ONE POT SAUSAGE BROCCOLI PASTA
This satisfying dinner featuring creamy pasta with Italian sausage, broccoli and parmesan cheese comes together in one pot in less than 20 minutes.

- Melt 1 tablespoon butter in a large pot over medium high heat. Add sausage and cook until browned, about 5 minutes. Transfer sausage to a paper towel-lined plate to drain and set aside.Add penne pasta, minced garlic, salt, pepper, and water to skillet and bring to a boil. Cook 7 minutes, stirring frequently.Add chopped broccoli and heavy cream and cook 5 minutes more, stirring frequently.Add remaining 4 tablespoons butter, parmesan cheese, and sausage, and cook 1-2 minutes until pasta is al dente and sauce is smooth. Serve immediately with additional parmesan cheese.

- Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the sausage and cook until browned, breaking up with a wooden spoon, about 8 minutes.
- Add the broccoli, red pepper flakes, salt, and pepper and stir to combine.
- Add the pasta and chicken stock and bring to a boil. Cook for 10-12 minutes, stirring constantly, until the liquid is absorbed and the pasta is tender. Add the Parmesan and stir to incorporate.
- Divide the pasta between serving bowls and garnish with more Parmesan.

- Preheat the oven to 400°F. In a large, deep, ovenproof skillet or braiser pan, cook the sausage in the olive oil over medium-high heat, breaking up the meat with a wooden spoon, until nicely browned and cooked through, 8 to 10 minutes. Add the fennel seeds and cook until fragrant, about 1 minute. Add the marinara sauce and bring to a simmer. Season the sauce with salt and pepper.
- In a pot of boiling water, cook the pasta 2 minutes less than the package suggests. Add the broccoli rabe and cook with the pasta for 1 minute. Scoop out ¾ cup of the pasta water, then drain the pasta in a colander. Return the pasta and broccoli rabe to the pot. Fold in the sauce, heavy cream, reserved pasta water, and half of the mozzarella and parmesan cheeses.
- Transfer the mixture to the skillet or braiser pan and scatter the remaining cheeses on top. Bake for 25 to 30 minutes, until bubbling and browned. Let stand for a few minutes, then garnish with basil and serve.

- Bring a large pot with at least 6 quarts of water to a boil. Once it comes to a boil, add 2 tablespoons of salt and then drop in the rigatoni and cook according to the package directions.
- Reserve 1/2 cup of the pasta water, then scoop out the pasta with a small strainer or a ladle and place in a colander to drain.
- Bring the pot of water back to a boil and add the broccoli rabe. Cook for 2 minutes, then drain and place the broccoli rabe into a large bowl of ice water.
- Heat the oil in a large skillet over medium-high heat. Brown the sausage, breaking up with a spoon as you go until completely browned. Remove to a paper towel lined plate.
- Add the crushed garlic to the same skillet and cook for 1 minute, stirring so the garlic doesn't burn.
- Add the broccoli rabe, tomatoes and red pepper flakes to the skillet and cook for 2-3 minutes.
- Add the sausage, pasta and parmesan cheese to the skillet, stir to combine, then pour in the reserved pasta water a little at a time to make the sauce.
- Season with salt and pepper to taste and serve.

- Cut the broccoli rabe into 3 to 4 inch pieces, discarding the stems. In a large pot of rapidly boiling water, blanch the broccoli rabe until tender and cooked through, about 5 to 6 minutes. Before you drain broccoli rabe, reserve 1 cup of cooking liquid. Drain and rinse the broccoli rabe with cold water until it has cooled off. Spread it out on a towel to finish draining.
- Meanwhile, cook the pasta in a large pot of boiling water according to package directions until al dente.
- While the pasta is cooking, place 2 tablespoons of water into a cold skillet with garlic and sausage and then turn heat to medium-low. Cook, stirring occasionally, until garlic is golden and sausage is cooked through, about 5 to 7 minutes. Pour reserved broccoli water into pan with sausage.
- When the pasta is cooked, drain it and place back in pot you cooked it in and season with salt. Pour sausage sauce over pasta and stir in cooked broccoli rabe. Taste and adjust seasonings. Serve immediately.
- If the Queen's coming to dinner: Garnish with fresh bread crumbs and/or freshly grated pecorino Romano or parmesan cheese.

- Place racks in center and upper third of oven; preheat to 325°. Heat a large pot of water over high. Add several tablespoons of salt and bring to a boil (this is for your pasta).
