KIELBASA. CABBAGE, POTATO & CARROT 1 POT MEAL



Kielbasa. cabbage, potato & carrot 1 pot meal image

Well, since we all know how the Corona virus has effected food shopping, I couldn't find corned beef and so found the Polish kielbasa and it worked just fine. It is more like a soup but that's perfect for these still cool days. The splash of cider vinegar gives it a nice "kick."

1/2 c onions, slivered
3 clove minced fresh garlic
2 Tbsp olive oil
7 small red potatoes, quartered, not peeled
14 oz pkg of polish kielbasa, sliced into coins
3 c green cabbage, cut into long, wide pieces
1-1/2 c washed carrots, sliced into baby pieces
4-6 c veggie broth or chicken broth
1/2 tsp celery salt
1 tsp fresh ground black pepper
1/2 tsp fresh chopped thyme or used dried
1/4 c organic apple cider vinegar

Steps:

  • 1. In a large pot, over med-high heat, pour in the olive oil, onions and garlic. Saute for 2 mins. Add Kielbasa. Saute 3 mins. Add potatoes and carrots. Add broth. Cover and bring to a boil.
  • 2. Lower heat to med-low and add the cabbage, celery salt, black pepper and thyme. Bring to a simmer for 30-40 mins or until veggies are softened.
  • 3. Splash in the cider vinegar and let cook another 10 mins.

1 smoked beef sausage, sliced
15 small gold potatoes, scrubbed
1 head of cabbage, cored and quartered
4 cups water

Steps:

  • In a large pot add your potatoes and cover with water.
  • Add your cabbage wedges leafy side up.
  • Simmer for 30 minutes.
  • Add the sausage slices on top of the cabbage and cook for the remaining 10 minutes.
  • Arrange ingredients in a large bowl and serve hot with butter, salt and pepper.

  • Wash the cabbage under running water. Even though the inside is usually clean (the outer leaves protect the inside), you might want to clean it anyway. Remove the tough outer leaves and discard them. Separate the inner leaves and wash them under running water.
  • Peel an onion and dice it finely. Finely chop the garlic with a knife. Cut kiełbasa sausage into chunks (rounds or cubes). Chop the bacon into pieces.
  • Add bacon and kiełbasa pieces to the deep frying pan (or a cooking pot with a thick bottom). Cook over a low heat for a few minutes. There should be enough fat rendering, so there is no need to add any more. If you feel that it’s too dry, add a little bit of lard or oil.
