- Heat a large pot or Dutch oven over medium-high heat. Cook and stir beef in the hot pot until browned and crumbly, about 10 minutes; drain and discard grease. Stir onion and garlic into beef; cook and stir until onion is translucent, about 10 minutes.
- Stir tomato sauce, diced tomatoes, water, sofrito, Worcestershire sauce, Italian seasoning, seasoned salt, and bay leaves into beef mixture. Bring mixture to a boil, reduce heat to low, cover the pot, and simmer, stirring occasionally, until flavors blend, about 20 minutes.
- Pour macaroni into beef mixture, cover the pot, and continue simmering until pasta is tender and flavors are completely blended, about 25 minutes. Discard bay leaves.

- Place a large pan or Dutch oven over medium-high heat.
- Once hot, add the ground beef, cook breaking with a wooden spoon until no longer pink.
- Add minced garlic and chopped bell peppers and cook for about 5-7 minutes.
- Drain most of the fat then add in the remaining ingredients except the macaroni. Bring mixture to a boil then reduce heat to low and simmer covered for 15 minutes.
- Add in the raw macaroni, mix well then cover and simmer an additional 20 minutes, stirring occasionally before serving.
- If needed add more broth, 1/4 cup at a time.
- Stir in shredded cheese until fully melted.

- Saute veggies: Heat a large pot over medium-high heat. Add onion, bell pepper and carrot and saute 6 minutes. Scoot to one far side.
- Brown beef: Add beef in about 5 chunks and let brown on bottom, about 2 - 3 minutes then break up beef and toss with veggies. Cook beef through, tossing occasionally.
- Drain fat, saute garlic: Drain off excess fat as needed*. Add garlic and saute 1 minute longer.
- Add canned ingredients and seasonings, simmer: Pour in chicken broth, tomato paste, tomato sauce, diced tomatoes, Worcestershire sauce, Italian seasoning and paprika. Season with salt and pepper to taste. Bring mixture to a simmer.
- Add pasta and cook to al dente: Add pasta and stir. Reduce to medium-low cover and let simmer, stirring occasionally until pasta is nearly tender, about 10 - 12 minutes. If needed add a little more broth to thin.
- Let rest: Remove from heat and let rest a few minutes until pasta is tender and sauce has thickened.
- Garnish: Stir in parsley. Serve warm.

- In a large skillet over medium-high heat, sprinkle ground beef with salt and cook until mostly cooked through.
- Stirring to help break up the meat. Drain if necessary. I usually only have a little bit of drippings in the pan, so I do not drain it.
- Sprinkle Italian seasoning, garlic powder, onion powder, red pepper flakes and black pepper over the ground beef and stir to combine. Add sauce, tomatoes, beef stock, and pasta. Stir until combined.

CLASSIC GERMAN GOULASH

- Place the oven rack in the center of the oven and preheat to 325°.
- Add olive oil to a heavy pot or dutch oven and heat over medium heat. Add onions and 1/2 teaspoon of kosher salt. Cook for 15-20 minutes, stirring occasionally until the onions are very tender and golden.
- Transfer the onions to a separate dish and set aside.
- Season the beef with the remaining salt and pepper and transfer to the Dutch Oven. Cook over medium high heat for 5-10 minutes or until the beef has browned.
- Stir in the the onions, peppers, tomato, garlic, paprika, marjoram, caraway, tomato paste, beef broth and red wine to the pot. Heat to boiling.

- Place beef in a large Ziploc bag. Add flour, plus a dash of salt and pepper. Seal the bag and toss so that the beef chunks are coated in flour.
- Heat 2 tablespoons of oil in a large heavy pot over medium-high heat. When the oil is hot (but not smoking), brown the beef on both sides until the chunks turn a rich color (about 8-10 minutes). Don't stir the beef too much as it's cooking - you want to allow it to sit on one side and brown before turning it over or stirring it again.
- Add diced tomatoes, onions, bell peppers, carrots, potatoes (if using), beef broth, paprika, tomato paste and caraway seed. Increase the heat and bring to a boil, scraping the brown bits from the bottom of the pot with a wooden spoon.
- Once the broth boils, reduce the heat to low, cover the pot, and allow the stew to simmer until the meat and vegetables are tender (approximately 2 hours). Remove lid during the final 10-15 minutes to allow the broth to thicken, if desired. Season with salt and pepper, to taste.
- Serve goulash in bowls, or on plates over mashed potatoes or buttered noodles. Garnish with fresh parsley and a dollop of sour cream.

- Gather the ingredients.
