ONE-PAN ROASTED PORK SUPPER
Sunday night meets weeknight with this smart dish of tender pork, stuffing and sweet potatoes, all ready in one pan and with only 20 minutes of prep.

Steps:
- Heat oven to 375°F.
- Toss vegetables with dressing and 1/2 tsp. thyme; spread onto bottom of 15x10x1-inch pan sprayed with cooking spray. Bake 10 min. Meanwhile, mix stuffing mix and water just until blended.
- Cut each tenderloin diagonally into thirds. Spoon vegetable mixture to sides of pan. Spoon stuffing down center of pan; top with meat and remaining thyme.
- Bake 45 min. or until meat is done (145°F). Remove from oven. Let meat stand 3 min. before serving with the vegetables.

ONE POT SWEET & SAVORY PORK LOIN SUPPER
Steps:
- 1. One Pot Sweet & Savory Pork Loin Supper
- 2. 1/4 C. soy sauce 1 T. olive oil 1 T. cider vinegar... 1 tsp. minced garlic 1 tsp. brown sugar 1/2 tsp. red pepper flakes 1/2 tsp. ground allspice 1/4 tsp. nutmeg 1/4 tsp. dried thyme 1/4 tsp. black pepper pinch of cinnamon pinch of salt 2 lb. pork tenderloin 1 lb. fresh green beans, whole 3 med. potatoes, washed and sliced 1 tsp. my house seasoning (equal parts garlic powder, onion powder and black pepper...combine and store in an airtight container)
- 3. Whisk together the first 12 ingredients. Place the pork tenderloin in a ziploc bag and pour in the marinade. Place in the fridge for at least 4 hours. Snip the ends of the green beans and place them in the bottom of a dutch oven, top the green beans with the potatoes and sprinkle with the house seasoning. Remove the pork tenderloin from the ziploc bag and place on top of the veggies. Cover and place in a 400 degree oven for 1 hour, remove and uncover, return to the oven for 30 more minutes. Allow to rest for 5 minutes before slicing.
SAVORY CROCK POT PORK LOIN ROAST
Steps:
- Cover and cook on low for 6 to 8 hours or on high for about 3 hours. Check the roast at the lower time for doneness to avoid overcooking. An instant-read thermometer should register at least 145 F (63 C).

- Unfold a slow cooker liner and place it in a large bowl. Add all of the ingredients, except the chicken broth, to the bowl and marinate over night or for up to 24 hours.

- Place rack in the center of the oven then preheat to 425 degrees. Coat a large casserole dish or roasting pan with cooking spray then set aside.
- Rinse pork roast under cool water then blot dry with paper towels. Trim excess fat and sinew (including silver skin) from tenderloin then set aside.
- In a small bowl, combine salt, garlic powder, cumin, oregano and pepper then sprinkle spice mixture evenly over pork roast. Place seasoned pork on center of the prepared baking sheet. Let pork sit at room temperature while you prepare potatoes.
