CROCK POT ITALIAN SAUSAGE RIGATONI RECIPE
Crock Pot Italian Sausage Rigatoni Recipe is a one pot meal perfect for busy families. The Italian sausage give the pasta amazing flavor for a great meal.

Steps:
- In a skillet over medium heat, cook the ground Italian sausage until it is brown. (Or use your Ninja)
- Add to a 6 quart slow cooker.
- Add in onion, seasonings, diced tomatoes, tomato sauce and broth. Stir to combine.
- Cover and cook on low for 6-8 hours or high for 3-4.
- 30 minutes before serving stir in the pasta. It will look very watery but don't worry the pasta will soak it up. Cover and cook for approximately 30 minutes until the desired tenderness is reached.
- Stir in the mozzarella cheese until melted.
- Serve immediately and top with parmesan cheese if desired.

- Brown the beef: Heat oil in a medium-large pan. Brown the beef, seasoning with a few pinches of salt and pepper as it cooks.
- Cook the vegetables: Add the finely chopped vegetables to the pot with the beef and cook over medium heat, stirring often, until softened (about 2-3 minutes).
- Season and deglaze: Add garlic powder, Italian seasoning, a pinch of salt, pepper and tomato paste to the pan. Stir until mixed in well. Pour in 3 cups broth, scratching the browned bits off the bottom of the pan.
- Cook the pasta: Add the diced tomatoes and uncooked pasta to the skillet, making sure to stir everything in until the pasta is covered with liquid. Bring to a boil, then reduce the heat to a simmer and cook until the pasta is done, about 15 minutes. Add up to one more cup of broth during cooking, as needed. Serve with grated parmesan.

Steps:
- Heat 10-inch skillet over medium heat. Add beef; cook until brown, crumbling as it cooks.
- Add taco seasoning mix, stirring to coat beef. Add pasta, chiles, salsa and water, stirring to combine. Heat to boiling; reduce heat to simmering. Cover; cook about 15 minutes, stirring every 5 minutes, until pasta is tender.
- Remove from heat; stir in cheese. Cover; let stand about 2 minutes or until cheese is melted.
- Sprinkle with cilantro just before serving.

- Heat the oil in a large frying pan (skillet) on a medium heat. Add the chorizo and cook for 1-2 minutes on each side until lightly browned and crisp. Remove from the pan with a slotted spoon, place in a bowl and cover.
- Add the chopped onions to the pan and cook for 5 minutes, stirring often, until softened. Add a pinch of salt and pepper, the red and yellow pepper slices and the garlic. Cook for a further 2 minutes.
- Add in the rigatoni, then pour in the stock, tinned tomatoes and tomato puree. Stir together, pushing the rigatoni under the liquid. Bring to a gentle simmer, then cover the pan with a lid or foil and simmer gently for 10 minutes.
- After 10 minutes, carefully remove the lid and give everything a stir. Add the cream, spinach, mozzarella and parmesan. Stir together, the arrange the cooked chorizo on top (to heat through) and cover. Simmer for a further 2-3 minutes until the pasta is cooked through, the spinach wilted and the cheese melted.

- Cook pasta according to package direction, drain and transfer back to pot. Add diced tomatoes, chicken, taco seasoning and cilantro. Mix to combine. Transfer half to baking dish. Top with a layer of cheese then layer with remaining pasta. Top with the rest of the cheese. Bake for 20-25 minutes, until cheese is melted and hot. Remove and serve warm.
