes out quite a bit softer.

ONION HERB BREAD (ABM)
A savory bread to serve with a hearty soup or stew, made in ABM. Vary herbs to your taste. Cook time depends on your machine. The kneading can be done in the machine, and then the rise and shape cycles done by hand, to make rolls. Bake rolls at 400F. for apprx. 15 minutes

RED PEPPER & RED ONION BREAD (ABM / MACHINE)
There are lots of pepper /onion bread recipes. This uses fresh peppers and onion. It's very nice with cooked meats, cheese & tomato, tuna or salmon maybe with a bit of lettuce or salad. The smell whilst baking is out of this world! Oh, btw, it looks gorgeous too! (I suppose that you could replace half a tsp of the water for red food colouring, call it 'Red Bread'! and have it with sandwiches prepared for Halloween - :)

- Place bread machine pan on electronic scales and weigh in / add the ingredients. (280ml water weighs 280g).
- Replace pan in bread machine and start on suitable cycle - I favour the wholemeal cycle with a dark crust as it has the longest rise time but still has a beep for adding ingredients plus I like my bread to be crusty. Machines vary but the raisin bread setting should also be fine.
- Whilst the machine is kneading, chop and prepare the red pepper & red onion into a small bowl and season to taste with a little fresh ground black pepper, a very generous dash of dried (or fresh) garlic (possibly some basil/oregano if you fancy it herby, and paprika if you *really* love it spicy!).
- Add the pepper & onion a bit at a time during the last five minutes of the final knead (my machine does its beep five minutes before the end of the final (second) knead) as there is a lot of liquid in these fresh ingredients and if you add them all at once it would make the dough rather too wet. Basically add about half of them at the beep and the other half a few minutes later.

- 1. Place all ingredients (except cheese, bacon and onion) in machine in order recommended by manufacturer.
- 2. Set on Fruit and Nut (or raisin) cycle. When machine beeps, add cheese, bacon and onion.
- 3. If your machine doesn't have this cycle, you can add everything at once, but it will "pulverize" the bacon (but you will still have the flavor).
