Skillet Gnocchi with Chard & White Beans image

In this one-skillet supper, we toss dark leafy greens, diced tomatoes and white beans with gnocchi and top it all with gooey mozzarella.

1 tablespoon extra-virgin olive oil
1 (16 ounce) package shelf-stable gnocchi (see Tip)
1 teaspoon extra-virgin olive oil
1 medium yellow onion, thinly sliced
4 cloves garlic, minced
½ cup water
6 cups chopped chard leaves or spinach
1 (15 ounce) can diced tomatoes with Italian seasonings
1 (15 ounce) can white beans, rinsed
¼ teaspoon freshly ground pepper
½ cup shredded part-skim mozzarella cheese
¼ cup finely shredded Parmesan cheese

Steps:

  • Heat 1 tablespoon oil in a large nonstick skillet over medium heat. Add gnocchi and cook, stirring often, until plumped and starting to brown, 5 to 7 minutes. Transfer to a bowl.
  • Add the remaining 1 teaspoon oil and onion to the pan and cook, stirring, over medium heat, for 2 minutes. Stir in garlic and water. Cover and cook until the onion is soft, 4 to 6 minutes. Add chard (or spinach) and cook, stirring, until starting to wilt, 1 to 2 minutes. Stir in tomatoes, beans and pepper and bring to a simmer. Stir in the gnocchi and sprinkle with mozzarella and Parmesan. Cover and cook until the cheese is melted and the sauce is bubbling, about 3 minutes.

1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, minced
1 package (13-ounces) Butterball Hardwood Smoked Turkey Sausage
1/4 cup water or chicken broth
1 can (14.5-ounces) Italian tomatoes, diced
1 tablespoon dried oregano
1 tablespoon dried parsley flakes
1/2 teaspoon garlic powder
1/2 teaspoon paprika optional
Salt and pepper, to taste
1 can (15-ounces) white kidney or cannellini beans
1 (16-ounce) package gnocchi
1 1/2 cups fresh spinach (4 to 5-ounces)
1/2 cup mozzarella cheese, freshly grated
1/4 cup Parmesan cheese, freshly grated
Fresh parsley (optional)

Steps:

  • Move a rack in your oven to the upper third of the oven and then preheat to 425°F. Put a large oven-safe skillet (I use a 12 inch lodge dutch oven skillet), on the stove at medium-high heat. Pour in the olive oil. Add in the chopped onion and stir until the onion is transparent -- about 4 minutes. Add in the garlic and stir for another 30 seconds. Coin the turkey sausage and add to the skillet. Cook over high heat until lightly browned, about 3 to 4 minutes. Add in the water or broth, undrained Italian diced tomatoes, oregano, parsley, garlic powder, paprika, seasoned salt and pepper, thoroughly rinsed, drained, and dried cannellini beans, and uncooked gnocchi. Stir until everything is well combined. Gently stir in the spinach and make sure it's covered with liquid. Top with mozzarella and Parmesan cheese and place in the oven. Bake for 17 to 22 minutes. If desired, turn on the broiler and then broil for another 2 to 3 minutes for a delicious crispy top. Remove from the heat, top with additional salt, pepper, and some chopped fresh parsley if desired. Enjoy immediately.

Stir in beans, tomatoes, spinach and pepper; heat through., Sprinkle with cheeses; cover and remove from heat. Let stand 3-4 minutes or until cheese is melted.

This is my version of a recipe I found on EatingWell and tweaked to our liking. We like ours very thick. See options for a slightly saucier version see *optional version* it adds a 1/2 cup of water and changes how the onion is cooked.

1 1/2 tablespoons olive oil
16 ounces gnocchi, shelf-stable (used sweet potato wheat)
1 onion, chopped
4 garlic cloves, minced
10 ounces frozen chopped spinach, thawed and squeezed dry
15 ounces diced tomatoes
15 ounces white beans, rinsed
1/4 teaspoon black pepper
1/2 cup part-skim mozzarella cheese, shredded
1/4 cup parmesan cheese, shredded

Steps:

  • Heat 1 tablespoon oil in a large nonstick skillet over medium heat. Add gnocchi and cook, stirring often, until plumped and starting to brown, 5 to 7 minutes. Transfer to a bowl and keep warm.
  • Add the remaining oil and onion the pan and cook over medium heat for about 7 to 10 minutes, till soft and lightly caramelized. Stir in garlic and cook 1 to 2 minutes.
  • Add the spinach, tomatoes, beans, pepper to the onions and garlic and cook for 1 to 2 minutes. Stir in gnocchi and sprinkle with mozzarella and Parmesan. Cover just till cheese melts about 1 minute.
  • *optional version* Add reaming oil and onion to the pan and cook, stirring, over medium heat for 2 minutes. Stir in garlic and 1/2 cup water. Cover and cook until the onion is soft about 4 minutes.

  • Add the remaining 1 teaspoon oil and onion to the pan and cook, stirring over medium heat for 1-2 minutes.
  • Stir in garlic and water. Cover and cook until the onion is soft, 2 to 4 minutes.
  • Add chard (or spinach) and cook, stirring until the leaves start to wilt, about 1-2 minutes.
  • Stir in tomatoes, beans, salt and pepper and bring to a simmer. Add optional seasoning if using.
  • Stir in the gnocchi and sprinkle with mozzarella and Parmesan cheeses.
  • Cover and cook until the cheese is melted and bubbling, about 3 minutes.

This is a comforting dish and is indulgent with ingredients like wine, cream, and shallots. I do not recommend adding salt because I find the sausage to have enough salt in it. Although cheese is optional, I find it gets lost in the sauce.

3 Italian-style turkey sausages, casings removed
4 ounces portobello mushrooms, coarsely chopped
2 shallots, minced
2 tablespoons butter

1 (18 ounce) package potato gnocchi
½ cup dry white wine (such as Pinot Grigio)
1 ½ cups heavy cream
½ teaspoon Italian herbs (such as cantanzaro herbs from Savory Spice Shop®)
1 pinch red pepper flakes, or to taste
salt and ground black pepper to taste

Steps:

  • Heat a heavy skillet over medium high heat and cook sausage until no longer pink, breaking up the meat with a wooden spoon as it cooks, about 7 minutes. Continue to brown the meat and add mushrooms, shallots, butter, and oil. Cook until mushrooms and onions are soft and beginning to brown, about 5 minutes. Add garlic and cook for 1 to 2 minutes.
  • Meanwhile, bring a large pot of lightly salted water to a boil. Cook gnocchi in the boiling water until they float to the top, 2 to 4 minutes. Drain and set aside.
  • Add white wine to the sausage mixture and simmer, uncovered, until wine has reduced by half, about 5 minutes. Add gnocchi, cream, Italian herbs, pepper flakes, salt, and pepper. Cook over medium-low heat until sauce has thickened, about 10 minutes.
