This satisfying dinner featuring creamy pasta with Italian sausage, broccoli and parmesan cheese comes together in one pot in less than 20 minutes.

1 pound ground Italian sausage, mild or spicy
1 pound uncooked penne pasta
2 cloves garlic, minced
1 teaspoon salt
1/4 teaspoon ground black pepper
4 cups water
1 head broccoli, chopped into bite-sized pieces
1 cup heavy cream
1 cup grated parmesan cheese, plus more for serving

Steps:

  • Melt 1 tablespoon butter in a large pot over medium high heat. Add sausage and cook until browned, about 5 minutes. Transfer sausage to a paper towel-lined plate to drain and set aside.Add penne pasta, minced garlic, salt, pepper, and water to skillet and bring to a boil. Cook 7 minutes, stirring frequently.Add chopped broccoli and heavy cream and cook 5 minutes more, stirring frequently.Add remaining 4 tablespoons butter, parmesan cheese, and sausage, and cook 1-2 minutes until pasta is al dente and sauce is smooth. Serve immediately with additional parmesan cheese.

1 lb spicy italian sausage, casing removed
1 lb broccoli florets
½ teaspoon red pepper flakes
1 teaspoon kosher salt
½ teaspoon ground black pepper
1 lb rigatoni
4 cups chicken stock
½ cup grated parmesan cheese, plus more garnish

Steps:

  • Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the sausage and cook until browned, breaking up with a wooden spoon, about 8 minutes.
  • Add the broccoli, red pepper flakes, salt, and pepper and stir to combine.
  • Add the pasta and chicken stock and bring to a boil. Cook for 10-12 minutes, stirring constantly, until the liquid is absorbed and the pasta is tender. Add the Parmesan and stir to incorporate.
  • Divide the pasta between serving bowls and garnish with more Parmesan.

This gooey baked pasta is inspired by the classic combo of broccoli rabe and sausage. It's delicious, comforting and super adaptable, too. Don't like broccoli rabe? Use regular broccoli or kale! Vegetarian? Use a plant-based meat crumble! There are many ways to make this recipe your own, so get cooking!

1 tablespoon extra-virgin olive oil
1 pound sweet or hot Italian sausage (casings removed)
1 teaspoon fennel seeds
24 ounces jar marinara sauce
Kosher salt and freshly ground pepper
1 pound rigatoni or other short pasta
1 pound broccoli rabe (chopped)
1/3 cup heavy cream
1 pound mozzarella (torn into bite-size pieces)
2/3 cup finely grated parmesan cheese
Basil leaves (for garnish)

Steps:

  • Preheat the oven to 400°F. In a large, deep, ovenproof skillet or braiser pan, cook the sausage in the olive oil over medium-high heat, breaking up the meat with a wooden spoon, until nicely browned and cooked through, 8 to 10 minutes. Add the fennel seeds and cook until fragrant, about 1 minute. Add the marinara sauce and bring to a simmer. Season the sauce with salt and pepper.
  • In a pot of boiling water, cook the pasta 2 minutes less than the package suggests. Add the broccoli rabe and cook with the pasta for 1 minute. Scoop out ¾ cup of the pasta water, then drain the pasta in a colander. Return the pasta and broccoli rabe to the pot. Fold in the sauce, heavy cream, reserved pasta water, and half of the mozzarella and parmesan cheeses.
  • Transfer the mixture to the skillet or braiser pan and scatter the remaining cheeses on top. Bake for 25 to 30 minutes, until bubbling and browned. Let stand for a few minutes, then garnish with basil and serve.

1 (12 oz.) package Italian Sausage, hot or mild
1 tablespoon olive oil
1 lb. rigatoni
1 head of broccoli rabe
1 large tomato, diced
6 cloves of garlic, peeled and minced
1 teaspoon red pepper flakes
3/4 cup grated parmesan cheese
salt and pepper to taste

Steps:

  • Bring a large pot with at least 6 quarts of water to a boil. Once it comes to a boil, add 2 tablespoons of salt and then drop in the rigatoni and cook according to the package directions.
  • Reserve 1/2 cup of the pasta water, then scoop out the pasta with a small strainer or a ladle and place in a colander to drain.
  • Bring the pot of water back to a boil and add the broccoli rabe. Cook for 2 minutes, then drain and place the broccoli rabe into a large bowl of ice water.
  • Heat the oil in a large skillet over medium-high heat. Brown the sausage, breaking up with a spoon as you go until completely browned. Remove to a paper towel lined plate.
  • Add the crushed garlic to the same skillet and cook for 1 minute, stirring so the garlic doesn't burn.
  • Add the broccoli rabe, tomatoes and red pepper flakes to the skillet and cook for 2-3 minutes.
  • Add the sausage, pasta and parmesan cheese to the skillet, stir to combine, then pour in the reserved pasta water a little at a time to make the sauce.
  • Season with salt and pepper to taste and serve.

Tips: Cook the broccoli rabe the night before and you'll be way ahead. Whatever you do, read the recipe through start to finish before you get started. It's a little out of the ordinary but relatively painless. Cook off the garlic and sausage up to one hour ahead and let it sit in the pan until you're ready to finish the dish.

1 pound broccoli rabe, trimmed of damaged leaves
1 pound orecchiette or other pasta noodle
2 tablespoons water
4 to 5 cloves garlic, thinly sliced
1/2 pound Italian sausage, cut into quarter-inch slices
Salt
1 cup coarse, seasoned bread crumbs, toasted, optional garnish
Pecorino Romano or Parmesan, optional garnish

Steps:

  • Cut the broccoli rabe into 3 to 4 inch pieces, discarding the stems. In a large pot of rapidly boiling water, blanch the broccoli rabe until tender and cooked through, about 5 to 6 minutes. Before you drain broccoli rabe, reserve 1 cup of cooking liquid. Drain and rinse the broccoli rabe with cold water until it has cooled off. Spread it out on a towel to finish draining.
  • Meanwhile, cook the pasta in a large pot of boiling water according to package directions until al dente.
  • While the pasta is cooking, place 2 tablespoons of water into a cold skillet with garlic and sausage and then turn heat to medium-low. Cook, stirring occasionally, until garlic is golden and sausage is cooked through, about 5 to 7 minutes. Pour reserved broccoli water into pan with sausage.
  • When the pasta is cooked, drain it and place back in pot you cooked it in and season with salt. Pour sausage sauce over pasta and stir in cooked broccoli rabe. Taste and adjust seasonings. Serve immediately.
  • If the Queen's coming to dinner: Garnish with fresh bread crumbs and/or freshly grated pecorino Romano or parmesan cheese.
