ONE-BOWL FOOLPROOF COFFEE CAKE



One-Bowl Foolproof Coffee Cake image

One of those always-works, whips up in no time, freezes well, can't be beat coffee cakes. A recipe from my friend Ayelet.

Yield 16-20 serving(s)

Number Of Ingredients 9

2 cups flour
3 teaspoons baking powder
1 cup sugar
1 teaspoon salt
3/4 cup oil
2 eggs
1 teaspoon vanilla
1/2 cup juice (any kind)
cinnamon sugar

Steps:

  • Mix everything except cinnamon sugar in large bowl.
  • Pour half the mixture into a greased 9" x 13" pan.
  • Sprinkle cinnamon sugar onto the mixture.
  • Top with the remaining batter.
  • Sprinkle again with cinnamon sugar.
  • Bake at 350F for 30 minutes.
