Steps:
- Melt 2 tbsp of butter in a skillet over medium heat and add the apple slices and lemon juice, saute 3 minutes.
- Sprinkle with the sugar& cinnamon.
- Turn up the heat and saute for 3 minutes longer or until theapples are golden but still hold their shape.
- Allow the apples to cool.
- Meanwhile heat the oven to 425 degrees F.
- Mix the batter, eggs,flour, milk, lemon rind& melted 2 tbsp butter.
- Beat until the batter is very smooth.
- In a large oven proof skilet melt the remaining butter.
- Spread the apples over the bottom of the skillet.
- Pour in the batter.
- Bake in the centre of the oven for 20 minutes or until puffy& golden.
- Dust with confectioners sugar, cut into thick wedges and serve at once with Maple syrup or your choice of your favorite syrup.

EASY HOMEMADE APPLE PANCAKES

- Gather the ingredients.
- In a large bowl, combine the flour, baking powder, salt, sugar, and nutmeg.
- In a separate small bowl, beat together the baking soda, egg, butter, vanilla, and milk.
- Add the milk and egg mixture into the dry ingredients, stirring only until blended, then gently fold in the grated apple.
- Spoon batter onto a preheated and lightly greased griddle or frying pan, cooking for 2 to 3 minutes on each side until golden brown.

COUNTRY PANCAKES
I love country style pancakes so I came up with this adaptable recipe. For the hot cereal, use any combination of Malt-o-Meal, Cream of Wheat and/or Grits. (I like 3 T each)

- Melt butter in microwave first, so that it will cool a little before mixing into batter.
- Preheat griddle to medium-high. If the griddle is not non-stick, lightly oil it first.
- Optional: If desired, separate the egg and whip the egg white. This will help make the pancakes extra light and fluffy in texture. I use a little hand-held blender for this step. I always do this because it makes such a big difference.
- In a good-sized mixing bowl, whisk together the dry ingredients. In a small separate bowl, whisk egg yolk, vanilla and melted butter. Combine the two mixtures in the larger bowl and mix.
- Add club soda and egg whites and gently fold into batter. Be careful not to over-mix at this point.
- If you did not separate the egg, you might need to use more club soda to reach the desired consistency. If you did separate the egg, the batter will be thicker than normal pancake batter.
- I like to fry the pancakes in bacon grease, but you can use regular vegetable oil if you prefer. Pour about 1/3 c for each pancake and brown on both sides.
- Brush the remaining melted butter on each pancake as you stack them.
- I keep the pancakes on an oven-proof platter in the oven on 200 degrees while I get all of them cooked.
- You will probably need to reapply the oil or bacon grease to the griddle.
- If batter thickens while you finish the bacon or frying the first few batches, add the reserved club soda.
- Unused batter can be kept covered in the fridge to use in the next few days. If it becomes too thick, add a little milk.
FOUR-FLAVOR SHEET PAN PANCAKES
Bake four kinds of pancakes on one sheet pan -- no flipping required! Preheating the oven to 500 degrees F may seem scary, but it mimics the heat of a hot cast-iron griddle, giving you an instant rise and golden brown color.

- Position the oven rack in the center of the oven and preheat to 500 degrees F. Whisk the buttermilk, eggs, salt, vanilla and 1/3 cup granulated sugar together in a large bowl until completely combined. Whisk the flour, baking powder and baking soda together in another large bowl until completely combined. Fold the buttermilk mixture into the flour mixture with a silicone spatula until just combined (it's OK if there are a few lumps). Reserve 2 tablespoons of batter in small bowl and set aside.
- Brush 2 tablespoons butter on a 18-by-13-inch sheet pan and pour in the batter, using a spatula to smooth out the top. Tap the tray on the counter a few times to even out and flatten the batter.
- Stir the warmed jam in a small bowl until pourable. Imagine the batter in the pan divided into four sections (2 across and 2 down). Dollop the jam, about 1 teaspoon at a time, over the surface of one section. (You want to see red dots of jam sitting on top of the batter.) Using a toothpick or small skewer, swirl the jam into the batter, making a marbled pattern. Top with sliced strawberries.
- Sprinkle chocolate chips over a second section of the batter. Arrange banana slices in a herringbone pattern over a third section of the batter and sprinkle the fruit with the remaining 1 to 2 teaspoons granulated sugar.
- Mix the brown sugar, cinnamon and reserved batter together in a small bowl, and dollop, about 1 teaspoon at a time, over the last section of the batter. (You want to see a lot of brown dots sitting on top of the batter.) Using another toothpick or small skewer, swirl the cinnamon mixture into the batter, making a marbled pattern.
- Put the sheet pan in the oven and immediately reduce the temperature to 400 degrees F. Bake, rotating the sheet pan halfway through baking, until golden brown and a cake tester inserted into the center of the pancake comes out clean, 18 to 23 minutes.
- Brush the pancake with the remaining 2 tablespoons butter and let cool 15 minutes before cutting. Stir together the confectioners' sugar and 1 teaspoon water in a small bowl and drizzle over the cinnamon swirl quadrant.
- Serve the pancakes with maple syrup and whipped cream.

- Preheat oven to 350 degrees F (175 degrees C).
- Stir flour, 1 1/2 cups sugar, cocoa powder, baking soda, and salt together in a 8x12-inch baking pan. Make 3 wells in the mixture. Pour oil, vinegar, and vanilla extract each into their own well. Pour water into the pan. Stir batter with a fork until well combined.

- Preheat the oven to 425 degrees F.
- For the cinnamon-apple swirl: In a medium bowl, add the apples, pecans, brown sugar, applesauce and cinnamon and stir to combine. Set aside.
- For the pancake batter: In a medium bowl, whisk together the eggs, buttermilk and vanilla extract. In a large bowl, whisk together the flour, baking powder, granulated sugar and baking soda until combined. Pour the buttermilk mixture into the flour mixture and stir together until just combined. Do not overmix.
- Brush the bottom and sides of a 13-by-18-inch rimmed baking sheet with the melted butter. Add the batter to the sheet and smooth into an even layer from edge to edge. Spoon the apple mixture, about 1 tablespoon at a time, evenly across the batter. Then, with the back of a spoon, swirl the mixture into the batter. Bake until golden brown and the top springs back when touched, 20 to 22 minutes.
- For the maple-vanilla syrup: Meanwhile, in a small saucepan, add the maple syrup and vanilla bean paste and bring to a simmer over medium low heat, about 5 minutes. Remove from the heat and set aside.
- Remove the pancake from the oven. Slice and serve with the warm maple-vanilla syrup and pats of butter.

- In a saucepan, combine brown sugar, 1/4 cup flour and 1/4 teaspoon salt. Add water and lemon juice; cook and stir over medium heat until thick.
