One-Pot Sesame Chicken Noodles image

Everything goes in the pot at once for this quick and easy Asian noodle dish that takes weeknight dinner to the next level. Just stir, and prepare to be impressed!

1 carton (32 oz) Progresso™ chicken broth
6 boneless skinless chicken thighs, thinly sliced in 1/2-inch strips (about 20 oz)
12 oz uncooked spaghetti, broken in half (from 1-lb box)
1 medium red bell pepper, cut in thin strips
3 green onions, thinly sliced on the bias, white and green parts separated
1 package (3 1/2 oz) shiitake mushrooms, stemmed and thinly sliced
4 tablespoons butter
2 tablespoons hoisin sauce
1 tablespoon toasted sesame oil
1 tablespoon soy sauce
2 teaspoons chile garlic sauce
2 tablespoons chopped fresh cilantro leaves
1 tablespoon sesame seed

Steps:

  • In 5-quart Dutch oven, mix broth, chicken, spaghetti, bell pepper, green onion whites, mushrooms, butter, hoisin sauce, sesame oil, soy sauce and chile garlic sauce. Heat to boiling over high heat, stirring occasionally.
  • Reduce heat to medium-low; cook 11 to 15 minutes, stirring occasionally, until juice of chicken is clear when thickest part is cut (at least 165°F), pasta is cooked and most of liquid is absorbed. Top with green onion greens, cilantro and sesame seed. Serve with additional soy sauce and chile garlic sauce, as desired.

Sesame Noodles are tossed in a delightful Asian sesame sauce full of garlic, ginger, sesame oil, and Tamari and then loaded with bell peppers. This easy gluten-free dinner recipe can be ready and on the table in under 30 minutes!

12 oz. linguini or spaghetti (gluten-free)
3 bell peppers (small, cut into thin strips)
2 Tbsp. olive oil
½ tsp. salt
¼ cup soy sauce (gluten-free, or Tamari sauce)
1 ½ Tbsp. sesame oil (toasted)
1 Tbsp. olive oil
3 cloves garlic (crushed)
1 tsp. ginger paste (or crushed fresh ginger)
1 Tbsp. rice wine vinegar
2 Tbsp. coconut sugar (or white sugar)
1 tsp. chili garlic paste (or Sriracha sauce)
1 bunch green onions (cut into 1-inch pieces)
Sesame seeds (toasted, optional)

Steps:

  • Bring a large pot of water to a boil and cook pasta according to package directions. (You want it to be al dente.)
  • In a large skillet or wok over medium heat add 2 tablespoons olive oil, bell pepper slices, and ½ teaspoon salt. Sauté for 7-9 minutes, or until peppers are tender.
  • While pepper and pasta are cooking, whisk together sesame sauce ingredients in a medium-sized bowl until combined. Add sesame sauce to skillet once peppers are cooked. Simmer sauce, while whisking occasionally, for 1 minute.
  • Add drained pasta to skillet and toss in sauce for 1-2 minutes over low heat.
  • Serve sesame noodles immediately with green onions and sesame seeds or refrigerate for 2 hours to serve cold. Enjoy!

3 1/2 cups water
1 medium bok choy or 3 baby bok choy (about 1/2 pound), sliced (about 3 cups)
1 red bell pepper, thinly sliced
2 medium carrots, cut into coins (about 1 cup)
1 small yellow onion, halved and thinly sliced
3 medium cloves garlic, minced (about 1 tablespoon)
1 thumb-sized piece of ginger, peeled and minced (about 1 tablespoon)
1/4 cup Tamari-style soy sauce*
3 tablespoons sesame oil
2 tablespoon brown sugar
1/8 teaspoon crushed red pepper flakes (add more if you like more heat)
1/2 teaspoon kosher salt
1/2 medium Napa cabbage, thinly sliced (about 4 cups, loosely packed)
1 tablespoon rice vinegar
Toppings: fresh cilantro, chopped salted peanuts, sliced scallions, and/or toasted sesame seeds

Steps:

  • To a large and heavy pot over high heat, add the linguine, water, bok choy, bell pepper, carrots, onion, garlic, ginger, soy sauce, sesame oil, brown sugar, red pepper flakes, and salt. As soon as the mixture comes to a boil, set the timer for 9 minutes and cook, tossing constantly with tongs, taking care to make sure the pasta doesn't stick to the bottom of the pot. Once the 9 minutes is up, the veggies should be tender, the pasta cooked through, and it should have a saucy consistency, with most of the liquid having evaporated. Remove from heat and add the cabbage and vinegar, tossing until cabbage wilts, about 30 seconds. Serve, topping individual bowls with cilantro, peanuts, scallions, and toasted sesame seeds. Notes *You can use regular, non-Tamari soy sauce, but because it is saltier than Tamari soy sauce, I suggest leaving the kosher salt out of the recipe and then adjusting seasonings to taste once cooked.
