1 teaspoon olive oil
½ cup sliced onion
1 cup fresh sliced mushrooms
1 (29 ounce) can diced tomatoes
1 (8 ounce) can tomato sauce
1 cup water
2 teaspoons dried basil
1 teaspoon dried oregano
1 teaspoon white sugar
¼ teaspoon garlic powder
¼ teaspoon ground black pepper
8 ounces macaroni

Steps:

  • Spray a large nonstick skillet with nonstick cooking spray. Add oil, and heat over a medium flame. Add onion and mushrooms. Cook, stirring frequently, for 3 to 5 minutes, until tender.
  • Add tomatoes, tomato sauce, water, sugar, and spices to skillet. When mixture begins to boil, stir in pasta. Cover, reduce heat to medium-low, and cook 20 minutes. Stir mixture every 4 to 5 minutes while cooking.

1 cup onion, diced
1 tablespoon garlic, minced
1 teaspoon salt
½ teaspoon pepper
2 tablespoons worcestershire sauce
2 tablespoons ketchup
4 cups beef broth
16 oz fusilli pasta
3 cups shredded cheddar cheese
½ cup milk
green onion, sliced, to serve

Steps:

  • In a large pot over a medium-high heat, add ground beef, onions, garlic, salt, pepper, worcestershire sauce, and ketchup. Break up the beef to incorporate the seasonings and cook until browned, about 6-7 minutes.
  • Pour in the beef broth and one cup of water and bring to a simmer.
  • Add the pasta and simmer for 20 minutes or until the pasta is cooked throughout and the broth has cooked down, stirring occasionally.
  • Pour in the milk and cheese. Stir until the cheese has melted.
  • Serve garnished with some sliced green onions

For some reason, I always have a jar of spaghetti sauce in the fridge that I need to use the remainder of or throw away. Sometimes I add a bit of Italian seasoning for extra flavor. This dish cooks in one pot, so there is minimal clean up. Also, it's much healthier than Hamburger Helper.

1 small onion, chopped fine
1 garlic clove
3 cups fusilli or 3 cups macaroni noodles
3 1/2 cups water

1 cup mozzarella cheese
1/2 cup parmesan cheese

Steps:

  • Brown meat in large, deep skillet.

8 cloves garlic ((thinly sliced))
1.5 teaspoon salt ((adjust to taste))
4 cups water
250 gm. spaghetti ((8.8 oz.))
2 teaspoons smoked paprika ((adjust to taste))
1/4 teaspoon pepper ((adjust to taste))
3 tablespoons nutritional yeast
1/4 cup lemon juice
1/4 cup freshly chopped cilantro (or parsley)

Steps:

  • Set a large pot over low heat. Add oil + garlic. Stir-saute them in low heat (this helps infuse garlic flavor into the oil) for 5-7 minutes, or until lightly golden.
  • Add salt + water + spaghetti. Gently separate the spaghetti using a spatula so they don't glue/stick together. Turn up the heat to high and bring it to a boil (2-3 minutes).
  • As the water starts to boil and spaghetti starts to soften, stir-cook continuously for 7-9 minutes or until it's just al dente. This process emulsifies the starch and oil with water which creates the sauce.
  • Turn down the heat to medium. Add smoked paprika + pepper + nutritional yeast + lemon juice. Mix well and stir-cook for about 30 seconds.
  • Turn off the heat. Sprinkle freshly chopped cilantro (or parsley) and mix some more.
  • Transfer to serving bowl(s) and serve hot.

3 cups chicken stock or water
1 (15-oz) oz can diced tomatoes (undrained)
1 (12-oz) box short pasta shapes (spirals or bow ties work great)

½ cup grated Parmesan
¼ cup cream cheese (OR ricotta, mascarpone... whatever you have on hand! Use more for extra creaminess.)

Steps:

  • Sauté:Heat the oil in a large pot over medium heat. Sauté the onion, garlic and sun-dried tomatoes until starting to soften, about 2 minutes. Add the tomato paste and Italian seasoning and cook for 1 more minute.
  • Add liquids and pasta:Pour the chicken stock into the pan, scraping any browned bits off the bottom of the pot. Add the can of diced tomatoes and pasta and season to taste.
  • Cook the pasta:Bring to a boil, then reduce the heat to a simmer and cook until pasta is done, about 10-15 minutes. If the pasta starts looking dry and there doesn't seem to be enough liquid, add a little extra broth during the cooking process.
  • Add cheeses:Take the pasta off the heat and stir in the Parmesan and cream cheese. Add parsley if you like. Let the pasta sit and thicken for 3-4 minutes before serving immediately.
