- Stir in salt, red pepper, black pepper and Worcestershire sauce - cook stirring often.
- Add rice, broth, ¾ cup water, stirring well. Bring to a boil, cover reduce to medium high heat and simmer 25 minutes or until rice tender. Remove from the heat.
- Salt and pepper to taste. You can also add bay leaves to the mixture.

- In a large nonstick pot, cook ground beef over medium heat until no longer pink. Crumble with spatula into smaller pieces.
- Add onion, garlic, green pepper, celery, tomato (optional), Cajun seasoning salt and mix until combined.
- Cook for about 3 minutes until veggies are partially softened.
- Add rice and beef broth.
- Bring to a boil.
- Then, reduce heat to "Low."
- Cover and cook for about 20 or until rice is cooked through.
- Let it sit covered for 5 minutes.

INSTANT POT DIRTY RICE
This Instant Pot dirty rice is our version of a popular Creole dish with ground beef, bacon, onions, peppers and celery and a tasty mix of Cajun spices. It's a one-pot, family-friendly dish that can be served a with a side salad, coleslaw or steamed greens. We used a 6-quart Instant Pot for this recipe.

- Turn the Instant Pot and press the Saute function key. Once hot, add the oil, onions, celery, peppers and bacon and cook for 2 minutes, stirring a couple of times.
- Add garlic and beef and cook for 2 more minutes, breaking the meat apart with a spatula until its color turned from red/pink to greyish.
- Add 1.25 cups of well-rinsed rice, about 2 tablespoons of Cajun spice mix (see notes), a tablespoon of Worcestershire sauce and 350 ml of veggie or chicken stock. Mix through and press Cancel to stop the Saute function.
- Pop the lid on top, lock and make sure the top valve is pointing to Sealing. Press Manual/Pressure Cook and set the time to 4 minutes at HIGH pressure. The Instant Pot will take 5-8 minutes to build up the pressure first. Once the timer is finished, allow about 5 minutes for natural pressure release (NPR) but not much longer as the rice will keep cooking.
- Use the quick release (point the valve to Venting) to let off the remaining pressure and open the lid. Stir through the rice and serve garnished with chopped scallions and parsley. We topped our rice with some fried shallots as well.

- Brown pork sausage: In a Dutch oven or high-sided large skillet, heat the oil over medium-high heat. Add the pork sausage and cook, undisturbed for 2 minutes. Use a spatula to flip the pork over and season with salt and pepper. Continue to cook, undisturbed for an additional 2 minutes. Use a wooden spoon to stir and break the pork up into large crumbles. Cook the crumbled of pork 1 more minute undisturbed. Use a large, slotted spoon to remove the sausage to a paper towel-lined plate and set aside. (Note: Pork will continue to cook in next steps)
- Brown the andouille: Add the andouille sausage to the pan. Cook, undisturbed for 2 minutes. Stir and continue to cook, stirring occasionally, until the andouille is well caramelized about 2 additional minutes. Use a large, slotted spoon to remove the andouille sausage to a separate paper towel-lined plate and set aside. (Note: If you have a lot of fat in the pan, drain off or blot all but 1 tablespoon of fat from the pan before proceeding with the next step.)
- Add vegetables + seasonings: Reduce the heat to medium and add the bell peppers, onion and celery. Cook, stirring occasionally, until the vegetables are softened, about 6-8 minutes. Add the garlic, Cajun seasoning and cayenne. Season with ½ teaspoon of salt and ¼ teaspoon of pepper. Cook until fragrant, about 30 seconds to 1 minute.
- Add the rice + broth: Return the pork sausage to the pan. Add the rice, broth and bay leaf (if using). Stir everything together, using the back of your spoon to gently scrape up any brown bits stuck to the bottom of the pan.
- Boil, Simmer, Cover and Cook: Bring the mixture to a boil over medium-high heat and then immediately reduce the heat to maintain a simmer. Cover the pan and simmer for 20-22 minutes, or until the rice is cooked and tender.
- Let steam off heat then add andouille: Remove the pan from the heat and let sit COVERED for 5 minutes. Remove the cover. Remove and discard bay leaf. Fluff the rice with a fork and stir in the andouille. Taste and adjust for seasoning with salt and pepper.
- Serve: Garnish with green onions and parsley. Serve and enjoy!

- In the pre-heated pressure cooker on medium heat, without the lid, add the oil and onion and saute' until the onion is just starting to soften.
- Push the onion aside and add the raw liver, moving it around until most of it has turned pink.
- Add the sausage and celery and saute' everything together, stirring infrequently, for about 3 more minutes.
- Add the garlic, creole seasoning and rice and mix everything together well.
- Pour in the stock, quickly scrape the bottom of the cooker using the stock to lift up any bits that may have stuck themselves to the base of the cooker.
- Close and lock the lid of the pressure cooker. Turn the heat up to high and when the cooker reaches pressure, lower to the heat to the minimum required by the cooker to maintain pressure. Cook for 4 minutes at high pressure.
- When time is up, open the pressure cooker with the Natural release method - move the cooker off the burner and wait for the pressure to come down on its own (about 10 minutes). For electric pressure cookers, disengage the "keep warm" mode or unplug the cooker and begin counting 10 minutes of natural open time. Then, release the rest of the pressure using the valve.
- Fluff the rice and serve with a sprinkling of fresh parsley and a bottle of Tabasco sauce.

- Preheat the oven to 400 degrees F (200 degrees C). Rinse rice in a wire mesh strainer until water runs clear. Drain and set aside.
- Melt butter in a large, oven-proof casserole over medium-high heat. Add ground beef, country sausage, and chicken livers; cook and stir until browned, 5 to 7 minutes. Drain, leaving a little grease in the casserole.
